Black Lentil and Vegetable Stew

June 26, 2024

Black lentil and vegetable stew is a nourishing, earthy dish that brings together the deep flavor of lentils with a colorful mix of vegetables. It’s filling without being heavy, rich in texture without relying on cream, and full of natural goodness. Whether you’re looking for a cozy plant-based dinner or a meal prep staple that gets better with time, this stew checks all the boxes.

Black lentils, also known as beluga lentils, are small, shiny, and hold their shape beautifully during cooking. They have a slightly nutty flavor and a firm texture that makes them ideal for stews. Unlike red lentils, which tend to break down into a softer consistency, black lentils remain intact and provide a satisfying bite in every spoonful.

This stew typically starts with a base of onions, garlic, and carrots sautéed in olive oil. Add in celery, sweet potatoes, zucchini, or any vegetables you have on hand, and let them simmer gently with the lentils. A good vegetable broth brings everything together, while herbs like thyme, rosemary, or bay leaf add depth and fragrance. A touch of tomato paste or crushed tomatoes adds richness and rounds out the flavor.

What makes this dish especially appealing is its balance. The lentils offer protein and fiber, while the vegetables bring essential vitamins, minerals, and color. It’s a one-pot meal that feels both wholesome and satisfying, perfect for chilly evenings or packed lunches. You can serve it with crusty bread, over rice, or with a spoonful of yogurt or pesto for added flavor.

This stew is also flexible. You can spice it up with cumin, coriander, or smoked paprika, or keep it simple and herbaceous. It stores well in the fridge and even tastes better the next day as the flavors deepen and blend together.

Black lentil and vegetable stew is more than just a healthy choice. It’s a cozy, deeply flavorful meal that proves how satisfying plant-based cooking can be.

I don’t usually cook with lentils, but the steps are easy. I followed them exactly and my family ate it without complaining (rare!).

I tried it and honestly it tasted like dirt and sadness. Like, not enough going on. Might be my fault for using low-quality broth, but I wouldn’t make it again without major tweaks.

I don’t like lentils at all. Made this for my friends and they loved it though 😅

  4. User avatar kareem.lesch28 says:

Too many veggies? Nah, you can never have enough. More veggies, more yum!

  5. User avatar Captain Ginyu says:

    3 stars
Hmm, I don’t know. I thought it was kind of bland? Maybe I missed something. I didn’t put enough salt or spices. I guess a 3.

    1. User avatar vanessa.prosacco53 says:

      4 stars
I think you could add a bit more spice next time! Maybe some chili flakes? I loved how it turned out! 😊

  6. User avatar alphonso.mohr says:

Not sure about the turmeric amount—tbh it tasted a little too earthy to me. Next time I’ll use slightly less. Otherwise the texture was nice and the veggies stayed tender.

I was skeptical about lentils but this recipe changed my mind! The flavors are poppin’!

    1. 2 stars
I dunno… lentils are kinda bland. Maybe it’s just this recipe?đŸ€·â€â™‚ïž

PERFECT! I’ve made it twice already. So filling and healthy, love the colors!

Yummy, but you could make this with any veggies, right? Just use what you got! đŸČ

    1. User avatar Miss Kiyoko Hartmann says:

Totally! This stew is so versatile. I often throw in whatever veggies I have on hand. đŸ„•đŸ„Š

  10. User avatar lisa.christiansen81 says:

It’s a nice healthy recipe but I wanna say… I think it needed bacon.

  11. User avatar merissa.christiansen2001 says:

    3 stars
Cumin in the ingredients?! That aint right! Cumin is like too strong. I used less and it still was overpowering for me.

  12. 2 stars
I mean, it’s just stew. Can’t say I’m impressed. Tasted like any other soup.

    1. User avatar randy.lockman says:

      3 stars
Stew is stew, man. Soup is soup. You’re not wrong, but this one has nice lentils at least.

    2. 4 stars
I think it’s more than just stew. The spices add a lot of flavor! Maybe you just didn’t cook it right?

  13. User avatar jacquelyne.buckridge7 says:

Easy recipe but I dropped an onion on the floor. Still super yummy! 😂

Boring. Lentil stew is lentil stew.

  15. User avatar rosena.bergstrom says:

Not bad, not bad. My kids didn’t really like it, but my husband and I enjoyed it. Might try again with different veggies. 4 stars.

This isn’t stew, it’s soup. Just saying. Still good tho.

