Creamy Pancetta Gnocchi

February 6, 2025

Creamy pancetta gnocchi is a luxurious and comforting dish that combines pillowy gnocchi with crispy pancetta, all coated in a rich, creamy sauce. This Italian-inspired dish is perfect for a cozy dinner or as a show-stopping entrée for special occasions. The combination of soft, tender gnocchi, the savory saltiness of pancetta, and the creamy sauce creates an irresistible blend of flavors and textures.

The base of creamy pancetta gnocchi is the gnocchi itself, which is typically made from a mixture of potatoes, flour, and eggs. These little dumplings are soft, light, and absorb the creamy sauce beautifully, giving every bite a melt-in-your-mouth quality. You can use store-bought gnocchi for convenience or make it from scratch for a more authentic experience.

Pancetta, a dry-cured Italian bacon, adds a savory depth to the dish. It’s sautéed until crispy, which brings out its rich, smoky flavor. The pancetta adds not only a delicious salty taste but also a satisfying crunch that contrasts nicely with the softness of the gnocchi. Once the pancetta is crispy, it’s set aside, and the same pan is used to make the creamy sauce.

The sauce is a simple yet indulgent combination of heavy cream, garlic, and Parmesan cheese. The cream creates a smooth, velvety base, while the Parmesan adds richness and umami. A touch of white wine can be added to deglaze the pan, adding extra depth to the sauce. Once the sauce is ready, the cooked gnocchi is tossed into the pan, allowing it to soak up all the creamy goodness. The crispy pancetta is then stirred in, adding a burst of flavor to each bite.

For an added touch, sprinkle some fresh herbs, like basil or parsley, over the top to brighten the dish and add a pop of color. This creamy pancetta gnocchi is perfect on its own but can also be paired with a simple green salad or crusty bread to complete the meal.

This dish is a beautiful combination of rich, creamy flavors and savory pancetta, making it a crowd-pleaser that will quickly become a favorite.

I don’t know… the cream was kinda too much for me. Next time, I might just use half or something. Not bad overall though.

I actually loved the creaminess! It just makes everything taste so rich and delicious. Maybe you could try a little less next time, but I think it’s part of the charm of the dish. 🥰

    2. 2 stars
I dunno, but cream is supposed to be creamy! Why would you go cutting it down? Just means there’s less flavor. Maybe try a different recipe if you didn’t like this one as much.

  2. User avatar Mrs. Joe Swaniawski says:

    5 stars
This is the best gnocchi I’ve ever had! Super creamy and delicious. My family loved it!

  3. User avatar jessie.shanahan says:

    3 stars
Only one issue: I let the gnocchi sit after boiling and it kinda stuck together… but the sauce saved it. Tasty!

  4. 5 stars
Absolutely loved this recipe! So creamy and delicious. Will make it again for sure.

  5. User avatar albert.mckenzie says:

Yesss creamy gnocchi with crispy meat. My Italian nonna would probably yell about the store-bought gnocchi, but I say live your life 😄

  6. 5 stars
    Yummyyyy!!! 😋

  7. 1 star
Gnocchi is just doughy lumps 😂. But I guess the sauce makes it better or something?

  8. User avatar lino.gleason8 says:

    5 stars
Wow, this was amazing! So creamy and delicious. My family loved it!

  9. User avatar elizbeth.kihn80 says:

    4 stars
I love creamy pasta stuff, but store-bought gnocchi can be a little delicate. I cooked them only until they floated like the recipe said and it worked.

  10. User avatar jeanetta.herzog says:

    3 stars
I dunno about boiling the gnocchi; they always stick to the pot for me. Maybe try frying them first?

    1. User avatar jenna.dicki56 says:

      4 stars
I used to have that problem too, but make sure the water is really boiling before you add the gnocchi. It helps a lot! Give it another shot! 🌟

  11. User avatar celine.herzog says:

    2 stars
Easy to make, but the sauce was a bit too rich for my taste. I prefer lighter dishes.

    1. 4 stars
I totally get what you mean! I also found it a bit heavy. Maybe substituting half the cream with broth would help?

    2. User avatar Skeleton says:

      2 stars
Rich is good! That’s what makes it tasty! You’re missing out on the flavor if you want lighter dishes!

  12. User avatar archie.marks24 says:

This sounds dangerously good. Creamy + pancetta is my weakness. I’ll definitely add extra pepper next time.

