French macarons are the epitome of elegance in the world of desserts. These delicate, pastel-colored almond meringue cookies, filled with a smooth, rich filling, are a true indulgence. While they may seem intimidating to make, with a little patience and attention to detail, you can create these irresistible treats right at home.
The base of a macaron is a light and airy meringue made from whipped egg whites and finely ground almonds, combined with powdered sugar. The magic of macarons lies in their texture: a crispy shell on the outside, with a soft, chewy interior that melts in your mouth. The smooth, creamy filling can be made from buttercream, ganache, or jam, offering endless possibilities for flavor combinations.
The most important step in making macarons is the macaronage, the process of folding the meringue and dry ingredients together. It requires precision to get the right consistency, so the batter is thick enough to hold its shape, yet soft enough to spread gently when piped onto the baking sheet. Overmixing or undermixing can lead to cracked shells or macarons that don’t have the signature “feet”, the ruffled base that forms as they bake.
Once the macarons are piped onto a baking sheet, they need to be rested before baking. This helps form the outer shell and gives the macaron its signature texture. After baking, they should cool completely before being sandwiched together with your choice of filling. Popular flavor combinations include vanilla, chocolate, raspberry, lemon, pistachio, and salted caramel.
While French macarons can take some practice to perfect, the results are truly worth it. These delicate cookies make a stunning addition to any dessert table and are perfect for special occasions, gifting, or simply indulging yourself. The crisp shell, chewy interior, and luscious filling combine to create a treat that’s as pleasing to the eyes as it is to the taste buds.

Epic recipe! Make sure you do the resting time; it makes a huge difference!
I don’t understand why everyone raves about these. Mine cracked terribly and tasted kinda bland. Maybe I did something wrong?
I don’t get it either, mine didn’t turn out good too. They say it’s all in the technique. Pretty annoying if you ask me!
Maybe you whipped the egg whites too long? That can mess up the texture! Next time don’t give up, they can be tricky but worth it!
I think these r too hard. How can u eat something that u can’t even bite without it crumbling? 1 star.
Took my first try today! They didn’t look perfect but still tasted nice!
I don’t know what I did wrong, but mine cracked and came out hollow. I think I overmixed the batter because it got too runny. Still tasted good, just not pretty.
Good recipe but I added vanilla extract and chocolate in the mixture, so maybe that’s why they were so YUM!
Took me 3 tries but I finally made some good macarons! Persistence pays off! They look so pretty now. 😄
Tried this recipe but mine turned out cracked. What did I do wrong? I live in a high humidity area.
Wow! My first time making these and they turned out perfect! I’m so proud!
I followed the recipe closely, but mine crumbled. What did I do wrong?
Not sure what I did wrong, but mine turned out flat and kind of weird. Maybe my egg whites weren’t stiff enough?
Yum! The flavor combinations you can make are endless. I added lavender extract and it was divine! 🌸
24 hours in the fridge… I was like, that’s extra. But after waiting, the shells softened and the flavor actually blends. Respect.
Honestly same. I used to skip that fridge step thinking it was just a “chef thing”… but the flavor really does mellow and come together after 24 hours. Respect for having the patience 😄
Wait—did you bake them right after piping or let them sit? Mine never soften in the fridge, they just get kinda chewy. Maybe I overfold? 24 hours seems like a lot though lol
OMG! So pretty! I made a blue batch with raspberry flavor. So colorful and tasty! Gonna make again! 🌈
My oven runs hot, so 325°F might be fine for others. Mine started browning too early at 10 minutes, so I pulled them at 8. They were still good!
5 stars! Could eat these all day. I added raspberry flavoring and they turned out amazing. Yum!
Sounds delicious! Raspberry flavoring is a great idea. I will try that next time!
Are these really that good? I tried macarons once and they were kinda meh…
Good instructions overall, but 1 2/3 cup powdered sugar vs 1 cup almond flour feels a bit random? I ended up weighing everything and it worked much better. Still, tasty and not too sweet.
Yeah, that ratio does seem a little “thrown together.” Weighing is way more consistent for macarons—glad it worked out for you!
“Tap the baking sheet” — I did that and still got air bubbles. Perhaps I under-mixed? Not sure. Still tasty, but not super smooth shells.
