Few dishes strike the perfect balance between comfort food and wholesome eating like Grilled Beef and Cheddar Stuffed Bell Peppers. This bold and satisfying meal features juicy ground beef, melted sharp cheddar, and the natural sweetness of grilled bell peppers all coming together in one vibrant, hearty dish. Whether you’re firing up the grill for a casual dinner or prepping for a summer gathering, this is a meal that delivers big flavor with minimal fuss.
Grilling the peppers gives them a slight char and smoky depth that oven roasting just can’t match. Their outer skins blister slightly, adding texture and aroma that complements the rich beef filling. Inside, the meat is savory, seasoned, and just cheesy enough to feel indulgent without going overboard. The cheddar melts into every bite, binding the filling with just the right amount of creaminess and tang.
This dish is incredibly versatile. You can go classic with ground beef and cheddar or customize it with additions like black beans, corn, onions, or even quinoa for an extra nutrient boost. For those who like a little heat, mixing in chopped jalapeños or a dash of hot sauce works beautifully against the sweetness of the peppers and the richness of the beef.
Grilled Beef and Cheddar Stuffed Bell Peppers are also a great way to serve something satisfying that feels lighter than traditional comfort food. The pepper halves act as natural bowls, cutting down on carbs while packing in flavor and nutrients. They’re perfect as a standalone main or served with a fresh side salad or grilled corn.
Whether you’re cooking for family or entertaining guests, these stuffed peppers are guaranteed to impress. Their colorful presentation makes them feel festive, and the flavors hit all the right notes – smoky, savory, cheesy, and just a bit sweet. It’s the kind of dish you’ll want to make on repeat, especially during grilling season.

These stuffed peppers are good, but I wouldn’t say they’re gourmet or anything.
I thought they were gourmet! Maybe I’m just easy to please. 😄
I mean, it’s just stuffed peppers. Not everything has to be gourmet. It’s the taste that matters!
Great recipe but I forgot the parsley! Still tasted good tho. Maybe next time!
Too much cheese. Didn’t need a cup! Just ruined it for my taste.
Do you have to grill them? Can I just bake them? I don’t have a grill 🙁
These are amazing! I made them for dinner and my entire family loved them. 5 stars!
Didnt turn out great. The beef was too greasy maybe??
Sounds like it might’ve been a little too much fat in the beef? Maybe try a leaner cut next time?
Grill time was perfect. Thank you for making dinner easy!
I don’t know, sounds a bit too easy. Are they really that good?
Glad to hear it! These peppers are a family favorite in our house! 😄
Pretty good, but my peppers weren’t that tender after 25 minutes. Next time I’ll par-cook them or lower the grill heat longer.
Yeah, 25 minutes can be tight for bigger peppers. Par-cooking (even 5–8 min) or lowering the heat like you said usually fixes it. I also tent with foil sometimes so they steam a bit on the grill.
I used ground turkey instead of beef, turned out fine, but not beef flavor!
I hate bell peppers, but my kids loved them. Guess that’s something.
Confused about step 6—do you keep the grill lid closed the whole time? I left it open and the peppers cooked unevenly. Flavor was still there.
I love stuffed peppers! But I dunno about the paprika… too much spice I think. Mine didn’t taste like they do at my mom’s. Just saying.
I get what you’re saying! My mom’s peppers never had paprika either. Maybe you could just skip it next time? They’d still be great!
Paprika ain’t that spicy though! I bet your mom had some secret that made hers better. Gotta ask her for tips!
Yucky. I did everything right but it tasted bland. Don’t listen to the hype!
I dont know man, my peppers were too crunchy! Like, why???
These are amazing! So flavorful and filling. I made them for my family and they loved them!
Super easy and quick, my family devoured them! Especially my husband. 😍
Cheddar and beef with peppers? You can’t go wrong! Love this recipe!
I made this but forgot to add salt! So bland, lol.
You should definitely try it again with salt! Makes such a difference. 😋
Lol, salt? Come on, that’s pretty basic. You missed a key flavor there!
Too much cheese! I couldn’t even taste the pepper. Next time I’ll skip it.
Delicious!
They turned out alright, but I think the cheese burned a little. I might try baking them next time instead.
Quick and easy! I added some hot sauce for a kick and it was amazing! Will make again.
I don’t like beef, so I used turkey instead. Very tasty! Thank you!
Turkey sounds like a great substitute! I might try that too, thanks for sharing!
My cheddar slipped off a little… maybe I packed the filling too loosely. But the taste is legit—smoky, beefy, cheesy. 10/10 for cravings.
Grilled them on a charcoal grill and they were so good! Will make again.
I dunno, grilling on charcoal? Isn’t it easier in the oven? Seems like a lot of work.
Sounds delicious! I’ve always loved grilled bell peppers. Can’t wait to try this recipe!
Super easy! But I used too much salt by mistake. Oops. Gonna try again with way less.
These were fantastic! So easy to make and full of flavor.
The timing confused me a bit—mine took closer to 30 minutes for the beef to be fully cooked. But the flavor was on point and the cheese melted nicely.
Good to know! Mine also ran a little longer—ovens/grills vary a lot. Did you keep the grill at the same medium heat the whole time?
I think 20-25 is too short. I cooked mine 45 mins and it still wasn’t right. Also I used mozzarella and it didn’t melt “nicely” like cheddar, so idk…
Total disaster! The peppers burned on the grill and the beef was undercooked. Never again!
Total awful! I don’t trust this recipe anymore. How can beef be undercooked? Can’t you check it?
Sounds like you need to watch the grill better! I’ve made these and they turned out great. Maybe try lowering the heat next time?
The ingredient list is simple (love that). I used fresh garlic instead of garlic powder and it was stronger—still tasty. Would recommend letting it rest longer than “a few minutes.”
I dunno about using beef. What if I tried chicken instead? Would it work? Anyone done that?
Not bad, but 20-25 minutes on a grill feels optimistic. I had to cover them with foil to get the peppers soft enough.
Foil to soften peppers? I dunno… I did mine straight on and they were fine in like 20. Maybe your grill temp was low. 🤷
Good to know—mine always take closer to 30 minutes with thicker peppers too. Foil makes sense to steam them a bit and soften the skins.
2 tbsp parsley for garnish seems like nothing—barely counts as flavor. I’d double it, honestly.
Why would someone grill bell peppers? This is so weird. I tried it out of curiosity and it wasn’t that great.
I actually love grilled bell peppers! They add a nice sweetness and smokiness to the dish. Maybe you just didn’t cook them long enough? 🤷♂️
Lol, my husband thinks he can cook but he ruined it. I ended up saving it. Peppers were still good tho.
I messed up step 2 and left some membranes in (oops). Still tasted good though, just not as nice texture. Learn from my mistakes 😅
These turned out ridiculously good. The smoky paprika really shines, and the peppers stayed tender even after grilling. Added a little extra cheddar and it was perfect.
Why do people stuff peppers? I just eat them raw.
Simple and easy recipe! I used ground turkey instead and it was still delicious. Will make again!
Yummy stuff! Can’t wait to grill these on the weekend. Gonna make a bunch for the BBQ!