    1. User avatar halley.brekke says:

      5 stars
Creamy + pancetta is a perfect combo—extra pepper sounds like the move. 😄 Next time try cracking fresh black pepper right before serving for even more bite.

    2. User avatar shan.mueller32 says:

      3 stars
I’m kinda skeptical about “extra pepper” since the pancetta already salty. Maybe use less salt and only pepper at the end? Also, store-bought gnocchi can get mushy… but if you simmer gentle it should be fine.

  13. User avatar Lewis Schmitt MD says:

    5 stars
Tried this recipe and it came out perfect! Will definitely make again!

  14. User avatar caroll.reichert says:

    4 stars
Lol, I didn’t have gnocchi so I used spaghetti… still turned out pretty good. 😂

  15. User avatar Emily Saunders says:

This is the best gnocchi recipe I’ve ever tried! So creamy and delicious!

  16. User avatar Wellington Yueh says:

I tried this last night but I subbed the pancetta with bacon. It was still good but not the same!

  17. User avatar margene.veum says:

    5 stars
Tried this for my boyfriend and he ate all of it! 😂 10/10 would recommend!

    1. User avatar sean.gutmann19 says:

      3 stars
10/10? Really? I found it kinda bland. Maybe I missed something? 🤔

    2. User avatar ArabianNights says:

      5 stars
That’s awesome! My boyfriend loved it too! Creamy gnocchi is life! 😍

  18. 2 stars
Too much cream, doesn’t need that much! But pancetta’s good. Gnocchi must’ve been okay since they floated.

    1. 4 stars
I think the cream is just fine! It makes it so rich and flavorful. You might be missing out if you cut back on it.

    2. User avatar sanda.hill says:

      5 stars
Nah, I like it creamy! It’s a comfort food, after all. The pancetta pairs perfectly with all that cream.

  19. User avatar frankie.turner says:

    2 stars
Not gonna lie, my sauce split a little. I think my heat was too high when I added the cream/parmesan. The flavor was still there though.

  20. User avatar carrol.ledner2010 says:

    4 stars
Wait… do you cook the garlic in the cream after sautéing? Cuz I added it straight with the cream and it was fine. Maybe I’m just lucky.

  21. 1 star
Really? You think this is a good idea? Too much cream, can’t be healthy!

  22. User avatar millard.rutherford92 says:

    2 stars
Why is there even pancetta in this? Isn’t gnocchi supposed to be vegetarian? Don’t get it…

  23. User avatar otto.schulist98 says:

    3 stars
I think the recipe could use more seasoning. Was kinda bland. Salt isn’t enough!

    1. 5 stars
I totally agree! I added some Italian herbs and it made a huge difference. Don’t skimp on the flavor!

  24. User avatar steve_maga says:

    4 stars
Not bad but didn’t really taste much pancetta. More meat please!

  25. User avatar Mr. Evan Dach says:

I don’t like using store-bought gnocchi, tastes like cardboard. I prefer homemade! This might work better with that.

  26. User avatar kristle.schamberger77 says:

Do people really like gnocchi? I find em kinda mushy 😕

  27. User avatar brady.marquardt43 says:

Yum, this tastes just like my grandma’s cooking! Nostalgic vibes! 🌟

  29. User avatar Daphnes Nohansen Hyrule says:

    3 stars
I’m not usually a parmesan-only person—could use more cheese variety. Also, 1 cup cream feels low for 200g gnocchi, but it depends how saucy you like it.

    1. 4 stars
1 cup cream for 200g gnocchi is kinda risky if you like it saucy… I’d probably add an extra splash or a spoon of pasta water when simmering.

    2. User avatar francisco.brakus says:

      5 stars
Totally agree on the cheese variety. Parmesan-only can get a little one-note—maybe mix in some pecorino or even a touch of mozzarella for stretch?

  30. User avatar lino.lesch1974 says:

    4 stars
My kids loved it! I added some spinach for color, and it was a hit at dinner. Thx!

  31. User avatar saundra.tillman1957 says:

This is a lifesaver! Just whip it up when you’re tired and want something tasty. Thank you!

  32. User avatar smartestRedditor says:

This sounds yum! I’ll definitely be making it this weekend. Who needs fancy meals when you got this!

    1. User avatar misty.ondricka says:

      3 stars
Really? Gnocchi takes time! Fancy meals are worth it for special occasions. Just sayin’.