  17. User avatar Grunthos the Flatulent says:

    5 stars
This stew is super hearty and flavorful. The cumin + paprika combo really makes it taste warm and “cozy.” I simmered a bit longer since my lentils were stubborn, and it turned out great.

  18. 2 stars
Kinda boring, honestly. I expected more from a stew. Needs more pizzazz!

  19. User avatar arnulfo.beier64 says:

    2 stars
I dunno, the texture of lentils is kinda weird, but my friend said she liked it. I might try again.

  20. 5 stars
This stew is amazing! So flavorful and filling. I added some extra veggies and it turned out great! Will make again for sure!

  21. User avatar Frost Giant says:

    3 stars
The steps are clear, but 30 minutes feels short for black lentils depending on the brand. Mine stayed a little firm until I extended cooking time.

  22. User avatar judie.schiller43 says:

The ingredient list says “2 cups chopped vegetables bell peppers, and spinach” but the parentheses are messed up. I threw in zucchini and green beans and it still tasted fine—just confusing.

    1. User avatar Gail Andrews says:

      5 stars
Yeah the parentheses in that ingredient line are totally mangled 😅 I appreciate you testing it anyway—good to know zucchini/green beans still work.

  23. User avatar vivien.treutel says:

    5 stars
Yummy! My kids loved it even tho they usually hate veggies. Surprising!

  24. 4 stars
Pretty solid base recipe. I followed it mostly, but I think it needed a bit more salt at the end and maybe an extra splash of broth since my lentils soaked up everything. Still tastes good though.

    1. User avatar Paul "Muad'Dib" "Usul" Atreides says:

      5 stars
Thanks! And yeah, that totally tracks—lentils can be real “broth hogs.” I’ll try bumping the salt right at the end and adding a splash more broth if it looks too thick. Glad it still tasted good though!

  25. User avatar jay.hudson70 says:

    2 stars
Honestly, I found it too bland. Maybe I’m just used to more spices? Not sure if I’ll try this again.

  26. 1 star
This recipe is too complex. I just want something quick and easy to make for dinner.

  27. 2 stars
This recipe is great, although I don’t trust black lentils, they should be green!!

  28. User avatar ernesto.marquardt15 says:

    2 stars
It was okay, but I don’t think I’m a stew person. I’ll stick to my pasta.

  29. 3 stars
Not bad, but it came out a bit watery for me. I think my diced tomatoes were more liquid. Maybe I should cook uncovered longer. Flavor is there, texture needs tweaking.

    1. User avatar dewey.mills70 says:

      4 stars
Yeah, watery stews usually mean the tomatoes or extra liquid wasn’t reduced enough. I’d try simmering uncovered for the last 10 minutes (or add the tomatoes a little later) and see if it thickens up.

  30. User avatar fidel.gutmann24 says:

    1 star
Can’t stand lentils. This was a no-go for me. Thumbs down. 👎

  31. User avatar liberal.hero says:

    5 stars
Yum! Simple ingredients and easy to make. Perfect for chilly days! Will make again.

    1. User avatar Chantel Lehner V says:

      5 stars
I totally agree! This stew sounds comforting and hearty. Perfect way to warm up!

    2. User avatar young.skiles1985 says:

      3 stars
Looks good, but I ain’t never cooked lentils before. Is it really that easy? đŸ€”

  32. 1 star
What even are black lentils? This recipe confused me a bit. Not for me.

    1. User avatar rich.landlord says:

      3 stars
I was confused too, but they’re like small black beans. The stew looks good tho. Might try it without the lentils.

    2. User avatar ozzie.erdman86 says:

      4 stars
Black lentils are actually really good! They have a nice texture and are super healthy. Give them a try!

  33. 5 stars
This stew is so hearty! I added some extra spices and it was amazing. Will definitely make again!

  34. User avatar cleopatra.luettgen says:

    2 stars
I feel like black lentils cook slower than the recipe says—mine stayed firm in the middle. Maybe my pot runs cool? Either way, I’d adjust cooking time.

  35. 3 stars
Who puts no meat in a stew? I added sausage and it was way better.

    1. 4 stars
I think the lentils and veggies are great on their own! Meat is not always necessary, but glad you liked your version!

  36. 4 stars
Great recipe! So easy to make and full of flavor. My kids loved it too, which is hard to come by!

  37. User avatar Super Saiyan Goku says:

    4 stars
I was a bit skeptical about lentils, but this turned out great! Very filling!

  38. 3 stars
Only 1 cup of lentils?? What’s up with that? I would use more next time.

    1. 4 stars
I think 1 cup is enough! The lentils expand during cooking. More might make it too thick.

