Ingredients

      Sounds like you might have used rice that was still a bit too “fresh” or it’s getting steamed in the pan. If you can, use day-old rice (even cold from the fridge), and spread it out so it contacts the hot surface. Also make sure your pan is really hot before adding the rice—medium heat can keep it soft. Quick hot stir-fry for the full 5–7 minutes and avoid stirring constantly.
