Crispy Garlic Pork Stir-Fry

August 4, 2023

Crispy garlic pork stir-fry is one of those dishes that delivers big flavor with minimal fuss. It’s bold, savory, and loaded with texture, making it perfect for weeknight dinners when you want something fast but deeply satisfying. The real star here is the crispy pork, golden, juicy, and coated in a sticky, garlicky glaze that clings to every bite.

At the heart of this stir-fry is thinly sliced pork, usually shoulder or tenderloin, which gets lightly coated in cornstarch before hitting the hot pan. That coating creates a crisp exterior while keeping the inside tender and juicy. Once seared, the pork is removed from the pan so the garlic can take center stage. The garlic is cooked just until golden, not burned, releasing a rich aroma that sets the tone for the entire dish.

The sauce is typically a blend of soy sauce, a splash of rice vinegar, a little sugar for balance, and sometimes oyster sauce or fish sauce for added umami. You don’t need a lot, just enough to coat the meat and infuse it with flavor. Toss the pork back into the pan, let it soak up the sauce, and finish with a quick stir to caramelize everything just a bit.

One of the best things about this dish is how adaptable it is. You can throw in veggies like bell peppers, snap peas, or broccoli if you want to make it more of a full meal. Serve it over rice or noodles, and you’ve got something that feels like takeout but tastes even better made at home.

Crispy garlic pork stir-fry is fast, flavorful, and full of contrast – crunchy edges, tender meat, and a garlicky glaze that lingers in the best way. It’s proof that you don’t need complicated ingredients or long cook times to make something truly delicious. Just a hot pan, a bit of garlic, and the right amount of sizzle.

Ingredients

  • 1 lb pork loin thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 cup broccoli florets
  • 1 bell pepper sliced
  • 1 cup carrots sliced
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • Steamed rice for serving
  • Green onions sliced, for garnish
  • sesame seeds for garnish

Instructions

  • In a mixing bowl, combine 1 lb of thinly sliced pork loin with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 1 teaspoon of sesame oil. Let it marinate for 10 minutes.
  • Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  • Add 4 cloves of minced garlic and sauté for about 30 seconds until fragrant.
  • Add the marinated pork to the skillet and spread it out in a single layer. Let it cook undisturbed for 2-3 minutes until it turns golden and crispy.
  • Flip the pork slices and cook for an additional 2-3 minutes on the other side until fully cooked through.
  • Push the pork to one side of the skillet and add 1 cup of broccoli florets, 1 sliced bell pepper, and 1 cup of sliced carrots to the other side. Stir-fry the vegetables for 2-3 minutes until tender-crisp.
  • Combine the vegetables with the pork, toss everything together, and cook for another minute.
  • In a small bowl, mix 1 tablespoon of cornstarch with 1/4 cup of chicken broth. Pour this mixture into the skillet to create a glossy sauce. Cook for another minute until the sauce thickens.
  • Serve the Crispy Garlic Pork Stir-Fry over steamed rice and garnish with sliced green onions and a sprinkle of sesame seeds.

I dunno, I think garlic is overrated. This dish was just okay for me.

  2. User avatar Jamie Runolfsdottir says:

My girlfriend says it tastes like takeout. I think that’s a compliment? Anyway, I followed the steps mostly and it turned out great.

  3. User avatar oPandariaNo says:

    2 stars
Yeah, sounds good but where do I get those fancy sauces? 😀

  4. 5 stars
This recipe is soooo good! My family devoured it and I can’t wait to make it again! 🤤

  5. User avatar russel.turner1996 says:

    5 stars
Crispy + garlic = YUM!!! Easy to follow. I might try with chicken next time!

  6. User avatar dan.heaney24 says:

    4 stars
This was reasonable but I think my grandma’s recipe is better. Still give it 4 stars for effort.