    2. User avatar abdul.friesen says:

Totally agree! Simple meals are the best! Can’t wait to hear how yours turns out. 😋

  33. User avatar nathaniel.harris1988 says:

Made this tonight—so rich and comforting. The pancetta crisped up perfectly and the garlic smell was unreal. I added a tiny pinch of chili flakes and it was even better!

  34. User avatar lynelle.rau54 says:

    3 stars
It was ok, but I feel like it needed more flavor. Maybe add some spinach next time?

  35. User avatar milly.streich49 says:

    3 stars
The instructions are straightforward, but I wish it said what heat level to keep the cream at. Mine nearly boiled and got weirdly grainy for a minute.

    1. User avatar inell.mann63 says:

      5 stars
Yeah that’s exactly the issue with cream—if it really hits a boil it can split and get grainy. I usually keep it on low and aim for a gentle simmer, like tiny bubbles around the edges, then turn the heat down before adding the Parmesan.

  36. User avatar lyn.jerde36 says:

    5 stars
I followed it exactly and it was amazing. I’m shocked how fast it was. 10/10 for weeknights.

  37. User avatar fe.bogan91 says:

    3 stars
Doesn’t sound difficult, but I burnt the garlic! Make sure you watch it closely.

    1. User avatar demetrius.feeney1968 says:

      3 stars
Garlic burnt? That’s a bummer! I usually just skip the garlic then, no harm done haha!

    2. User avatar King Cold says:

      4 stars
Burnt garlic can ruin a dish, but don’t give up! Maybe next time try a lower heat? Garlic cooks fast!

  38. User avatar tatyana.stoltenberg1965 says:

    2 stars
Pancetta? What’s that? Is it just bacon? Guess I’ll try this with bacon instead. 🤷‍♂️

    1. User avatar lauren.howell says:

      5 stars
Pancetta is like a fancy bacon! It’s super delicious and adds a nice flavor. But hey, using bacon will still make it tasty! 😊

  39. User avatar roxie.larkin says:

    4 stars
Super easy and quick! Perfect for a weeknight meal. 👌

  40. User avatar gerardo.gutkowski89 says:

    4 stars
Not gonna lie, I’m skeptical about store-bought gnocchi staying “nice” in cream. But it worked. Good flavor balance.

  41. 5 stars
Made this for dinner last night—so creamy and comforting. The pancetta crisped up perfectly and the garlic aroma is spot on. I added a tiny pinch of nutmeg too and it took it to another level.

    1. User avatar luciano.boyle32 says:

      5 stars
Yes! Pancetta + garlic + cream is unbeatable. I’m glad yours crisped up—mine always gets a little too chewy if I don’t keep an eye on it.

    2. 4 stars
Nutmeg? Interesting… I mean, I’ve heard of it in creamy sauces, so I guess it makes sense. Did it taste more “warm” or more like you couldn’t tell anything was different?

  42. User avatar sid.wisoky96 says:

    5 stars
This was so good! My family loved it, even my picky brother. Will definitely make again!

    1. User avatar rodney.hickle58 says:

      5 stars
I’m so glad to hear that! Gnocchi is usually a hit. Your picky brother must have good taste!

  43. User avatar sean.price40 says:

    3 stars
It was ok, but way too creamy for my taste. Maybe I’ll try it with less cream next time.

    1. User avatar odell.lesch58 says:

      4 stars
I totally get it! Cream can be a bit overwhelming sometimes. Maybe try using half and half?

  44. User avatar wellRespected says:

    3 stars
Not sure about ‘to taste’ salt—like how much is to taste 😅. I eyeballed it and it turned out fine though.

  45. User avatar noble.morissette48 says:

    4 stars
Not sure about the amount of garlic—two cloves felt like a lot for my family. Still tasted great though, just less “creamy” and more “garlicky.” Would reduce to one clove next round.

    1. 5 stars
Totally hear you—garlic can be strong depending on how big the cloves are. 1 clove next time sounds like a perfect tweak if you want it less “sharp.” Glad it still tasted great though!

    2. 4 stars
Two cloves is kinda bold 😅 but yeah, if your family prefers milder flavors, one clove makes sense. Creaminess will still come through with the cream + Parmesan.

  46. User avatar rich.landlord says:

    4 stars
Pancetta is my weakness, so I’m biased. 😅 But the steps are super straightforward. Honestly I’d eat this with salad and pretend it’s healthy.

