      Maybe you used too much honey? I’d try low heat so it doesn’t get sweet, because dijon always tastes like mustard to me. Also honey + fish is fine, unless it’s old honey lol.

      I think sugar is a bad swap for honey. It changes the flavor too much! You should try recipe as it is next time.
