I’ve had that same soggy-mushroom problem. I’d suggest: (1) pat the mushrooms really dry before threading, (2) don’t overcrowd the skewers, and (3) grill hotter/shorter—like medium-high to hot and maybe pull them sooner. Mushrooms release water fast.
Maybe cook the mushrooms first? Like pan-sear them a couple minutes so they aren’t wet. Also 5-7 min per side seems long… I’d do like 3-4 per side for the mushrooms and beef depending on your cubes size. Mine turned gross once cuz I didn’t dry them at all 😅
