Sweet Potato and Black Bean Tostadas

August 9, 2023

If you’re looking for a dinner idea that’s quick, satisfying, and full of flavor, these sweet potato and black bean tostadas are just the ticket. Crispy, colorful, and loaded with nourishing ingredients, this recipe is perfect for Meatless Monday or any night you want something easy and wholesome.

Sweet potatoes bring a naturally sweet and earthy flavor that pairs beautifully with the smoky spices in this dish. Roasting them until golden and tender brings out their best qualities, especially when seasoned with cumin, paprika, and a pinch of chili powder. Meanwhile, black beans offer heartiness and protein, giving the tostadas plenty of staying power.

Tostadas are essentially flat, crispy tortillas that act as the perfect base for all your favorite toppings. You can buy pre-made tostadas or make your own by baking corn tortillas until crunchy. Once you have your base ready, it’s all about layering.

Start by mashing the roasted sweet potatoes with a splash of lime juice. Spread this over the tostada shell like you would refried beans. Add spoonfuls of seasoned black beans, followed by shredded lettuce, diced tomatoes, and sliced red onions for a fresh crunch. If you love heat, a few jalapeño slices or a drizzle of hot sauce will do the trick.

To finish, top your tostadas with avocado slices or a dollop of sour cream (or a plant-based alternative). A sprinkle of chopped cilantro ties everything together and adds a burst of freshness.

What makes these sweet potato and black bean tostadas shine is the mix of textures and flavors. You get creamy, crunchy, spicy, and tangy all in one bite. They’re fun to assemble, easy to customize, and always a hit with family and friends.

Whether you’re serving them for a weeknight meal or laying out a DIY tostada bar for guests, this dish is a guaranteed winner. It’s proof that plant-based cooking can be just as satisfying and crave-worthy as anything else on the table.

Not bad, but I’m not a big cilantro person so I left it out and it still tasted fine. Also my avocado was too ripe lol.

These are amazing! I made them for dinner and my family loved them. Definitely a keeper!

I’m so glad you loved them! They’re a hit at my house too. The mashy beans are the best part!

  3. 4 stars
I thought this would be bland, but the spices really pack a punch! Only thing I changed was adding extra cumin.

    1. User avatar Gail Andrews says:

      5 stars
I totally agree! The spices really made this dish so flavorful. Extra cumin is a great idea! Can’t wait to try that! 😊

Sweet potatoes + beans is a no from me… I know everyone else loves it though. Couldn’t get past the texture. 1 star 😅

    1. User avatar Elizebeth Marks says:

      2 stars
Whoa 1 star for beans + sweet potatoes is harsh lol. I actually love the contrast—creamy beans and crispy tostada. Did you mash the beans enough?

    2. User avatar Pamela Greenfelder V says:

      4 stars
Totally get the texture thing 😅 I had the same fear the first time, but roasting the sweet potatoes until golden helps a lot. Maybe try cutting them smaller for a better bite?

  5. User avatar emery.skiles98 says:

This feels kinda weird, sweet potatoes on tostadas? I dunno, but I’ll try it. Maybe I’ll add some meat.

  6. User avatar broderick.padberg2021 says:

    3 stars
Not gonna lie, the cilantro + avocado mix is kinda weird to me on a tostada. I might be a plain-person but I felt like it competed with the beans. Other than that, the roasted sweet potatoes were A+.

  7. User avatar angel.robel says:

    5 stars
5 stars for sure! I might add some cheese next time, just because cheese makes everything better.

  8. User avatar wellRespected says:

    4 stars
Yummy! I skipped the salsa and it was still great. 😋

  9. User avatar maria.reilly39 says:

    4 stars
Easy to follow and the flavors make sense. My sweet potatoes needed like 35 minutes to get golden, but that might be my oven. Still great!

  10. User avatar lenita.harber says:

We made these for dinner and everyone went back for seconds. The cilantro and tomatoes give it that fresh pop.

  11. User avatar shon.torphy1962 says:

Absolutely delicious! The sweet potatoes give it such a nice flavor. Will definitely make again!

I agree! Sweet potatoes really do make a dish pop with flavor. So good for a healthy meal. 😊

    2. 2 stars
I dunno.. Sweet potatoes? In a tostada? Sounds weird to me. Why not just regular potatoes?

  12. 4 stars
Tastes good, but I don’t like beans. I replaced them with chicken, turned out ok I guess. LOL.

    1. User avatar genevive.howe says:

      3 stars
Seems like you missed the pointa bit? Sweet potatoes and beans is the whole idea! But if chicken works for ya, then awesome! 👍

    2. 4 stars
Replacing beans with chicken is a bold choice! I think the beans really make the dish pop, but glad you enjoyed it anyway! 😂

  13. User avatar ethan.ebert says:

    4 stars
Great combo of flavors! I used black beans from a can, way easier. But what is ‘cilantro’???

  14. User avatar terry.adams says:

    2 stars
Too much prep for me. I just want quick meals! This was way too much chopping. 😩

  15. User avatar armando.howe says:

Tostadas have to be crunchy, not soft. Didn’t turn out like I wanted. Not sure if I did it right.

  16. User avatar louis.friesen0 says:

    2 stars
This was okay, but my sweet potatoes got burnt after 20 mins. What a waste. 😭

  17. User avatar Mr. Breanne Blanda says:

    4 stars
My avocado turned brown by the time we ate 😭 but flavor was good. Next time I’ll add avocado at the last second.

    1. User avatar claudio.wyman says:

      5 stars
Aww no 😭 that happens fast with avocado. Last-second adding is exactly the move—also tossing it with a little lime helps slow the browning!