  7. User avatar jetta.leannon says:

    2 stars
Anyone else think there’s too much pork? I’d rather have more veggies. 🙄

  8. User avatar Nick Ovtime says:

    4 stars
Great recipe, but I used chicken instead of pork. Still yum!

  9. User avatar ardella.lynch says:

    1 star
I accidentally used too much cornstarch, now it’s like jello. Can’t eat this. 1 star.

  10. 4 stars
The sauce thickened fast for me—maybe because I used less broth? Still good though. Garlic smell in the kitchen is honestly worth it.

  11. 4 stars
Pretty solid, but I think 4 cloves of garlic might be a bit much for my taste. Next time I’ll do 2-3 cloves. Sauce came out glossy though—nice texture.

  12. 4 stars
Pretty good, but my pork didn’t get “crispy” like the recipe says. I think my slices were too thick and I overcrowded the pan.

  13. 3 stars
I love pork stir-fry, but 2-3 minutes on each side felt short for my stove. Next time I’ll give it a minute more before tossing veggies in.

  14. User avatar donny.carroll1954 says:

    2 stars
The sauce was too thick for my liking. I prefer it more saucy.

    1. User avatar rodolfo.haley36 says:

      4 stars
I think you just need to adjust the cornstarch. Maybe use less? I like my sauce more like a puddle too!

  15. User avatar brenton.reichel says:

    4 stars
Pretty tasty, but my pork didn’t get golden like yours. I think I overcrowded the pan (shocker). Next time I’ll do smaller batches.

    1. User avatar hildred.rogahn2018 says:

      5 stars
Totally makes sense—pork won’t crisp up if it’s packed in. I always cook in batches too. Great call on “smaller batches” next time!

  16. User avatar stefany.leuschke78 says:

    5 stars
Made this tonight—my pork got super crispy on the first side like the recipe says. Garlic smelled amazing. I did need an extra 1-2 minutes to fully cook the thicker slices, but overall 10/10.

    1. User avatar rich.landlord says:

      3 stars
Glad it worked for you, but I’m confused about the 10/10 😅. I always feel like pork dries out if you let it sit too long—also 2 minutes seems short. Still, the garlic smell part makes me want to try it.

    2. User avatar carey.waelchi63 says:

      5 stars
Love hearing that! The undisturbed cook + single layer is the key for that crispy edge. 🙌 What thickness were your slices—like paper-thin or more cutlets style?

  17. User avatar Vito Gerlach says:

    2 stars
1/4 cup broth with 1 tbsp cornstarch seems too little? I had to add extra cornstarch slurry. Maybe my broth was more watery. Anyway good vibe.

  18. User avatar Super Saiyan Blue Goku says:

    5 stars
This was amazing! The flavors were spot on and the garlic really came through. My family loved it!

    1. User avatar Mrs. Sherron Johnston says:

      3 stars
I dunno, garlic like that might be too much. How you know it was the best? 🤔

    2. 5 stars
So glad to hear you loved it! Garlic makes everything better! 😍

  19. User avatar anonymous_hacker says:

    5 stars
Wow. The garlic smell alone made my kitchen smell fancy. I served it with jasmine rice and it felt restaurant-level.

  20. 5 stars
Yummm! The pork was crispy just like it said. Will definitely make again!

  21. User avatar delila.vonrueden8 says:

    3 stars
Not bad, but I think 4 cloves garlic is way too much for my taste. I’m not a garlic-hater but this was strong—still ate it though.

    1. User avatar geoWizard says:

      4 stars
I actually love it strong 😅 The crispy pork + garlic is the best part. Next time try adding a little more sauce or a splash of broth to mellow it out.

    2. User avatar ellyn.cormier39 says:

      5 stars
Haha I get you—4 cloves is definitely punchy. If you’re sensitive to garlic, I’d try 2 cloves and you’ll still get that flavor without the “garlic bomb.”

