Mini Cheesecake Strawberries

July 26, 2024

Mini Cheesecake Strawberries are the kind of dessert that feels fancy but takes almost no time to make. These little bites are sweet, creamy, and bursting with fresh flavor. Perfect for parties, holidays, or whenever you need a quick treat, they offer all the richness of cheesecake in a light, fruit-forward form.

The concept is simple. Fresh strawberries are hollowed out and filled with a creamy cheesecake mixture made from cream cheese, powdered sugar, and vanilla extract. The result is a smooth, tangy filling that pairs beautifully with the natural sweetness of the berries. You can pipe the filling in for a polished look or simply spoon it in for a rustic charm. Either way, they look beautiful and taste even better.

These mini cheesecake strawberries are endlessly customizable. Top them with crushed graham crackers for that classic cheesecake crust vibe, or add mini chocolate chips, a drizzle of melted chocolate, or chopped nuts. You can even use flavored cream cheese or mix in a bit of lemon zest to brighten the filling.

They are naturally portioned, making them perfect finger food for showers, brunches, and dessert platters. Plus, since there’s no baking involved, they come together in just a few minutes and can be made ahead and chilled until serving.

Not only are they delicious, but they also offer a lighter alternative to traditional cheesecake, making them great for warm-weather gatherings or when you want something sweet that won’t weigh you down.

Mini Cheesecake Strawberries prove that you do not need a complicated recipe to make something that looks impressive and tastes amazing. With just a handful of ingredients, you can create a treat that is fresh, creamy, and impossible to resist.

Is it really necessary to freeze them? Mine turned out a bit hard after freezing. Maybe just chilling would work?

The instructions say to “let them sit” but how long is a few minutes? I waited like 10 and they got too soft. Still edible, just not pretty.

    1. User avatar louie.schaefer says:

      5 stars
Ugh, yeah “a few minutes” is super vague 😅 I’ve found 3–5 minutes is the sweet spot—any longer and they go from “creamy” to “mushy.” Next time try tasting one early and pulling the rest together.

    2. User avatar huey.klocko says:

      4 stars
I’d say 2 minutes tops if they’re straight from the freezer. Depends how warm your kitchen is, but 10 minutes is probably why yours got too soft.

  16. User avatar donella.williamson2022 says:

Pretty good, but the recipe needs actual amounts for strawberries. I used a random handful and ended up with a wetter mix. Still yummy though.

  17. User avatar franklyn.bailey98 says:

    3 stars
I dunno, my mixture came out kinda runny. Maybe I did somethin wrong?

Too sweet for me! Next time I’m cutting down on the condensed milk.

    1. 3 stars
Ugh, why do people always gotta make stuff sweet? Just use regular cream cheese, you’ll get more balance.

    2. User avatar Saruman the White says:

      4 stars
I totally get that! I will try adding less condensed milk too. Maybe some yogurt for tanginess?

  22. User avatar laure.lind8 says:

I’m skeptical—cream cheese + strawberries + condensed milk without any crust? But I gotta admit they’re cute and addictive.

  23. User avatar Falmer Shaman says:

    3 stars
I tried this but it was too sweet for me. Maybe less condensed milk next time.

    1. User avatar ShanksOnePiece says:

Honestly, I think more condensed milk makes it better! Just my opinion! 😏

    2. User avatar rivka.nitzsche says:

I totally get it! The condensed milk can be really sweet sometimes. Less is more, I say! 😊

  24. User avatar robby.brown says:

Mine didn’t get very smooth—like, little strawberry bits stayed chunky. Maybe I didn’t blend enough. Still tasted fine though, just not as “mini cheesecake” as I hoped.

  25. 4 stars
I used strawberries and blueberries! They turned out pretty good! 🍓💙

  26. 2 stars
Not bad, but too sweet for me. Also strawberries “to taste” is annoying—how much is that, like a handful?? I eyeballed it and regretted it a little.

  27. 2 stars
Not worth the effort. I thought it was gonna be like real cheesecake but it ain’t. Meh.

yum! strawberries r my fav! gonna make these all the time now!!!

  31. 3 stars
These are okay, but I thought they would be more flavorful. Maybe I used too much cream cheese?

  32. User avatar jaquelyn.fadel says:

    4 stars
This recipe is so easy! I used regular vanilla because I didn’t have the Mexican kind. Still yumm!

  33. 1 star
Do you have to freeze them? I don’t have a freezer space, can I just refrigerate?

  34. User avatar latricia.strosin81 says:

    4 stars
I followed it mostly, but mine didn’t really “smooth and well combined” unless I used a blender. Still tasty though—freeze time is key.

  35. User avatar olivia.schmeler55 says:

    5 stars
Easiest recipe ever! But how do you chop a strawberrie? Do you mean cut it?

  36. User avatar kenton.kuvalis says:

This is not cheesecake tho, where’s the eggs and crust? It’s just a fruity mix. 😒

Sooo easy to make! Just threw it together and it turned out great. Highly recommend!

I think the cream cheese is too much. Shouldn’t there be more strawberries? 🤔
