Fried Anchovy Salad

2 cups mixed salad greens
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives
1/4 cup feta cheese, crumbled
1/4 cup sun-dried tomatoes, chopped
1/4 cup fresh basil leaves
1/4 cup crispy fried anchovies
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
Salt and pepper to taste


1.In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, Kalamata olives, feta cheese, sun-dried tomatoes, and fresh basil leaves.
2.In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
3.Drizzle the dressing over the salad and toss to combine.
4.Top the salad with crispy fried anchovies.
5.Serve immediately and enjoy!