  22. User avatar johnie.johnston says:

    3 stars
It was ok, but I found it a bit oily. Maybe next time I’ll use less oil? 🤔

  23. User avatar gregory.bergstrom12 says:

    4 stars
Pretty good, but my pork didn’t get super crispy. I think my slices were thicker and I kept moving them. Next time I’ll leave it alone like the directions say.

  24. User avatar sirena.mcclure95 says:

    5 stars
Just made this for dinner, and my whole family loved it! Perfectly crispy pork!

    1. User avatar charlyn.weimann says:

      3 stars
Wait, did you say ‘crispy’? I don’t know, last time I tried something like that, the pork turned out all chewy. Maybe it depends on the cook?

    2. User avatar mose.cormier says:

      5 stars
That sounds amazing! I gotta try this recipe. My kids are picky eaters, but they love crispy pork! Thanks for sharing!

  25. User avatar Max Quordlepleen says:

    5 stars
I don’t like vegetables, so I skipped the broccoli and bell pepper. Still came out tasty 😄

  26. User avatar Falmer Nightprowler says:

    3 stars
Not bad but I’m skeptical about the “crispy” claim. Mine was more browned than crispy, and the pork pieces were kinda uneven. Still ate it all though 😅

  27. User avatar carolynn.yundt1958 says:

    1 star
This recipe is a joke. 1 lb of pork for a family of 4? Are you serious?!

  28. User avatar Malinda Lowe says:

    5 stars
Followed the recipe exactly and it slapped. Oyster sauce + sesame oil combo is elite. Served over rice and everyone went back for more.

  29. User avatar Falmer Archer says:

    2 stars
Not bad but… 4 cloves garlic seems like a lot? I’m not sure if my garlic was old, but it got a bit harsh. I’d maybe cut to 2 cloves next time. Rice helped though.

    1. User avatar Vroomfondel says:

      4 stars
Harsh garlic usually means it was either old or minced too fine / burnt a bit. Maybe try lower heat or sauté for less than 30 seconds.

    2. User avatar kelly.wisoky82 says:

      5 stars
I get you—4 cloves is kinda bold. I usually do 2-3 and it still tastes garlicky without going harsh. Rice definitely helps mellow it out.

  30. User avatar jann.mayert9 says:

    5 stars
Yum! I mixed in some peanuts too. Added crunch. 5 stars all the way!

    1. 5 stars
That sounds delicious! I never thought of adding peanuts. Gonna try it next time. Thanks for the tip!

  31. User avatar Cheyenne Windler says:

    4 stars
Pretty tasty but I think I added too much soy sauce. Next time I’ll use less!

  32. User avatar korey.bashirian82 says:

    3 stars
I don’t believe in cooking with pork, bad for health and all. But my partner liked it.

    1. User avatar vivian.king24 says:

      4 stars
It’s great that your partner enjoyed it! But I totally get your concerns about pork. Maybe try substituting with chicken next time?

    2. User avatar nona.orn1993 says:

      3 stars
Pork is not bad for health if cooked right! Just don’t eat too much. I think this recipe sounds yummy!

  33. User avatar ervin.wuckert says:

    4 stars
Not gonna lie, I was skeptical about the cornstarch slurry, but it did make a nice glossy sauce. Easy weeknight meal.

    1. User avatar betsey.jacobs says:

      3 stars
Cornstarch slurry?? I usually skip that and just use more oyster/soy. It sounds like it could turn gummy, but I guess if it’s only 1 minute it won’t. Might try next time.

    2. 5 stars
I was skeptical too, but the slurry + broth thing really does make it shine. Mine thickened a little too much so I added a splash more broth—still great.

  34. User avatar lavone.breitenberg says:

    5 stars
This was dangerously good. The pork actually got that crispy edge thing going, and the garlic smelled amazing. I used a bigger skillet so it spread out better—highly recommend.

  35. 5 stars
This recipe is amazing! My family loved it, especially the crispy garlic flavor. Definitely a 5-star dish!