  39. 5 stars
Made this last night—so hearty and flavorful. The cumin/paprika combo is perfect, and the lentils held up nicely. I added a squeeze of lemon at the end and it really popped. Will make again.

  40. User avatar corie.wolf91 says:

    5 stars
This came out super cozy and hearty. The cumin + paprika combo is perfect, and the lentils held their shape nicely. I added a squeeze of lemon at the end and it really brightened everything.

    1. User avatar Oolon Colluphid says:

      3 stars
I dunno, mine came out a little bland? I followed it but maybe my cumin was old. Also I forgot cilantro and it still tasted fine. Next time I’ll add more salt/pepper and maybe a bay leaf.

    2. User avatar jeffry.ferry48 says:

      5 stars
Yes!! That cumin + paprika combo is exactly what makes it taste like “real stew” instead of just lentils in broth. I also love adding lemon at the end—freshens it up a lot.

  41. User avatar jacklyn.vandervort16 says:

    2 stars
I don’t like lentils, but my partner loved this! Too many veggies for my taste.

    1. User avatar charise.hill42 says:

      5 stars
Veggies are the best part! More colors mean more nutrients. But I guess it’s all about personal taste.

    2. User avatar quincy.mraz54 says:

      4 stars
I get why you might not like lentils, but have you tried seasoning them differently? They can be really good with more spices!

  42. User avatar tissues_with_issues says:

    2 stars
Couldn’t taste the turmeric at all, and I might’ve put too much cumin—now it tastes like tacos 😂 Still edible, just not my style. Maybe next time I’ll cut the spices a little.

    1. User avatar graham.kohler80 says:

      4 stars
I’m surprised you couldn’t taste the turmeric at all. With 1/2 tsp in a whole pot, it should show up. Maybe your turmeric is old? Also you might be using a cumin thats extra strong—tacos happens.

    2. User avatar regan.little says:

      5 stars
Lol tacos is honestly a vibe 😄 Cutting cumin next time sounds smart. Turmeric can be subtle depending on how long it simmers—did you let it cook the full minute or was it rushed?

  43. User avatar dirk.zulauf76 says:

    4 stars
Yummy stew! But I used chickpeas instead of lentils by accident! Still tasted good tho.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
Chickpeas are a great substitute! Glad it still turned out yum! 😊

  44. User avatar lorenzo.skiles70 says:

    2 stars
What can I substitute for cilantro? I just hate it, taste like soap to me! đŸ˜·

  45. 2 stars
I don’t know what I did wrong but mine turned out kinda bland. Maybe I need to add more salt or something?

    1. 4 stars
You might wanna try adding some herbs or spices too! A pinch of chili flakes can give it a nice kick. 😊

  46. 4 stars
I added some extra spices and chicken. Not vegan, but it was delicious!

  47. User avatar errol.bednar2006 says:

    2 stars
I didn’t rinse my lentils (my bad). It was kinda starchy and the pot needed more time. If you do this, definitely rinse them like the recipe says.

  48. User avatar margery.breitenberg0 says:

    5 stars
Made this last week—really cozy and hearty. The spices smell amazing while it simmers. I used a mix of zucchini + bell pepper and it turned out great. 10/10 for meal prep!

  49. 5 stars
This stew is AMAZING! Packed with flavor and so healthy. Will definitely make again!

    1. 5 stars
I agree! This stew is full of flavor. I added some extra veggies and loved it even more. 😋

    2. 2 stars
Sounds good, but isn’t lentils kinda bland? Not sure if it’s worth making.

  50. User avatar Ann Chovie says:

    4 stars
Not gonna lie, mine was a little bland until I salted more than the recipe says. After that it was really good. Also I added extra garlic because I always do.

    1. 2 stars
Hmm I followed it exactly and it was still meh for me. Maybe my cumin/paprika were old? Also 30 mins for lentils felt short
I might simmer longer next time.

    2. User avatar elton.kozey2014 says:

      5 stars
Totally agree—this kind of stew really needs that extra salt. I did the same and it brought everything together. Extra garlic is the move too 😄

  51. User avatar daryl.heidenreich3 says:

    3 stars
Not bad, but I needed more seasoning. I guess I’m just used to more flavor. Needs more kick!

    1. User avatar Walton Paucek says:

      2 stars
More kick? But it’s stew! Are you sure you did it right? Stews are meant to be comforting, not spicy.

    2. User avatar terminatorXYZ says:

      4 stars
I totally agree! I added some chili flakes and it gave it that extra oomph! Sometimes you just need to spice it up.