    1. User avatar eboni.king54 says:

      5 stars
Haha I get the pancetta weakness 😄 This sounds fast and comforting—gnocchi + cream + garlic is basically a cheat code. I’ll definitely try it with extra parsley.

  47. User avatar ezekiel.haag77 says:

    5 stars
    Yum!

  48. User avatar Mr. Write says:

    3 stars
I dunno, it was a bit too rich for my taste. Maybe less cream next time?

  49. 3 stars
My parmesan clumped a little when I added it—maybe my cream wasn’t hot enough? Still tasty though.

    1. User avatar reid.wiza1962 says:

      5 stars
That could definitely be it—Parmesan clumps when it hits too-cold dairy. I usually whisk it in off-heat or keep the cream at a steady simmer (not rolling). Still, yay that it tasted good!

    2. 3 stars
Wait, parmesan clumped bc the cream wasnt hot enough? I always add cheese straight in when it’s boiling lol. Maybe your cheese was too thick or grated too big? But yeah clumps happen—still sounds good.

  50. User avatar Anthony Labadie says:

    4 stars
I used milk instead of heavy cream and it still worked, just thicker after I let it simmer a bit. Easy weeknight win.

    1. 3 stars
Huh, I’m surprised it still stayed creamy with milk. I feel like milk can split if you simmer too hard—did you keep the heat low?

    2. User avatar dwayne.kihn says:

      5 stars
Nice! I’ve done something similar with half-and-half—letting it simmer a bit definitely helps it thicken. Glad it worked out for you 😊

  51. User avatar anika.king36 says:

    3 stars
The pancetta step is key. I almost skipped it and just browned it for “like a minute,” and yeah… not crispy. Still good, but not the same.

    1. User avatar ervin.treutel says:

      5 stars
Totally agree—pancetta needs that proper crispy time. If it’s only “a minute,” you basically get chewy bacon vibes instead of crispy bits. Makes a big difference for the texture.

    2. User avatar ALTplusF4 says:

      4 stars
Hmm I think mine gets kinda crispy even if I rush it, but maybe I just cook on higher heat? Either way, creamy gnocchi is still amazing. I’d rather overcook a little than undercrisp.

  52. 4 stars
I used milk instead of heavy cream and it was still good, just a little less velvety. Next time I’ll splurge on the cream.

  53. 2 stars
I messed up on the sauce, it was too thick. Should’ve addedd more milk…oops!

  54. User avatar miquel.schmidt2007 says:

    3 stars
I think you could add some chili flakes or nutmeg—just to make it pop. Right now it’s kinda… basic creamy sauce vibes.

    1. User avatar Irish Rath DVM says:

      5 stars
Totally agree—chili flakes would add a nice kick and keep it from tasting flat. Nutmeg also sounds great in a creamy sauce.

  55. User avatar adriene.morar31 says:

    3 stars
Eh, it was okay. Didn’t blow my mind or anything.

    1. 4 stars
I found it really delicious! The pancetta adds a nice crunch.

  56. User avatar josef.kertzmann says:

    4 stars
Store-bought gnocchi cooks fast, so don’t overdo step 1. Mine got a little mushy the first time I tried something similar.

    1. User avatar landon.ledner says:

      5 stars
Totally agree—gnocchi goes from “perfect” to mushy faster than people expect. I also tend to pull them as soon as they float, then do the quick toss in the sauce. Pancetta + cream sounds so good.

  57. 2 stars
“Heavy cream or milk” ??? Milk makes it sad. Also 200g gnocchi sounds too little for me, like one bowl and done. Gonna double it lol.

    1. User avatar nathaniel.weber40 says:

      5 stars
lol love the double it energy. I agree 200g is gone way too fast—especially with pancetta in the mix.

    2. User avatar ArabianNights says:

      4 stars
“Milk makes it sad” is a mood 😂 I usually go heavy cream for the right texture, but if you do milk make sure it’s not low-fat or it’ll feel watery.

  58. User avatar lilly.reinger7 says:

    5 stars
This is dangerously good. I ate way more than I planned. Would absolutely make again for guests.

  59. 4 stars
Made this for my friends and they were impressed! Easy to follow instructions. 🥳

  60. User avatar rocky.hoppe64 says:

    5 stars
Made this tonight—so rich and comforting. The pancetta gets perfectly crispy and the cream/garlic sauce clings to the gnocchi. Parmesan amount feels just right.