  36. User avatar jackie.lockman says:

    4 stars
I used chicken instead of pork and the timing is different… but the sauce part saved it. Would still try the pork version though!

  37. User avatar ivory.sipes0 says:

    4 stars
The cornstarch + broth step saved it. I’ve had stir-fries turn watery before, but this thickened perfectly and coated everything evenly.

  38. User avatar angelica.morar70 says:

    3 stars
Too much oil in my opinion. I prefer it less greasy.

  39. User avatar charley.huel1957 says:

    3 stars
I found it kinda bland, probably need to add more soy sauce or something. I give it 3 stars.

  40. User avatar mathWizard says:

    4 stars
Garlic amount seems like a lot (4 cloves). I know it says minced, but I did 2 and it was still super garlicky. Probably fine either way—just watch it doesn’t burn.

    1. User avatar james.mcdermott says:

      4 stars
I followed it exactly once and yeah… very garlicky 😂 But it was still super good. Next time I’ll cut the garlic down for sure.

    2. 5 stars
Totally agree—4 cloves is a lot. I usually do 2 and then add more only if I’m feeling brave. Great tip to keep an eye on burning.

  41. User avatar bertram.pacocha51 says:

    4 stars
Yummy! But is oyster sauce really necessary? I didn’t have any and it still turned out fine.

  42. User avatar Lumberjack says:

    4 stars
Yum! I almost added some peanut butter for flavor. It was still yummy!

  43. User avatar NAFO.SUPREMACY says:

    1 star
Crispy garlic? More like soggy garlic! 🤨 Not impressed.

    1. User avatar portia.gerlach18 says:

      4 stars
I think you might’ve overcooked it! 😅 Garlic needs just a minute, otherwise, it can get soggy. Try again!

    2. User avatar gino.schroeder19 says:

      3 stars
Nah, it’s not soggy if you do it right. U gotta follow the steps. Maybe you just didn’t cook it long enough? 🤷‍♂️

  44. User avatar Feyd-Rautha Rabban says:

    5 stars
I don’t usually cook with oyster sauce, but I liked it! It gave a deeper flavor. The veggies stayed crisp which is what I want.

  45. 3 stars
Could you cook it without the cornstarch? I’m gluten free. 🤔

  46. User avatar Ice Wolf says:

    5 stars
This was sooo good! The garlic really made it pop! Will definitely make again.

  47. User avatar Chef Bear says:

    4 stars
looks easy but im not a cook lol, can i use chicken? also, how long to cook the veggies?

  48. User avatar Frost Atronach says:

    4 stars
Too much garlic for my taste. I think 4 cloves is for ninja level cooks lol. But overall not bad.

    1. User avatar alfreda.kiehn says:

      4 stars
I get what you mean! I usually dial down the garlic too. But maybe 3 cloves would be a good compromise? Overall, the stir-fry looks delicious!

    2. User avatar Bowerick Wowbagger says:

      2 stars
4 cloves?! That’s insane! Can’t believe people put that much garlic. It’s too strong for me. I’d rather have more veggies than garlic any day. 🤨

  49. User avatar Daedric Prince says:

    4 stars
Yum!! But why the sesame seeds? I don’t get that part.

  50. User avatar berry.weber5 says:

    4 stars
Quick and easy! Made this for dinner and it was a hit. Will definitely make again!

  51. User avatar ruth.cronin says:

    4 stars
The sauce is where it shines. Soy + oyster + sesame oil is such a good combo. I didn’t have oyster sauce so I used hoisin and it was “close,” but not the same vibe.

  52. User avatar malcolm.hahn41 says:

    3 stars
It was okay, but I found the pork a bit chewy. Maybe I needed to cook it longer?

  53. User avatar Colin the Security Robot says:

    3 stars
I’m skeptical about cornstarch + broth making a “glossy sauce” in just a minute. Mine was more like a light coating, not glossy. Flavor was okay.

