      Totally get you 😂 “To taste” is annoying—usually I start with 1/2 tsp salt and 1/4 tsp pepper, then adjust. Parmesan/cheese can be salty too, so go easy at first.

      Totally get that—1 cup heavy cream is definitely “indulgent.” But honestly it makes the sauce super silky and clings to the tortellini. I’ve tried cutting it down and it gets less luxurious.

      I followed step by step too and it was bland for me as well. I just don’t get it, like, why so little salt? I used more parmesan and still needed more seasoning. Not bad but would do it diff next time.

    Yesss. Tortellini + spinach + cream is basically my love language. I used frozen spinach because that’s what I had and it worked fine—just squeezed out extra water.

      Yes!! Frozen spinach is totally fine—squeezing out the extra water is the key. I also love adding the tomatoes at the same time so they stay juicy but the sauce still clings to the tortellini.

      Honestly I made this and it tasted good but my cream turned kind of thick fast, like too fast? I may have cooked the garlic too long lol. Still, spinach + tomato with tortellini is a winner. I’ll try the red pepper flakes next time.

      Not gonna lie, I thought “no broth” was weird. I added a splash of pasta water anyway and it was good, kinda like a cheat sauce. Would make again, but watch the heat so it doesn’t break.

    Not bad, but mine was kinda bland. I think I under-salted and my Italian seasoning was old. Also the spinach took a bit longer to wilt, maybe my pan was crowded.

      Thanks! That all tracks—2-3 minutes can be too short if the pan’s crowded or the spinach is thicker. I also usually taste right at the end and add more salt/parm if it feels flat. Fresh Italian seasoning vs old definitely matters too.

    Pretty good, but my sauce turned a little thick. I think next time I’ll add a splash of pasta water when I melt the parmesan. Otherwise tasted like a real weeknight Italian meal.

      Totally makes sense—parmesan can thicken up fast once it’s melted. A splash of pasta water (or even a tiny bit more cream) usually loosens it right back to silky. Glad it still tasted like a real weeknight Italian meal though! 😊