LOL who even makes these fancy things? Just buy them at the store, way easier! But they are fun to watch on YouTube 🙂
I think it’s more fun to make them yourself! It’s like a little science experiment in the kitchen. Plus, nothing beats the taste of fresh ones! 😋
325°F felt a bit low to me—mine were pale at 12 minutes. I ended up going closer to 14, and they browned just enough.
I tried making these and they ended up so flat! What did I do wrong? Not impressed.
I dunno what went wrong. I tried makin’ these once and it was a disaster too. Maybe it was too humid? Or maybe you added too much almond flour? Just toss ’em and try again, I guess?
Oh no! Flat macarons are such a bummer. Did you make sure to whip the egg whites until stiff peaks? That’s super important! Also, did you let them sit for 30 mins before baking? Sometimes it’s the little things that make a big difference.
I heard macarons are French, but is that really true? They don’t taste French to me, lol.
These came out insanely pretty. The 30-minute rest made all the difference for the “skin” and feet. Mine were a little too sweet, but still totally worth it!
These turned out super cute! I followed the folding part carefully and the shells had that classic “feet” at the bottom. My filling was just quick jam + cream, but still tasted bakery-level.
So delicious! But don’t forget the cooling part, or they’ll stick! I learned the hard way. 😂
These macarons turned out AMAZING! My friends were so impressed. Highly recommend!
I’m glad they turned out great for you! Macarons can be tricky, but it sounds like you nailed it. What flavor did you make?
“Tap the baking sheet” is doing a lot of work here 😂. I did it but my shells still had bubbles. Maybe parchment matters? Also I let them rest longer and the skin formed too fast—kinda weird for me.
I’ve found parchment *does* matter a bit—some brands let them bake too “wet” or make the bottom brown unevenly. Also, if you rested too long and the skin set early, it can trap bubbles. Try a shorter rest and bake right after they look matte/not sticky.
These macarons turned out AMAZING! I followed the steps exactly, and they were so cute and perfectly domed. My friends couldn’t believe I made them!
They look cute and all, but aren’t macarons really tricky? I heard they need perfect humidity or something?
Wow, you did an awesome job! I tried making them once, and they turned out flat. What did you flavor them with?
I tried this but didn’t let them sit for 30 minutes and they were flat. I’ll know better next time.
It’s all about the resting time! Don’t worry, you’ll nail it next time. Keep trying!
The instructions are a bit confusing for beginners. I had to watch a video to understand, but they were yummy.
These are gorgeous! The 30-minute resting step really matters—my first batch skipped it and they cracked. With the skin, they came out way smoother.
24 hours in the fridge is overkill, in my opinion. I ate one after 6 hours and it was good—maybe I’m impatient lol.
These macarons turned out AMAZING! Perfect crunch and chew. Definitely making these again!
I don’t know what I did wrong, but mine came out flat and sticky. Very disappointed 😠.
Yummy! But do you really need that long to cool? I was hungry!
I understand your hunger, but letting them cool and sit for that long really does make a big difference in texture and flavor! Trust me, it’s worth the wait.
I forgot to tap the tray (step 9) and I swear I could see air bubbles in the batter. Next batch I tapped like crazy and it helped.
Totally agree—tapping the tray helps a lot. I used to skip it and my shells always looked a bit bumpy. Air bubbles really do mess with the smooth tops!
Wait, I thought you’re supposed to tap *after* piping but before the skin dries? I did it once and then they cracked anyway… maybe my oven temp was off lol.
I made my own filling with Nutella! These are so good, but kinda sweet for my taste.
The instructions are clear, but the oven temp confused me. 325°F worked, but my macarons needed closer to 12 minutes or they stayed soft in the center.
Egg whites and powered sugar, that cant be good for ya. Sugar is bad for health you know!
I tried making these and they came out perfect! So nice and fluffy! ❤️
Not gonna lie, 30 minutes to form a skin feels like magic. I was skeptical, but mine actually formed a decent skin and baked more evenly than my previous attempt.
I’m always amazed by the “skin” step—mine never looks perfect, but it definitely helps with the feet. Glad it worked for you!
Sifting the powdered sugar/almond flour took forever, but the texture was noticeably better. Worth the extra effort.
Gonna try these on the weekend! Fingers crossed 🤞.
Good luck! They’re tricky but sooo worth it! 😋
I added chocolate filling and turned out amazing. Will make again!
The parchment tapping tip saved me. I always skip that and I end up with air bubbles. Great call adding that!