  61. User avatar cortez.little says:

    4 stars
I followed the steps pretty much exactly, but mine turned out a little too thick once the cheese melted. Next time I’ll use a splash more cream/milk and it’ll probably be perfect. Still super tasty!

  62. User avatar liberal.hero says:

    1 star
This is way too fancy for me. Also, where’s the noodle water trick? lol

  63. 4 stars
I used milk instead of heavy cream and it was still tasty, a little less thick but good. Next time I’ll probably simmer it a bit longer to reduce.

  64. User avatar Falmer Shaman says:

    5 stars
This looks dangerously good. Pancetta + cream is such a cozy combo, and the garlic step timing matters. I’d use homemade gnocchi if I’m feeling ambitious—otherwise store-bought is fine.

  65. User avatar johnson.tromp says:

    3 stars
The recipe says to use heavy cream but I used half-and-half, it worked fine – just saying!

    1. User avatar joie.monahan2003 says:

      4 stars
Half-and-half? That’s interesting! I thought it wouldn’t be creamy enough. Glad it worked out for you!

    2. User avatar tameika.schmitt1993 says:

      2 stars
I don’t know about that. It’s called heavy cream for a reason! Might taste different.

  66. User avatar shayne.hayes says:

    5 stars
Pancetta + gnocchi is such a winning combo. I added a pinch of red pepper flakes and wow.

  67. User avatar earlene.maggio says:

    4 stars
This is delicious but a little heavy. I used store-bought gnocchi and it still clung nicely to the sauce. Could use lemon or something to brighten it.

    1. User avatar donita.muller says:

      5 stars
Totally agree—this is super rich. I started adding a squeeze of lemon right before serving and it really wakes it up without changing the creamy vibe.

  68. User avatar Eddie the Computer says:

    4 stars
Honestly, pretty solid. I used store-bought gnocchi and it worked great. Next time I’ll use a bit more parmesan because I like a sharper flavor.

  69. User avatar rey.abbott1966 says:

    4 stars
I’m from the camp that says you gotta fry the gnocchi after boiling, but this sauce coating was actually enough for me.

  70. User avatar terminatorXYZ says:

    2 stars
Garlic + cream + cheese is always a safe bet, but I don’t think 2 cloves is enough for my taste. I’d go 4 cloves or add garlic powder too.

  71. User avatar MAGA2024.Trumpster says:

    5 stars
Pancetta? Is that like bacon? I am not fancy enough to get that! Just used bacon and was delicious!

  72. User avatar ned.wolff36 says:

    3 stars
Pancetta was a win, but the parmesan made it salty for me. I might reduce salt next time and wait to season until after the cheese melts.

  73. User avatar nestor.heaney says:

    3 stars
Pretty good, but mine got a little too thick when it cooled. Next time I’ll loosen with a splash of milk.

    1. User avatar Loonquawl and Phouchg says:

      5 stars
Nice! I’ve noticed heavy cream can thicken as it cools too. A quick splash of milk/cream and a gentle reheat usually fixes it.

    2. 4 stars
Mine did the same thing 😅 I think I cooked the sauce a bit too long. Loosening at the end makes sense—good call.

  74. 5 stars
Honestly I expected more effort for “restaurant vibes,” but it was super easy. The gnocchi stayed tender and not gummy. Great pairing with a simple salad.

  75. User avatar fernando.muller25 says:

    5 stars
Made this tonight—so rich and comforting. The pancetta crisped up perfectly and the garlic cream sauce clings to the gnocchi nicely. 10/10 would make again.

    1. User avatar scott.graham83 says:

      5 stars
Yes!! I love when the sauce actually clings to the gnocchi—so satisfying. Did you use store-bought or homemade?

    2. User avatar Dr. Yon Dare says:

      3 stars
Looks good but I feel like my pancetta never crisps the way recipes say. Maybe my pan was too full? Still tasted decent though. 😅

  76. User avatar amado.frami54 says:

    5 stars
Made this tonight—so creamy and the pancetta hits perfectly. I used milk + extra Parmesan and it still worked great. Definitely adding to our rotation!

    1. User avatar will.haley says:

      5 stars
Yes!! The pancetta + creamy sauce combo is everything. Love that you bumped the Parmesan too—makes sense it would still turn out great.

  77. 5 stars
Love how fast this is. Like 20 minutes and dinner’s ready. I used milk instead of heavy cream and it still worked, just not as luxurious.

    1. User avatar drew.koss says:

      5 stars
Yes! That’s exactly why I love this—so quick but still feels fancy. 😄 Milk works too, totally makes sense if it’s just less rich than heavy cream.

