Beef and Snow Pea Stir-Fry Salad

1 pound flank steak, thinly sliced
1/4 cup soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon grated fresh ginger
8 ounces snow peas, trimmed
1 red bell pepper, thinly sliced
2 green onions, sliced
1/4 cup rice vinegar
2 tablespoons honey
1 tablespoon sesame oil
Salt and pepper, to taste
1/4 cup chopped fresh cilantro


1.In a bowl, whisk together soy sauce and cornstarch. Add the sliced beef and toss to coat. Set aside.
2.Heat vegetable oil in a large skillet or wok over high heat. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
3.Add the marinated beef and stir-fry for 3-4 minutes until browned.
4.Add the snow peas, bell pepper, and green onions to the skillet and stir-fry for an additional 2-3 minutes until vegetables are crisp-tender.
5.In a small bowl, whisk together rice vinegar, honey, and sesame oil. Season with salt and pepper to taste.
6.Pour the dressing over the stir-fry mixture and toss to coat.
7.Remove from heat and garnish with chopped fresh cilantro.
8.Serve the Beef and Snow Pea Stir-Fry Salad warm or chilled.
