Mini Cheesecake Strawberries

July 26, 2024

Mini Cheesecake Strawberries are the kind of dessert that feels fancy but takes almost no time to make. These little bites are sweet, creamy, and bursting with fresh flavor. Perfect for parties, holidays, or whenever you need a quick treat, they offer all the richness of cheesecake in a light, fruit-forward form.

The concept is simple. Fresh strawberries are hollowed out and filled with a creamy cheesecake mixture made from cream cheese, powdered sugar, and vanilla extract. The result is a smooth, tangy filling that pairs beautifully with the natural sweetness of the berries. You can pipe the filling in for a polished look or simply spoon it in for a rustic charm. Either way, they look beautiful and taste even better.

These mini cheesecake strawberries are endlessly customizable. Top them with crushed graham crackers for that classic cheesecake crust vibe, or add mini chocolate chips, a drizzle of melted chocolate, or chopped nuts. You can even use flavored cream cheese or mix in a bit of lemon zest to brighten the filling.

They are naturally portioned, making them perfect finger food for showers, brunches, and dessert platters. Plus, since there’s no baking involved, they come together in just a few minutes and can be made ahead and chilled until serving.

Not only are they delicious, but they also offer a lighter alternative to traditional cheesecake, making them great for warm-weather gatherings or when you want something sweet that won’t weigh you down.

Mini Cheesecake Strawberries prove that you do not need a complicated recipe to make something that looks impressive and tastes amazing. With just a handful of ingredients, you can create a treat that is fresh, creamy, and impossible to resist.

Is it really necessary to freeze them? Mine turned out a bit hard after freezing. Maybe just chilling would work?

The instructions say to “let them sit” but how long is a few minutes? I waited like 10 and they got too soft. Still edible, just not pretty.

    1. User avatar louie.schaefer says:

      5 stars
Ugh, yeah “a few minutes” is super vague 😅 I’ve found 3–5 minutes is the sweet spot—any longer and they go from “creamy” to “mushy.” Next time try tasting one early and pulling the rest together.

    2. User avatar huey.klocko says:

      4 stars
I’d say 2 minutes tops if they’re straight from the freezer. Depends how warm your kitchen is, but 10 minutes is probably why yours got too soft.

  16. User avatar donella.williamson2022 says:

Pretty good, but the recipe needs actual amounts for strawberries. I used a random handful and ended up with a wetter mix. Still yummy though.

  17. User avatar franklyn.bailey98 says:

    3 stars
I dunno, my mixture came out kinda runny. Maybe I did somethin wrong?

  21. User avatar eldon.crooks5 says:

    2 stars
Too sweet for me! Next time I’m cutting down on the condensed milk.

    1. 3 stars
Ugh, why do people always gotta make stuff sweet? Just use regular cream cheese, you’ll get more balance.

    2. User avatar Saruman the White says:

      4 stars
I totally get that! I will try adding less condensed milk too. Maybe some yogurt for tanginess?

  22. User avatar laure.lind8 says:

    4 stars
I’m skeptical—cream cheese + strawberries + condensed milk without any crust? But I gotta admit they’re cute and addictive.

  23. User avatar Falmer Shaman says:

    3 stars
I tried this but it was too sweet for me. Maybe less condensed milk next time.

    1. User avatar ShanksOnePiece says:

      2 stars
Honestly, I think more condensed milk makes it better! Just my opinion! 😏

    2. User avatar rivka.nitzsche says:

      5 stars
I totally get it! The condensed milk can be really sweet sometimes. Less is more, I say! 😊

  24. User avatar robby.brown says:

    3 stars
Mine didn’t get very smooth—like, little strawberry bits stayed chunky. Maybe I didn’t blend enough. Still tasted fine though, just not as “mini cheesecake” as I hoped.

  25. 4 stars
I used strawberries and blueberries! They turned out pretty good! 🍓💙

  26. 2 stars
Not bad, but too sweet for me. Also strawberries “to taste” is annoying—how much is that, like a handful?? I eyeballed it and regretted it a little.

  27. 2 stars
Not worth the effort. I thought it was gonna be like real cheesecake but it ain’t. Meh.

  28. User avatar ailene.rohan1951 says:

yum! strawberries r my fav! gonna make these all the time now!!!

  31. 3 stars
These are okay, but I thought they would be more flavorful. Maybe I used too much cream cheese?

  32. User avatar jaquelyn.fadel says:

    4 stars
This recipe is so easy! I used regular vanilla because I didn’t have the Mexican kind. Still yumm!

  33. 1 star
Do you have to freeze them? I don’t have a freezer space, can I just refrigerate?

  34. User avatar latricia.strosin81 says:

    4 stars
I followed it mostly, but mine didn’t really “smooth and well combined” unless I used a blender. Still tasty though—freeze time is key.

  35. User avatar olivia.schmeler55 says:

    5 stars
Easiest recipe ever! But how do you chop a strawberrie? Do you mean cut it?

  36. User avatar kenton.kuvalis says:

  46. User avatar taryn.gleichner says:

    4 stars
Not sure about “freeze for 2 hours” because mine were still kinda soft at 2 hours. I left them overnight and they were perfect.

    1. User avatar aron.mcclure33 says:

      5 stars
Same! I did 2 hours and they were still a bit too soft. Overnight fixed it for me too—guess my freezer runs warm.

  47. User avatar zelda.okuneva says:

    1 star
This is literally just ice cream in a strawberry. Not sure why it’s called a cheesecake.

  48. User avatar lorri.turner says:

    3 stars

  49. 5 stars
Absolutely delicious! These bites are a hit at every gathering. Highly recommend!

  50. 3 stars
I’m not sure about using condensed milk. Isn’t that too sweet? Mine turned out a bit too cloying for my taste.

  51. 1 star
Not my fav. I prefer full cheesecakes, not mini ones.

  52. User avatar andrew.becker says:

    2 stars
I’m skeptical of “to taste” condensed milk. I added what I thought was right and then it was basically candy. Would recommend starting with less.

  53. User avatar shizuko.swift says:

    3 stars
Mine didn’t set very well after 2 hours… I maybe didn’t mix the strawberries fine enough. Still tasted good, just more like a cheesecake mousse than bites.

  54. User avatar dannie.jacobson41 says:

    4 stars
Hmm, how do you ‘chop’ strawberries? Do I just slice them? 🤔 Anyway, going to try this!

  55. User avatar anonymous_hacker says:

You sure regular vanilla is just as good? I feel like Mexican vanilla has a richer flavor. Just sayin’!

  66. 2 stars
Not as good as I thought it would be. Kinda bland. Needs more flavor or something.

  67. User avatar lila.dibbert says:

    2 stars
Not a fan of cream cheese… maybe try with whipped cream instead? 🤷‍♂️

  68. User avatar Glorfindel says:

    3 stars
Mine turned out a bit runny, did I mix it too much? Not sure what went wrong.

    1. User avatar bernard.dietrich says:

      4 stars
It sounds like you might’ve added too much condensed milk! Sometimes, mixing a lot can cause it to get runny, but freezing usually helps. Don’t worry – we all learn from these mistakes.

    2. 3 stars
I don’t think you mixed it too much. Maybe the cream cheese was too soft? I always keep it cold before mixing! Hope next time it’s better!

  69. User avatar winona.lynch63 says:

    2 stars
Meh. Thought it would be better. They weren’t very filling and didn’t have enough flavor for me.
