- 1/2 pound ground turkey
- 1/4 cup onion diced
- 1/4 cup bell pepper diced
- 2 cloves garlic minced
- 1/4 cup parsley chopped fresh

- 1/2 tsp dried basil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup shredded mozzarella cheese

Not bad, but I think 375°F is too low for the time. My mushrooms were still a bit firm at 25 minutes, so I had to extend it.
Gonna be real: mushrooms are already kinda wet, so stuffing them seems like it would turn soggy. Still, it smelled good while baking.

But baking them cap-side down (like the recipe says) usually lets steam/moisture escape, and the turkey + cheese kind of helps “set” everything. If you want extra insurance, you can pat the mushrooms dry and roast them 5–10 min first before stuffing.
