- Wrap in plastic wrap and store in refrigerator.
I put too much cinnamon in it. Yikes! But still yummy.
My oven runs hot, so I needed to lower to like 300°F. Otherwise the outside browned before the middle set. But once adjusted, it was great.
300°F?? My oven doesn’t even go that low right… 😅 I usually just bake longer and cover with foil once it browns. Did you cover it at all or just cook steady?
I totally get that—ovens run wildly different. I’ve had zucchini bread brown too fast at higher temps too. Nice call lowering it and glad it still cooked through!
I don’t know… 3 cups flour + 2 cups sugar seems like a lot. It came out sweet-sweet and kind of heavy. Maybe I used smaller zucchini? Still not bad, just not my vibe.
The bake time confused me a bit (mine took closer to 60 min). But once it cooled, it sliced nicely and wasn’t gummy at all.
This recipe is fire 🔥. I followed it exactly and the crust was nice and the inside was tender. 10/10 with coffee.
Easy to make! I just mixed everything in one bowl, and it turned out great. Will definitely bake again!
I’m glad it worked out for you! Mixing everything in one bowl does save time. Happy baking!
Like bread, but with green stuff in it 😉. Made it for my kids, they liked it! 4 stars.
Not bad, but mine was kinda bland. I think my zucchini was very watery—maybe I should squeeze it next time. Added a touch more cinnamon and salt and it improved.
Only 1 1/4 cups of flour turned out better for me. More dense but yummm!
That’s interesting! I usually go with the full amount of flour, but I might try your method next time. A denser texture sounds good!
This zucchini bread is so moist and delicious! I added some chocolate chips too, yum!
Moist? I dunno, my zucchini bread always comes out dry. What’s your secret?
I never thought of adding chocolate chips! That sounds so good. I’ll have to try that next time!
I was skeptical about zucchini bread, but this actually tastes like real banana bread vibes (without the banana). Really good with coffee.
I don’t get why everyone loves zucchini bread. I tried this recipe and it was just okay. Maybe I did something wrong?
Why do people refrigerate it? I mean it’s bread, not leftovers soup. Mine tasted fine at room temp too, but the texture got firmer in the fridge.
325°F seems low? I baked at that temp and it took the full hour. Not bad, just took longer than expected.
I get what you mean—325°F feels gentle. Mine usually takes close to the high end of that 60 min range too, especially if the zucchini is juicy.
Maybe your oven runs cool? I set mine higher to like 350 and it’s done faster, but I guess the recipe says 325 for a reason. Also did you squeeze the zucchini dry? Mine was kinda wet once lol.
Best zucchini bread ever! Can’t believe I’m eating vegetables and loving it! 😊
Too much sugar! I’d cut down on it next time for sure. But still kinda good. 3 stars.
I actually love it sweet! But everyone’s taste is different. Maybe you can try adding nuts instead of cutting down sugar? 🤷♂️
Tried this recipe but used yellow squash instead. Was not as good as I thought it would be.
Zucchini bread 😂 who would have thought? Meat and potatoes for me, thanks!
Preparing this was a breeze. However, my loaf came out a bit too sweet. Next time, I’ll reduce the sugar.
Everyone’s raving about this! Even my kids who hate veggies liked it. Win!
This zucchini bread is AMAZING! So moist and flavorful! Will definitely make again!
Used too much sugar, made it too sweet for my taste. Next time I’ll try with less sugar.
I’m skeptical about putting that much zucchini in bread. Mine came out a little dense, but the flavor was good. Maybe I overmixed.
Made this today—so moist! I used chopped pecans and the cinnamon + zucchini combo is surprisingly perfect. The timing was spot on (mine took closer to 55 min).
Made this last weekend and it turned out super moist. The cinnamon is perfect and the walnuts add a nice crunch. I ended up baking closer to 58 minutes.
I tried this recipe and it turned out so dry! Not sure what went wrong. I followed it step by step.
I’m sorry to hear that! Maybe your zucchini was too wet? Next time, try squeezing out some of the moisture before mixing it in.
Dry? Mine turned out great! Did ya make sure to not overbake it? That’s a common mistake.
I thought it needed more nuts, so I added chocolate chips instead. Delicious!!
I forgot the eggs and it still turned out okay! Just sayin’, it’s hard to mess this up.
This recipe is so easy! My kids love it. I added chocolate chips and it turned out great!
Honestly, I don’t get what all the fuss is about. It was too dense for my taste.
