These Easy Lemon Bars are a perfect blend of sweet and tart with a buttery shortbread crust. They are refreshing, zesty, and an absolute treat!

Ingredients
  

  • 1 cup cup unsalted butter softened
  • 2 cups cup all-purpose flour divided
  • 1/2 cup cup sugar
  • 4 large eggs
  • 1 1/2 cups cup granulated sugar
  • 1/3 cup cup lemon juice freshly squeezed
  • 2 teaspoons teaspoon lemon zest grated

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, mix together softened butter, 2 cups of flour, and 1/2 cup sugar until well combined. Press the mixture into a 9×13 inch pan.
  • Bake the crust in preheated oven for 15 to 20 minutes, or until firm and golden.
  • In another bowl, whisk together the eggs, 1 1/2 cups sugar, 1/3 cup lemon juice, remaining flour, and lemon zest. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
  • Allow to completely cool before cutting into squares and serving.

      I think you might’ve missed a step? It says to let them cool completely. That could’ve been why they are mushy! Just a thought.

    I’m skeptical of the “firm and golden” crust part—mine stayed pale even after 20 min. The filling still set, but it wasn’t as pretty. Taste was still great.

      Ugh, I’ve had that happen too 😅. 350°F can vary a lot by oven—if yours runs cooler, the crust won’t really brown in 20 minutes. I usually add a few extra minutes and look for light golden edges, not just “firm.” Also make sure the pan is the 9×13 size; using a different pan can mess with browning.