    1. User avatar brad.wyman says:

      4 stars
Totally get it—cornstarch + broth *can* thicken fast, but “glossy” depends a lot on getting the liquid hot enough and not letting it boil too long. I usually make sure the sauce goes in while the pan is already sizzling and then just 30–60 seconds.

  54. User avatar Liet-Kynes says:

    5 stars
    Delish!

    1. User avatar walker.altenwerth says:

      5 stars
Right?? That crispy garlic pork vibe is everything 😄

  55. User avatar billy.blick says:

    4 stars
Pretty tasty, but my broccoli got a little too soft even though I only cooked “2-3 minutes.” Next time I’ll cut them smaller and keep the heat higher.

    1. User avatar foster.rosenbaum90 says:

      4 stars
Totally get that—broccoli can go from crisp to mushy fast. Cutting smaller might help, but I’d also try blanching it 30–60 seconds first, then finishing the stir-fry hot so it stays tender-crisp.

  56. User avatar roy.daugherty3 says:

    4 stars
Simple and delicious! I added some chili flakes for a kick, and wow! Will make this again for sure.

  57. 3 stars
Not gonna lie, my pork didn’t get golden—more like chewy. I might’ve overcrowded the pan or flipped too soon. Flavor is great regardless.

  58. 3 stars
I tried this and the pork kinda stuck to the pan even though I used oil. Probably my skillet isn’t nonstick enough? Flavor was great though.

  59. User avatar grant.skiles66 says:

    4 stars
Can confirm: garlic goes from “fragrant” to “burnt” fast. I had to lower the heat after about 20 seconds 😅 still tasty though!

  60. User avatar eldora.reinger1995 says:

    5 stars
OMG, so good!!! I’m not a cook, but this was super easy. Thanks for the recipe!

  61. 4 stars
The flavors are solid—soy + oyster + sesame oil is a great combo. I did reduce soy sauce a bit because I like it less salty.

  62. User avatar wilfred.thompson1950 says:

    5 stars
Made this tonight—crispy pork is legit. I used a hot wok and didn’t crowd the pan, and it turned out golden and flavorful. The sauce came together fast too. Will repeat.

  63. User avatar ardell.kuhlman35 says:

    2 stars
Too much garlic for my taste. I think I’ll cut it down next time.

  64. User avatar fernando.graham2016 says:

    5 stars
Super easy weeknight meal. I served it with rice and added extra green onions because… why not. Sesame seeds make it look restaurant-y.

  65. User avatar jacquiline.bechtelar says:

    3 stars
Flavor: 10/10. Texture: kinda meh. I think the pan was too crowded even though I tried to spread it. If you overcrowd, it steams, not crisps—lesson learned.

  66. 4 stars
Rice suggestion is solid. I served it over jasmine and it matched perfectly. Would be even better with snap peas or mushrooms.

  67. 2 stars
Who eats pork anymore? I thought this was a chicken recipe. Disappointed. 2 stars.

    1. User avatar Storm Atronach says:

      4 stars
Pork is still quite popular in many cuisines! You might love it if you just give it a chance. 3 stars is a bit harsh honestly.

  68. User avatar Eddie the Computer says:

    5 stars
Super quick and easy! Perfect for weeknight dinners! 🌟

  69. 4 stars
Good flavor, but mine wasn’t as crispy. I think I flipped too soon and the pork was a little too thick. Next time I’ll slice thinner and leave it undisturbed longer.

  70. 5 stars
This is one of those recipes that feels fancy but is actually easy. I added some red pepper flakes and it popped.

    1. 5 stars
Totally agree—this does feel “restaurant-y” without being fussy. The garlic + crispy pork combo is 🔥. I bet red pepper flakes would make it even better!

    2. User avatar hoyt.abshire says:

      3 stars
I made it once and mine didn’t get really crispy… I might’ve crowded the pan. Also I used 1/2 the garlic and it still tasted good though. Do you think the cornstarch slurry matters more than the undisturbed step?