  52. 3 stars
Is it normal for lentils to take forever to cook? Mine took over an hour!

    1. User avatar Rob McKenna says:

      4 stars
Yeah, lentils can take longer sometimes! I guess it depends on their age or how they were stored. Mine took about 45 minutes last time.

    2. User avatar simone.grimes says:

      3 stars
Did you soak them? I always soak my lentils before cooking. Might make em quicker? đŸ€”

  53. User avatar kendrick.willms67 says:

    3 stars
Eh, it was okay. I was hoping for more kick. Adding hot sauce next time!

  54. 1 star
This recipe is just plain wrong. Black lentils take longer than 30 min to cook! I ended up with crunchy lentils. 1 star!

  55. User avatar sherwood.hintz48 says:

    2 stars
You forgot to mention the garlic in the ingredients list! Pretty important if ya ask me!

  56. 4 stars
I couldn’t find black lentils, so I used green ones. It still tasted pretty good, though! 😋

    1. User avatar jimmy.hagenes says:

      5 stars
Green lentils are good too! Glad it turned out tasty! 😊

  57. User avatar sherril.johnson1977 says:

    5 stars
Great! Just what I needed for a chilly day!!

  58. 5 stars
Loved how healthy it is. I feel like I’m eating something virtuous! 10/10!

  59. User avatar noma.bins2013 says:

    4 stars
Pretty good! I did have to simmer closer to 45 minutes because my lentils weren’t fully tender at 30. Also, I added a bit more broth since it got too thick for my taste.

  60. User avatar reed.hagenes76 says:

    4 stars
I like it, but I had to simmer longer than 30 minutes for my lentils to get fully tender. Next time I’ll check at 25 and adjust. Still delicious though—great weeknight meal.

  61. User avatar Annalee Jacobson says:

    4 stars
I liked it but 30 minutes simmer felt a bit short for my lentils (maybe older ones?). I ended up going closer to 45 minutes until tender. Still worth it.

  62. 3 stars
It was okay, but it felt a little bland. I added some hot sauce to spice it up. Maybe more spices next time?

  63. User avatar letisha.keebler57 says:

My husband said it was ‘just ok,’ but I thought it was delicious. Everyone’s taste is different, I guess!

What can I say? Lentil stew… I don’t know why people like it. Just doesn’t click for me. 1 star.

    1. User avatar lavona.hahn33 says:

      4 stars
I think it just takes some getting used to! Lentils are super healthy, but everyone’s taste is different. Maybe try adding more spices next time?

    2. 5 stars
1 star?? C’mon, lentil stew is awesome. It’s like a warm hug in a bowl! Have you even tried making it yourself? Maybe you just had a bad version?

  65. User avatar maynard.lind36 says:

This is good comfort food for cold days đŸŒ§ïž. Very satisfying.

  66. User avatar Feyd-Rautha Rabban says:

    2 stars
I love lentils but this felt too plain. Maybe it needs more spices or something like bay leaf. Also the ingredient line has that weird “bell peppers, and spinach)” typo which threw me off a bit.

    1. User avatar stormy.schroeder18 says:

      3 stars
I noticed that ingredient line typo too 😅 “bell peppers, and spinach)”—what is going on there. Still tasty though, but yeah, spices need a bit more love.

    2. User avatar granville.bins says:

      4 stars
Totally agree—black lentil stew can be amazing, but “plain” is usually a seasoning thing. Bay leaf would definitely help, and I’d add maybe a pinch of chili flakes too.

  67. User avatar vannesa.mertz60 says:

    4 stars
Just made this for dinner! It’s perfect for a chilly night. đŸ„°

  68. 4 stars
Yum! I love lentils, but the cooking times seemed off. My lentils were still crunchy after 30 mins. Next time I’ll cook them longer!

    1. User avatar pandora.bernier says:

      4 stars
I think the cooking time can really depend on the type of lentils you use, some need more time. Maybe try soaking them next time? đŸ€”

  69. User avatar keith.heidenreich says:

    3 stars
Can you use other types of lentils? I only have green and they are good too, right?

  70. User avatar riley.hirthe2017 says:

    4 stars
Followed it pretty much exactly—nice texture, not too thick. I added extra spinach at the end like usual and it worked. Would make again for sure.

    1. User avatar yong.cronin80 says:

      5 stars
Love hearing this! I’ve made it once and I think the “not too thick” outcome is all about simmer time—glad the extra spinach worked for you too.