Yes!! That tapping step is underrated. I used to rush right to piping and they’d come out weirdly hollow. Glad it worked for you too 😊
I never tapped mine… but now I’m wondering if that’s why mine always crack on top. Also, do you tap once or a few times? My parchment always slides a bit lol
OMG! Love these! Made them for my friend’s baby shower, everyone loved them! So cute and delicious!!
Aww, that’s wonderful to hear! Baby showers are perfect for these little treats. Did you try any variations on flavors?
Delish! But how come mine cracked? I thought I did everything right.
Super easy to follow! My kids helped me bake and they loved the colors we used. Thanks!
Yummm! I added raspberry extract and they were so sweet and tasty! 😍
These came out super cute! I was nervous about the 30-minute skin step, but it actually made a huge difference. Mine cracked a little at first, then I figured out my oven runs hot—perfect after that.
These are amazing! I’ve always been intimidated by macarons, but this recipe made it so easy! They turned out perfect! ⭐⭐⭐⭐⭐
Good but not great. They tasted alright, but I don’t see what the fuss is all about. Just sugar and eggs, no big deal.
I totally get what you mean! Macarons can be overrated, just a fancy cookie. But the process is kinda fun, right?
I found this too complicated. Can’t you just buy them at the store? 👎
I tried the coloring + flavor extract, and it turned out super tasty. Just don’t add too much—mine got watery and batter loosened.
So fun to make! The colors turned out beautiful. Just be patient with the baking time.
I struggled with these. The egg whites just wouldn’t whip right, and my first batch turned out flat. Maybe I did something wrong?
Ugh, mine cracked and looked so bad! What did I do wrong? I followed the recipe exactly!
Oh no! That sucks! Macarons are super tricky! Maybe your egg whites weren’t stiff enough? Or you mixed too much? Don’t give up, though!
Ye, mine cracked too, like really bad. I heard it’s all about the humidity or somethin? Next time try doing it on a dry day.
Too complicated for me. Why do they need to sit for 30 mins? I don’t have that kinda time! 😩
Macarons? More like Macar-nots! Can’t get them right.
I don’t get it. Mine were flat and didn’t rise at all. What did I do wrong?
French macarons and macaroons are the same, right? Like the coconut ones? I don’t get the fuss. A cookie is a cookie!
No, they’re not the same! Macarons are made with almond flour, while macaroons are coconut-based. They’re completely different, and macarons are way more delicate and fancy! 😍
Is powdered sugar really necessary? Can I just use regular sugar?
Followed the steps but my batter was too runny. Should I add more flour? 🤔
These macarons turned out amazing! 5 stars!
These are not REAL macarons if they don’t have cream in em. You gotta fill em with SOMETHING! 🙄
These macarons are the best! I made them for my sister’s wedding and they were a hit!
My friend told me these are super hard to make. I tried this one time and they didn’t rise. Fail! 👎
I used almond flour and powdered sugar like it says, but I didn’t sift perfectly. They were a bit gritty on the top. Still cute, just not bakery-level.
Why do they always make these look so easy? Mine were a mess. Sigh.
Just wondering, do I have to age the egg whites? Can’t I just use them right away? Seems like a hassle!
I’m skeptical about this recipe. I’ve tried making macarons before and they always end up flat and chewy. Is there a secret to making them rise?
Why do you need that many steps? Seems like a lot of work for cookies. I’ll stick to brownies!
I love macarons but almond flour brands vary so much. Mine were a little grainy until I sifted twice. If you don’t sift, don’t expect the smooth tops.
Yum! Mine were a bit too sweet, but I just added less powdered sugar next time. Thank you!
Less sugar is good! But aren’t macarons supposed to be sweet? I thought that’s what makes them so yummy! 🤷♂️
I totally get that! I thought mine were a bit sweet too, but then I realized that’s kinda how they’re supposed to be. Glad you found a way to tweak it!
Delicious! They came out perfect and I loved the almond flavor!
I tried this recipe but my macarons came out flat 😭. What did I do wrong? I followed every step!
Don’t worry! Flat macarons can be a common issue. Maybe the egg whites weren’t whipped enough? Or you might’ve overmixed the batter. It happens to the best of us! Keep trying!
24 hours in the fridge is real-life patience. I didn’t have time and they were good, but definitely not as flavorful. Now I’m convinced.