  71. User avatar steven.wiza says:

    4 stars
Substituted veggies for what I had, just some frozen ones. Still turned out delish, I think! 😊

    1. User avatar antonio.herzog35 says:

      5 stars
Frozen veggies work great! I’m glad it still turned out delicious for you! 😊

  72. User avatar babara.damore33 says:

    4 stars
Could you use chicken instead of pork? I don’t like pork, but I still want to try this.

    1. User avatar willie.leuschke51 says:

      5 stars
Absolutely! You can definitely swap out the pork for chicken. Just be sure to cook the chicken thoroughly to avoid any issues. Enjoy your stir-fry!

  73. User avatar amos.champlin2025 says:

    5 stars
The sauce step saved it. That cornstarch + broth glossy thing is legit. I added a tiny pinch of red pepper flakes too.

  74. User avatar flor.oreilly57 says:

    1 star
Total disaster! I overcooked the pork and it ended up like rubber. Never again! 😩

  75. User avatar Ms. Tara Adams says:

    4 stars
My dumb brain used pork shoulder (not loin) and it took longer to cook. Once it was right though, the sauce thickened nice and glossy. Would make again with the right cut.

  76. User avatar sergio.lynch2014 says:

    2 stars
Not sure it be so crispy. I followed the instructions & it came out soggy. Not the best but maybe I did something wrong.

  77. 3 stars
Could’ve used more sauce—by the time it thickened it felt a bit thin. I might double the cornstarch slurry next time.

  78. User avatar meggan.farrell says:

    2 stars
I’m not sure about the sesame oil in the marinade—felt a little overpowering to me. Next time I’ll reduce to 1/2 tsp. Otherwise it tasted good.

  79. 3 stars
I tried following it exactly and somehow my garlic burned in 20 seconds?? Maybe my heat was too high. Flavor was still decent but… caution on that step.

  80. User avatar margareta.price46 says:

    5 stars
Made this tonight and it was *dangerously* good. The pork got super crispy on the first side like the recipe said. I used extra garlic because… why not.

  81. 5 stars
Made this tonight—so crunchy on the pork! The garlic smell is unreal. I added a pinch of chili flakes and it was perfect over rice.

  82. User avatar dorthey.dare37 says:

    4 stars
Pretty tasty, but my sauce got a little lumpy even though I whisked the cornstarch slurry. Next time I’ll mix it more thoroughly before adding.

  83. User avatar rory.hansen48 says:

    5 stars
Pork, broccoli, DONE! Easy peasy, fresh and tasty! 10/10 recommend.

  84. User avatar dexter.johns5 says:

    2 stars
Garlic is good but 4 cloves feels like too much—my mouth was on fire lol. Maybe I’m weak. Still, it tastes better than takeout.

  85. User avatar Ms. Benito Fadel says:

    4 stars
Oyster sauce + soy sauce combo is always a win. Also 30 seconds for garlic is perfect (burned garlic once and never again).

  86. User avatar Spider Guardian says:

    5 stars
This was a hit with my family! The flavors are amazing, I added a bit of extra garlic.

  87. User avatar millard.steuber says:

    4 stars
I followed the timings and it was borderline perfect… until my veggies got a little too soft because I left them cooking while I was answering emails. Still tasty.

    1. User avatar kennith.ernser1979 says:

      4 stars
Ugh, that “email spiral” timing got me too 😅 Still, tender-crisp veggies are ideal—next time I’d keep a closer eye or do the veggies a touch shorter.

  88. User avatar weldon.heidenreich94 says:

    2 stars
This dish looked nothing like the picture. My stir-fry was soggy, did I do something wrong?

  89. 3 stars
Not bad but I found it a little too salty with soy + oyster + chicken broth. I’m gonna cut soy sauce to 1 tbsp next time.

  90. User avatar kristyn.strosin1976 says:

    5 stars
My kids loved it! Easy to follow and they ate all their veggies! Win for me!

