Ingredients

2 cups cooked chicken, shredded
1 cup frozen mixed vegetables
1/2 cup diced potatoes
1/2 cup diced carrots
1/2 cup diced onion
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup milk
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package refrigerated pie crusts

Instructions

1.Preheat the oven to 425°F (220°C).
2.In a large pot, melt butter over medium heat. Add onions, carrots, potatoes, and mixed vegetables. Cook until the vegetables are tender, about 5 minutes.
3.Stir in flour and cook for 1 minute. Gradually add chicken broth and milk, stirring constantly, until the mixture thickens.
4.Add shredded chicken, thyme, salt, and pepper. Cook for an additional 2 minutes.
5.Pour the chicken mixture into a 9-inch pie dish. Place the pie crust on top and seal the edges. Cut a few slits in the crust to allow steam to escape.
6.Bake for 25-30 minutes, or until the crust is golden brown.
7.Remove from the oven and let it cool for a few minutes before serving.
