Baked Sea Bass with Fennel Gratin

February 26, 2024

If you’re in the mood for a refined dinner that feels restaurant-worthy but is surprisingly easy to prepare, baked sea bass with fennel gratin is the answer. This dish blends the mild, buttery taste of sea bass with the sweet, slightly licorice-like flavor of fennel, creating a unique and memorable combination.

Sea bass is a favorite among seafood lovers for its delicate texture and clean flavor. When baked, it stays moist and flaky, especially when drizzled with a touch of olive oil, lemon juice, and a sprinkle of salt and pepper. A few fresh herbs, like thyme or dill, can elevate the fish even further without overpowering its natural taste.

But the real star of this dish might just be the fennel gratin. Thinly sliced fennel bulbs are layered in a baking dish, then coated with a light cream or béchamel sauce and finished with a dusting of Parmesan cheese. Once baked, the fennel turns meltingly tender with crispy golden edges and a slightly caramelized surface that pairs beautifully with the fish.

When served together, the contrast between the flaky sea bass and the rich, creamy fennel makes every bite feel luxurious yet comforting. A few lemon wedges on the side help cut through the richness and keep the dish tasting light and fresh.

This meal is perfect for a cozy night in or a dinner party where you want to impress without stress. It can be assembled ahead of time, especially the fennel gratin, leaving you free to focus on baking the fish just before serving.

Pair it with a crisp white wine, like a Sauvignon Blanc or Pinot Grigio, and maybe a simple arugula salad on the side, and you’ve got a dinner that’s both elegant and effortless. Whether you’re a seasoned cook or just experimenting with seafood, baked sea bass with fennel gratin is a dish that delivers on flavor, texture, and style.

I don’t know about fennel, it tasted like licorice. Maybe trying it with broccoli next time?

Baked sea bass? More like Baked Sea Bass of Disappointment! I found it bland. Needs more seasoning!

I totally disagree! I thought it was super flavorful! Maybe you just need to experiment more with spices!

Okay, real talk: fennel + fish is underrated. The creamy gratin vibe is legit. I used half-and-half because I’m cheap, and it still worked.

Hehe, I forgot to take off the skin from the fish… it was crunchy for sure. 😂

How can you bake fish for 20 minutes? That’s ludicrous! Mine would be charcoal! 🥴

Way too much cream! My heart can’t take that! I think less cream would be better, right?

Yummy! I did add some garlic and lemon zest tho. Made it extra tasty!

    1. User avatar nikita.harris47 says:

Sounds great! Garlic and lemon zest are always a good idea. Will try it next time!

I don’t know. Garlic seems a bit much for fish. But to each their own, I guess.

  12. 1 star
400°F is too high—fish dries out fast. Also fennel needs longer than 5 minutes, I think.

I think I overcooked the fish. What do I do now? Any tips?

    1. User avatar Michael83 says:

      3 stars
Just eat it anyway. Fish is still good! Maybe next time cook it less, like 15 mins instead of 20.

    2. User avatar rich.landlord says:

Don’t worry too much! You can try adding a little lemon juice or a sauce to make it moist again. It happens to the best of us!

  14. 5 stars
I substituted the cream with almond milk. Still turned out great! Just as creamy!

  15. User avatar liberal.hero says:

This recipe is amazing! The fennel adds a nice touch. Will definitely make again!

This was super salty somehow—maybe because my Parmesan was already salty. Also I had no “golden and bubbly” top until I broiled it for 2 minutes. Still edible though.

Wow, this looks amazing! I love sea bass and the fennel adds such a unique flavor. Can’t wait to try it!

This sounds so fancy but actually pretty straightforward. The fennel + cream + parmesan combo is my weakness—gonna try it next week.

Cream and cheese on fish? Sounds odd, but oddly yummy! Give it a try.

Fennel? Never heard of it before! Is it like cabbage? 🤔

    1. User avatar arnulfo.effertz says:

      4 stars
Fennel is actually different from cabbage! It’s more like an aromatic herb with a sweet, anise flavor. You should give it a try!

  25. User avatar Humma Kavula says:

Delicious! The fennel adds such a nice flavor to the fish. Definitely making this again!

Seems a bit complicated for just fish and veggies. Can’t I just grill the sea bass? Seems easier.

    1. User avatar marcelino.romaguera49 says:

      4 stars
I get where you’re coming from! Grilling fish is definitely easier. But this baked version sounds so creamy and rich! Maybe give it a try just once?

    2. User avatar patrick.bogisich1979 says:

      2 stars
Why bother with all that? Just grill! You don’t need fancy stuff to make it taste good. Sea bass is good enough on its own!

  31. 3 stars
Can I use a different fish? We don’t have sea bass where I live. Help!

  32. 1 star
Eh, my fish was dry! Followed the instructions to a tee. Not trying again.

    1. User avatar augustine.larson says:

      4 stars
I’m sorry to hear that! Maybe try a different cooking time or add a bit more cream next time? Fish can be tricky!

  33. User avatar Dr. Sherlene Vandervort says:

Baked fish is always a win! I added some lemon juice for a tangy kick. Yum!

    1. User avatar micheal.toy says:

Lemon juice sounds like a great idea! I’ll have to try that next time. Thanks for sharing!

I made this once and my fish burnt! I don’t know what I did wrong. Maybe too many cheese??

    1. User avatar Tyron Kling says:

      3 stars
Burnt fish? Ugh, that’s like a nightmare for me! I just skip the cheese sometimes to be safe.

    2. 4 stars
It happens! Maybe try lowering the oven temp a bit next time? Cheese can definitely brown quickly. 😊

I tried this recipe but used chicken instead of fish. It was a disaster! Don’t do it!

  38. User avatar cheryll.schulist says:

This recipe was a disaster for me! My fish was raw in the middle! 😩

  39. User avatar sherlyn.orn82 says:

Super easy and it tasted gourmet! Looks fancy but doesn’t take long to make.

  40. 2 stars
I don’t know. I tried it and the flavor was just… not good. Maybe I did something wrong? 🤔

    1. User avatar Trenton Herzog says:

      4 stars
Maybe you didn’t cook it long enough? Try adjusting the seasoning next time!