  91. User avatar ken.monahan47 says:

    2 stars
Wayyy too much garlic for my taste. I love garlic but this was like… garlicky overkill.

    1. User avatar Sharika Schiller DDS says:

      4 stars
I totally get what you mean! I love garlic too, but sometimes it can be overwhelming. Maybe next time try less garlic, like 2 cloves instead of 4?

    2. User avatar hiroko.runte22 says:

      2 stars
Nah, I think 4 cloves is perfect! Garlic is what makes it great!! Don’t be a wuss!

I’m not a huge fan of garlic, will it still taste good without it?

    1. User avatar kelley.larkin says:

      4 stars
You can totally skip the garlic! It will still be tasty with all the other ingredients. Maybe add some ginger for extra flavor?

  93. 5 stars
Honestly this reminds me of takeout in the best way. I added extra green onions because I can never stop myself.

  94. User avatar edward.rath38 says:

Just wow. Super quick and delicious. Will cook again!

  95. 5 stars
This was amazing! The garlic flavor is so intense! Definitely making again.

My kids ate it all and asked for more garlic pork, so that’s basically a 10/10 in my house. Vegetables stayed crisp too.

Made this tonight and it was CRAZY good. The pork got actually crispy and the garlic flavor was spot on. I served it with extra rice—no regrets.

  98. User avatar ALTplusF4 says:

This is the best pork stir-fry I’ve made! Super crispy and tasty!

  99. User avatar Frodo Baggins says:

I did this with pork shoulder because that’s what I had and it still came out really crispy. The garlic smell while sautéing is unreal.

This was amazing! Flavors were spot on, my family loved it!

  101. User avatar evangelina.ledner84 says:

Really liked it, but I used chicken instead of pork. Still turned out great!

  102. 3 stars
Really? 1 tsp of sesame oil? I think that’s not enough for a flavor punch, I added more.

  103. User avatar flavia.waelchi says:

Pretty tasty, but mine got a little soggy at the end. I think I waited too long to add the cornstarch slurry. Next time I’ll thicken the sauce quicker and serve immediately.

    1. User avatar isaiah.rogahn says:

      5 stars
Yeah, I’ve had that happen too—once the slurry sits too long, it kind of turns the whole thing stewy instead of glossy. I now mix slurry right at the end and keep everything moving for that last minute.

    2. User avatar melida.rowe says:

      4 stars
Wait—your cornstarch slurry might’ve been too thick? I usually do cornstarch + cold broth and then immediately pour it in while the pan is hot. If you add it and then let it sit, it gets soggy for sure. Also don’t overcook the pork; 2-3 min per side seems right.

Could’ve used more sauce for my liking. It was delicious but a little dry once served over rice. I’ll double the broth/cornstarch next time.

    1. User avatar harry.renner66 says:

      5 stars
Yes! I felt the same over rice—tastes great fresh from the pan but a bit dry once it cools. Doubling the cornstarch/broth combo sounds spot on.

  105. User avatar halflife4 says:

    4 stars
I don’t get the cornstarch slurry part—why not just add the broth? Either way, I liked the glossy finish. Texture was nice.

  106. 2 stars
Meh, it was just OK. I’ve had better stir-fries from takeout. Not worth it.

Made this tonight and it’s insanely good. The “don’t touch it” step for the pork is key—crispy bits everywhere. I served it with extra broccoli and it held up great.

    1. User avatar angelo.murray5 says:

      5 stars
Yes! That “don’t touch it” step is EVERYTHING. I did it exactly and got the crispy edges all over too. 🔥

  108. 3 stars
Why use oyster sauce? Isn’t that for seafood? Anyway I used soy sauce only and it was still good.

  109. User avatar alesia.daniel95 says:

Can this be made with chicken instead?? My kids don’t like pork.

  110. User avatar oPandariaNo says:

It was okay. I used chicken instead and it turned out pretty dry.

