Ingredients
  

  • 1 pound calamari cleaned and sliced into rings
  • 2 Bell peppers sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Lemon sliced

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add the sliced bell peppers and onion to the skillet and cook for 5 minutes, until softened.
  • Add the minced garlic, dried oregano, salt, and black pepper to the skillet and cook for an additional minute.
  • Push the vegetables to one side of the skillet and add the calamari rings to the other side.
  • Cook the calamari for 2-3 minutes on each side, until opaque and cooked through.
  • Squeeze the juice from the lemon slices over the calamari and vegetables.
  • Serve the calamari and bell pepper medley hot as an appetizer or over rice or pasta as a main dish.

    The timing helped a lot—2-3 minutes per side for calamari kept it tender (not rubbery). Bell peppers were perfectly soft but still a little snap.

    Pretty good, but I think 1/2 tsp salt might be a bit low depending on your calamari/brand. I added a pinch more and it came together better.

    This was okay, but my calamari started to curl and get tough after like 4 minutes. I probably overcooked it—your instructions are right on the money though.

      That totally makes sense—calamari can go tough fast. I’ve found it’s closer to 2 minutes per side, not much more. Glad the veg seasoning worked for you though!

      Huh, mine didn’t curl that quick but I think I kept it on higher heat?? Also “2-3 minutes each side” seems like a lot—maybe depends on the thickness of the rings. Either way, good save with the lemon at the end.