  78. 4 stars
Pancetta is kind of salty, so I barely added any extra salt. Smart call with tasting first—otherwise it could be overdone.

  79. User avatar Restless Draugr says:

    5 stars
Made it tonight and it was rich but in a good way. I added a little extra pepper because I like heat. Next time I might splash in some pasta water to make the sauce silkier.

  80. User avatar carmelia.vonrueden82 says:

    4 stars
The instructions are clear, but mine got a little too thick when it simmered. Maybe my cream was low-fat? Still tasty though, just had to loosen it with a splash of milk.

Pretty solid comfort food. My sauce got a little thick fast, so next time I’ll add a splash more cream. Garlic smell was amazing though.

Super tasty, but I had to add a splash more cream because it got a bit thick while I was stirring. Parmesan amount feels right though—great flavor.

LOL I added extra pancetta but forgot to drain the gnocchi and it got watery. Still tasted amazing. Will follow better next time!

  84. 2 stars
I’m not sure about using store-bought gnocchi. Mine kinda fell apart, and the sauce didn’t hold—still edible though.

I don’t know about using cream, seems too rich for a weekday dinner. Not sure if I will try it.

    1. 5 stars
Nah, cream’s not too bad, man. It makes it taste real good! Weekday dinner could use a lil’ luxury sometimes! Just try it!

I get that! Cream can be heavy, but you could always use half and half or yogurt instead! It’s still creamy but lighter. Give it a shot!

I tried this, but my sauce kinda broke? Like it wasn’t smooth and the cheese didn’t fully melt. Maybe my cream was too hot or I stirred too late. Tasted okay anyway.

The garlic + cream combo is so comforting. I added a pinch of nutmeg like my grandma used to, and it tasted extra fancy.

  88. 4 stars
Simple, fast, and pretty forgiving. Mine stuck slightly to the pan, but the sauce loosened it right up.

The garlic step is where I messed up—mine browned a bit and got bitter. Still edible, but I’d watch the timing better.

  90. 2 stars
Why so much garlic? I minced a lot and it dominated for me—next time I’ll cut it down. Maybe my garlic was strong.

Feels a bit heavy on the cream for me. Like, I get it’s called creamy, but next time I’ll use half-and-half or cut the parmesan a touch.

    1. 5 stars
Totally agree—this sounds super rich. Half-and-half might still give that creamy texture without feeling like a cream bomb.

I used a mix once (cream + a little milk) and it was better for me too. Also don’t skimp on the simmer—parmesan can clump if it’s not warmed right.

Honestly? It’s just gnocchi with cream and pancetta. Not bad, but I expected more “wow.” The flavor is solid though, especially with fresh parsley on top.

I don’t know about “to taste” salt—how much is that, like a pinch? I followed it loosely and it was bland until I added more pepper and parm.

The garlic amount feels small? Like, 2 cloves seems kinda gentle. Not mad—just wondering if more garlic would punch it up.

I’m skeptical about mixing cheese with cream without curdling, but Parmesan actually held up well on low simmer. Pretty foolproof.

That’s exactly the kind of reassurance I needed—low simmer + Parmesan makes sense. I always worry about sauce splitting too. Gonna try it your way!

Hmm I tried something similar and it turned kinda grainy. Maybe my heat was too high. Also, I used only cream, no milk—could that be why? Still, sounds tasty.

Garlic burned on me because I got distracted. The sauce went from creamy to kinda bitter. I salvaged it by starting over with new garlic—so yeah, watch that simmer!

Ugh, garlic burn is the worst 😩 Good save though—starting over with fresh garlic usually fixes that bitterness fast.

This turned out super rich and cozy. The pancetta really makes the cream sauce taste “restaurant-y.”

The pancetta part is key—don’t rush it. Mine got slightly soft the first time (was on too high heat), but the second attempt was crispy and the whole dish tasted richer.

Totally agree—pancetta needs that slow crisp. I once blasted it on high heat too and it turned kind of greasy/soft, not crispy. Love that the second try worked out for you—extra richness is real with the cream + Parm combo.

This turned out super creamy and the pancetta flavor really comes through. I used half-and-half and it still worked great—will make again.

Sounds good but 200 grams felt small for two people 😅. Also, I forgot to mince the garlic fine and it was kinda chunky—tasted a little harsh at first, but it mellowed after.