  111. User avatar luciana.schowalter83 says:

I’m not sure about the “undisturbed” step—my pork curled a lot and didn’t brown evenly. Still flavorful though. Maybe my pan wasn’t hot enough.

  112. User avatar jamel.cole62 says:

    3 stars
I’m skeptical about the cornstarch amount—1 tbsp thickened it way more than I expected, kind of gloppy. Still tasted great, just not the glossy texture I thought.

  113. 5 stars
So good! I added some chili flakes for extra kick. Yum! 🥢🔥

  114. User avatar kendrick.jakubowski78 says:

I think its pretty easy and cheap. Didn’t have pork, I used chicken instead. Still yum!

  115. User avatar cristopher.hill1991 says:

Whoa—crispy pork is hard but you nailed it. My family kept eating straight from the wok before it even got to the rice 😂

  116. User avatar jaye.satterfield33 says:

I cooked this for my kids and they totally loved it! Way to sneak in the broccoli!

  117. User avatar maricruz.kling51 says:

I didn’t have chicken broth so I used vegetable broth. Still came out great!

    1. User avatar silas.lockman says:

Kinda strange to use veggie broth in a pork dish tho… isn’t chicken broth better?

    2. User avatar tad.schinner69 says:

Glad to hear it turned out great! Veggie broth is a smart swap! 🥦

Nah, too much soy sauce for my taste. My son said it was salty, and he never complains. 🤨

  119. User avatar bobby.watsica says:

I don’t get it. My pork turned out dry and soggy. Following exact instructions but still no bueno.

Crispy garlic pork stir fry? What a weird combo. Don’t think I’m trying this. :/

  121. User avatar Genghis Khan says:

    3 stars
Not bad, but I felt like it needed more sauce. Maybe add another tablespoon of oyster sauce?

    1. User avatar un.windler35 says:

      5 stars
I totally agree! A bit more sauce would definitely elevate the flavor. Also, your suggestion seems spot on—oyster sauce is great for umami!

  122. 3 stars
Eh, it was okay. Just meat and veggies. Nothing special.

    1. User avatar Draugr Overlord says:

      4 stars
I think it’s just a classic stir-fry! Gotta appreciate the simplicity. I added some extra spices and it was perfect!

    2. 2 stars
But what’s special about meat and veggies, though? Seems kinda plain and boring. I don’t see the hype.

  123. 2 stars
I don’t get the “crispy” part. Mine was more chewy than crispy. Could be the pork loin brand? Idk. Still tasted good.

    1. User avatar Emily Saunders says:

      5 stars
Totally feel you—“crispy” can be hit or miss. I think the key is actually getting the pork *very* dry before it hits the pan, and not crowding it. If the slices overlap, they steam instead of crisp.

  124. User avatar yajaira.rice25 says:

Crispy? Hardly. I think I cooked it wrong. Didn’t look like the picture.

  125. User avatar sung.schoen1982 says:

Crispy pork + garlic is always a win. I used pork shoulder because that’s what I had and it still worked, just needed like 1-2 minutes longer.

  126. 5 stars
Tasty and filling! Will try it again next week. Yum!

  127. 3 stars
I tried it but the pork was too tough. Maybe I cooked it too long?

    1. User avatar wesley.armstrong1952 says:

      3 stars
Maybe try cooking it for less time next time? I never had that problem, and I cook mine a lot longer! Just make sure it’s not overcooked!

  128. 1 star
Sounds good but I don’t have oyster sauce. Can I substitute it with ketchup?

  129. User avatar holley.harris46 says:

    2 stars
meh… could’ve used more sauce for me. Also my bell pepper got a lil soggy even though I didn’t overcook. Still edible.

    1. 4 stars
Ugh yeah I feel you. I like a saucier stir-fry too—next time I’d add a splash more broth or a bit extra oyster/soy to balance it out.

This was AMAZING! My whole family loved it. Will definitely make again!