1 2/3 cup powdered sugar sounds like way too much. I don’t even have a kitchen scale, and I’d be guessing. Any conversion help?
These are the best macarons I’ve ever made! So cute and delicious. Thanks for the recipe!
These are fancy cookies, I guess, but not worth all the effort for a snack.
French macaroons? I thought they were macaroons with coconut. Confused.
Actually, macarons are different from macaroons! Macarons are made with almond flour and are smooth and crunchy, while macaroons are coconut-based and chewy. No need to be confused!
I thought the same thing! Why they gotta make it so complicated? I ain’t makin’ no almond cookies if they call it macaroons lol.
Why do they have to sit out? It’s just egg whites and sugar… Seems like a waste of time.
These turned out way better than I expected! A total hit at the party. Thanks for sharing! ⭐⭐⭐⭐⭐
Super easy to follow! Just make sure to whip the egg whites long enough. Mine were lightly browned and delightful! 🥰
Yum! I added raspberry flavor instead of vanilla and they are so good! Thanks for the recipe! Will make again for sure!
I used coconut flour instead of almond, they tasted ok but not same. Oops! 🤷♀️
So complicated! I don’t have a piping bag. Can I scoop it with a spoon? Will they still work?
You can definitely use a spoon! They might not be perfectly round, but they’ll still taste great! Just scoop and drop them onto the parchment paper.
Using a spoon? I dunno if that’s gonna work. The piping makes them pretty! You might not get the same texture or look.
I followed it mostly, but I only piped a little bigger circles. Still got feet though, so I’ll take it 😅
Honestly “feet though” is a win 😄 Bigger circles can mess with drying/bake timing, but those little ridges mean your meringue/folding stage was still solid.
I made a huge mess in my kitchen, but the macarons were worth it. Will improve my folding technique.
I don’t know about these macarons. I tried once and they just turned into flat cookies. Maybe it’s just not for me. 🤷♂️
Messy kitchens are signs of good cooking! I totally get you. I struggled with macarons too but it’s so rewarding. Keep practicing! 😊
Takes too long to make! Quick cookies are better if you ask me.
This is the same recipe my grandma used! Sweet memories! Can’t wait to make them for my kids!
My batter was way too thick and wouldn’t pipe smooth, so I probably under-folded. The taste was good though—just not the classic feet I wanted. Next time I’ll be more patient with the folding.
WOW! Been wanting to try these for ages! Finally did it, and they are soooo good! ❤️
I love these little cookies! They look so pretty and taste amazing! Definitely worth the effort! 😊
SO GOOD! The kids loved helping me pipe them!
LOL, these turned out way better than I expected! I didn’t even have almond flour, so I used cashew flour and they still turned out great. Who knew?
Spent hours trying to make these and ended up just buying them. Not worth it.
I don’t get why everyone goes crazy over these cookies. They taste fancy but they’re just… cookies? 🤔
My first attempt at making macarons and they were total failures! I think I need more practice.
Why do people even bother with macarons? They’re just cookies! You should stick to something simpler.
Don’t worry! Macarons are super tricky. Just keep practicing and you’ll get it right! Maybe try watching a video too.
I love macarons, but is it really necessary to let them sit for 30 mins? I don’t have patience for that! But I still tried, they were kinda okay.
Why do you have to wait 30 minutes? I just wanna bake them now! It’s so annoying. Ain’t nobody got time for that!
Wow! These are delicious! 👏👏
I don’t know how people say these are hard to make. Just mix and bake, simple!
A macaron is just a fancy cookie, right? What’s the big deal? 🤷♂️
Good basic recipe, but 4 egg whites is kinda vague—depends how big your eggs are. I did 4 large and it was fine, though next time I’ll weigh the egg whites.
I followed it exactly and only got sad little blobs 😅. Either my almond flour was too coarse or my egg whites weren’t stiff enough. Don’t give up, but yeah, it’s picky.
I tried this recipe but my egg whites never whipped to stiff peaks. What did I do wrong? 🤔
Sounds like you might have had some grease or yolk in your egg whites. Make sure your bowl is super clean! 🥚✨
They tasted good, but I think mine were too chewy. Is that normal? Not sure if I’ll try this again…
I’m skeptical about the oven temp being enough—325°F always feels low to me. But wow, 10–12 minutes nailed it. Next time I’ll watch them even more closely.
These macarons are my weakness. The 30-minute rest before baking is key—I always forget it, then wonder why they crack. Nice instructions though!
