Ingredients
  

  • 1 pound gnocchi store-bought or homemade
  • 2 cups vodka sauce jarred or homemade

    meh. i used wrong cheese—like low melt—so it didn’t get bubbly. Also my sauce was kind of watery. Might try again with better parm and thicker sauce.

      Ugh, yeah low-melt cheese would definitely stop the “bubbly” part. I’ve made it with pre-shredded mozz before and it was sad too—using fresh mozz + proper parm helps a lot. Also for the watery sauce: simmer it a few minutes to reduce before baking and it’ll cling better to the gnocchi.

      Maybe your sauce was too wet? Like if the vodka sauce is runny, the cheese kinda sinks in. Also I think broil is only for like… 30 seconds max? 2 minutes might burn the top fast. Next time try higher heat or less sauce on the bottom.

    375°F seems low to me? Like, wouldn’t it just warm the sauce and not really bake? I might be overthinking it, but mine barely browned even after extra time.

      I get what you mean, but 375°F isn’t really “too low” for this. The gnocchi are already cooked, so the bake is mostly to melt/bubble the cheese and lightly heat everything through—not to brown like a roast. If yours didn’t brown, I’d crank it closer to 400–425°F for the last 5 minutes (or broil for 1–2 min) and make sure the dish isn’t too full so the top can dry out a bit.