I got zucchini from my garden. This was the the first time I ever made bread!
I put 3 cups of sugar by accident, guess I made a cake instead. 😂
Really good flavor, but 40 minutes wasn’t enough for my oven (more like 55). Also, sifting is a pain—next time I’ll just whisk really well. Still will make again.
This zucchini bread is a total game-changer! So moist and flavorful! 5 stars!
I followed the recipe exactly but mine came out a bit dense. Maybe my zucchini was too wet—next time I’ll squeeze it in a towel.
That makes sense—too much moisture from zucchini can definitely turn it dense. Squeezing/rinsing and then patting dry (or even salting briefly and draining) helps a lot. Also, make sure you measure the zucchini after grating—if it’s packed in the cup, it’s basically extra water. I like to bake closer to the longer end if the center isn’t fully set.
I like that it uses zucchini—feels healthier. But 3 cups flour seems like a lot for the amount of wet ingredients… still tasty though.
Totally get what you mean about the flour. But zucchini adds so much moisture that it kinda balances out—mine turned out dense but not dry.
3 cups flour IS a lot 😅 I think next time I’d cut to 2 cups and see. Still though, zucchini bread always tastes good, even if the crumb is a little off.
Yumm!
This bread is great but my oven is weird. Took me 70 mins to bake, maybe check your oven temps! 😅
Delicious! I made this for my friends and they went nuts over it! Highly recommend!
I followed this recipe exactly and my bread came out super dense. Not sure where I went wrong…
Dense bread is no fun. I think it could be the eggs. If they are too small or you skipped one, that might make it heavy. Try again, don’t give up!
I’m sorry to hear that! Sometimes, the moisture in the zucchini can vary. Did you squeeze out any excess water from it? That can help with density.
5 stars!!! 🥳🥳 Best recipe ever! I’m making it for the third time this month.
Simply the best! I added some chocolate chips and it was a hit! Will make again for sure.
Chocolate chips sound delicious! I’ve never thought to add those to zucchini bread. Can’t wait to try it!
I don’t know, isn’t zucchini bread supposed to be healthier? Why add chocolate chips? Seems like a waste.
Cinnamon is good but 3 eggs feels like a lot? Also I didn’t have walnuts so I used whatever nuts, and it was okay… not mind blowing.
Why refrigerate it wrapped? I tried leaving it out and it got stale fast. Once I chilled it, the texture improved a lot.
Hmmm. Not bad, but I have a family recipe that’s way better. Sorry!
It’s nice but not what I expected. I like my bread less sweet.
I get that! You can always reduce the sugar a bit next time. I prefer it less sweet too!
Less sweet? Isn’t that part of what makes it delicious? Maybe add some nuts instead.
5/5 no notes! I made it for coworkers and it disappeared in a day. The nuts are a must.
Super easy to make! I added chocolate chips instead of nuts. Yum!
Chocolate chips sound like a great idea! I wanna try that next time!
Superb!!! 🤤 Never made zucchini bread before but now I’m a fan!
Mine didn’t come out “clean tester” until way after 60 min, like 75. Also the middle was kinda underdone even though the edges were done.
Ugh, that’s frustrating 😕 I’ve had that happen when the zucchini is wetter than usual—maybe squeeze it in a towel next time. Also I’d start checking around 60 but don’t be surprised if it needs closer to 75. Your loaf pans might’ve been deeper/thicker too.
This zucchini bread is absolutely divine! Made it for my family and they devoured it. Highly recommend!
Zucchini bread? Sounds weird. But tried it and wow, I’m impressed.
Zucchini bread is actually really nutritious! It’s not weird at all, give it another chance!
Not gonna lie, I didn’t love it. The flavor was fine, but the texture was a little too dense for me. Maybe my zucchini was too watery?
Not a fan. The texture was off and I feel like it needed something more. Maybe chocolate chips?
I don’t know what went wrong, but mine turned out like a brick. What did I do?
Do you really need that much oil? Seems like a lot for just 3 eggs…
Pretty good, but I’d reduce the sugar next time. Mine tasted a bit too sweet with 2 cups white sugar. Still ate it all though 😅
Um, where’s the chocolate? Zucchini bread needs chocolate chips, right? 1 star just for that.
I think this is a waste of good zucchinis. Zucchini should be in salads or stir-fries, not bread!
Zucchini bread is actually really good! You should give it a try before dismissing it. It adds moisture and flavor!
Looks good. Will try!