Yes!! The skin/rest step is the make-or-break for me too. I always rush it once and then—cracks city 😅
Sugar overload, my kids loved them, but they are too sweet for me. 3 stars.
Sugar overload? Mine came out perfect, and were not too sweet! You must’ve added too much. 🤷♂️
I totally get you! They’re super sweet. Maybe try reducing the sugar next time?
“Let the macarons sit… about 30 minutes” ok but my kitchen is humid 😅 I waited longer until they felt tacky-dry. Worked out finally!
I tried making these and ended up with a gooey mess. How can people even get them to look good? It’s too much work for nothing.
“Let them sit 30 minutes” — ok I did. But I think my kitchen was too humid because the skin never really formed. Bake was still decent though.
I tried something similar, and 325°F felt a little low? Mine still browned too much on the bottom. Maybe my oven runs hot—any tips for adjusting?
Does anyone else find these super annoying to make? So many steps! Not sure it was worth the trouble. 🤔
These macarons are perfection! I made them for a party and everyone loved them. They disappeared in minutes!
I didn’t have almond flour, so I used regular flour. They didn’t rise at all. Don’t recommend.
Sifting the powdered sugar + almond flour saved me. I used to skip and everything was lumpy lol. These steps look solid.
These macarons turned out fantastic! Mine were a bit wobbly at first but I let them sit and they came out perfect. 5 stars!
Honestly, why r people obsessed with these? They just look pretty but taste like air. 😒
Macarons are French pastries but didn’t know they be this tricky! 😂 Gonna keep trying tho!
Just okay. I mean, they’re pretty but I prefer chocolate chip cookies any day.
24 hours in the fridge?? Mine became the best dessert I’ve ever made… no joke. The texture turned perfect after chilling.
Agree! The 24 hours in the fridge made a huge difference for me too—chewy inside with that perfect texture. Mine even got better on day 2 😂
I’m skeptical only because 325°F seems low… I tried chilling less and they turned out kinda hollow. Maybe my meringue was the issue though. Did you bake on convection or regular bake?
The ingredient amounts look a bit off to me: 4 egg whites but only 1/4 cup sugar? I’ve seen recipes with more. Could be fine, just curious.
I’ve made these with roughly that ratio and it can work—macarons are more about getting the right meringue texture than just “more sugar = better.” If the egg whites whip up glossy and stiff, you’re good.
Actually the 1/4 cup sugar might be just the granulated for the meringue, and the rest of the sweetness is in the powdered sugar. So it’s not really “only 1/4 cup total.”
They r too hard for my taste. Wish they were softer 😕.
I followed it pretty closely, but my batter felt thicker than in videos. I probably overmixed at step 5. They still tasted good though—just no perfect feet.
That happens when you overfold/overmix at step 5. If the batter gets too thick, it won’t spread enough for the “feet.” Next time stop folding as soon as it flows like lava—slow ribbon off the spatula.
No perfect feet isn’t the end of the world 😅 Still sounds like you got flavor right. Also 1 cup almond flour can be a little different depending on brands—maybe try weighing it next time? I always fluff/sift and it helps.
Easy peasy lemon squeezy! Can’t wait to impress my friends with these cute little treats! 🥰
These are the best macarons I’ve ever made! They turned out so beautiful and delicious. Definitely making again!
These macarons turned out amazing! So crispy on the outside and chewy inside. Definitely making them again!
That’s awesome! I’m glad they turned out well for you. Macarons can be tricky, but it’s all about practice. Can’t wait to try your batch!
ok i tried once and it failed… then i tried again and it worked?? im not smart but i read the steps and followed. thanks lol
I don’t know if my oven runs hot or what, but the bottoms browned too fast. Next time I’ll check the rack placement.
Love the colors! I added strawberry flavoring and it was delicious! 💖
That sounds amazing! I never thought to add strawberry flavoring, but I bet it was really good! 😋
I skipped the food coloring and flavor extract and they still taste amazing. The resting step is key—30 minutes is not optional. I’ll make these again for sure.
Love that you skipped the coloring and extract—honestly the base recipe seems solid. And yes, that 30-min rest matters. Mine failed once when I rushed it 😅
Honestly, 325°F for 10-12 minutes seems too low for my oven. They were pale on the bottom until I added 2-3 minutes. After that, they improved a lot.