  18. User avatar sydney.reichel19 says:

    2 stars
Honestly, I didn’t love these. The sweet potatoes were too mushy for my taste, and I think it could use more spice. Maybe I’ll give it another try with a few tweaks.

  19. User avatar Garlic Jr says:

    5 stars
Only 4 tostada shells?? I doubled everything and it barely lasted one dinner. Super tasty though—great for meal prep!

    1. User avatar mathWizard says:

      5 stars
Haha yeah 4 shells is the real limiting factor. I usually use more than the recipe calls for—glad you liked them though! Meal prep wins. 🌮

  20. 5 stars
Absolutely delicious! The sweet potatoes give it a wonderful flavor. Will definitely make again!

  21. User avatar curtis.bednar says:

    2 stars
Tostadas?? What are they? Are they like pizza? Anyway, I just made nachos instead. 😅

  22. User avatar Janiece Moen III says:

    5 stars
    Yum! 👍

  23. 3 stars
Not bad, but I wish the tostadas stayed crisp. Mine got a little soggy after assembling. Maybe I should toast the shells first?

    1. User avatar dylan.willms39 says:

      5 stars
Yes—toast them first. I warm the tostada shells in the oven for a few minutes (like 5–8 min at 425°F) so they stay crunchy even after adding beans. Also don’t overload the beans.

  24. User avatar Michael83 says:

    3 stars
Doesn’t look like the picture :(. Mine were kinda mushy. Might’ve overcooked the sweet potatoes?

  25. User avatar henriette.hickle1978 says:

    4 stars
Why does it say 4 tostada shells like that’s enough for adults? I ate two and still wanted more. Recipe still good tho.

    1. 4 stars
Totally—tostadas are basically crunchy vehicles for the toppings. Two isn’t enough if you’re really going for it. Recipe’s solid though.

    2. User avatar niki.farrell87 says:

      5 stars
Yeah 4 shells sounds low for adults 😅 Especially if it’s your main meal. I usually do 6–8 and double the bean topping.

  26. User avatar oPandariaNo says:

    4 stars
Yum! My whole family loved it. Even the kids who never eat sweet potatoes! I will definitely make these again 😊.

  27. User avatar MAGA2024.Trumpster says:

    3 stars
I’m skeptical about sweet potatoes in a tostada. Isn’t that kinda weird? But I tried it and was surprised by how good it was. Taste buds do change over time!

  28. 5 stars
These tostadas are a game changer! I loved the combination of flavors. Can’t believe I never thought to pair sweet potatoes with black beans before. 5 stars!

  29. User avatar lynsey.reynolds says:

    5 stars
Solid flavor combo—sweet, smoky, and fresh. I used smoked paprika instead of regular and it tasted even better. Would make again for sure.

  30. 5 stars
These tostadas were bomb! I added some hot sauce on top and it was perfect. 👌

  31. 2 stars
Eh, they were okay. The sweet potatoes were too mushy for my taste. Prefer regular tacos.

  32. User avatar paola.wisoky39 says:

    4 stars
I’m not usually a tostada person, but this made me change my mind. The mashed beans act like the perfect “glue.”

    1. User avatar tracie.nicolas39 says:

      5 stars
Yes! The mashed beans really are the game-changer—everything sticks together instead of falling apart like usual tostadas.

  33. User avatar NAFO.SUPREMACY says:

    4 stars
Pretty good, but my sweet potatoes took closer to 40 minutes to get golden. Also I used a bit too much cumin—still tasty though.

    1. 5 stars
Thanks for the timing note! Mine usually browns faster than that too, but 40 minutes actually sounds more realistic depending on how big you dice them. Love the idea about the cumin—next time I’ll start lighter.

  34. User avatar Arvilla Schumm says:

    4 stars
Sweet potato and black beans, that’s healthy right? I’m trying to eat better and this fits that. I’ll give it a go!

  35. User avatar hollis.williamson1969 says:

    4 stars
Yum! I used frozen corn and it turned out fine. Easy recipe for weeknights!

  36. User avatar Dr. Rubi Lemke says:

    2 stars
Too much effort for me, I just wanted a simple meal. Didn’t realize I had to roast stuff. I’ll stick to microwaving.

  37. User avatar raquel.stehr says:

    4 stars
The ingredient list is solid, but 425°F for 25-30 min felt like it took longer for my diced potatoes. Still, the end result was worth it.

  38. User avatar harry.hartmann1979 says:

    5 stars
These were super tasty—roasting the sweet potatoes made them caramel-y. I added a squeeze of lime and it really popped. Will make again!

    1. User avatar athena.hauck71 says:

      4 stars
I made these once and mine came out kinda soft—maybe I didn’t roast long enough? Also I accidentally mixed the onion into the beans… still tasty though. Will try the lime next time!

    2. User avatar MAGA2024.Trumpster says:

      5 stars
Totally agree—roasting really brings out that caramel-y sweetness. Lime is such a good call with the black beans too. 😋

  39. 3 stars
Tried this recipe and my husband didn’t like it at all. Just tasted like a salad on a cracker. 🤷‍♀️

    1. User avatar vicente.gaylord2025 says:

      4 stars
I totally get it! This recipe can be hit or miss. Maybe try adding more spices next time? 🤔

  40. 2 stars
I don’t know… I found it kinda bland even with salt/pepper. Maybe my chili powder was weak? Could use more heat or acid.

  41. 3 stars
The salsa bowl felt a little bland for me until I added more lime juice. Next time I’ll also chop the onion smaller so it doesn’t overpower.

  42. User avatar erick.quitzon26 says:

    3 stars
These are healthy-ish, so I guess that’s good? I still prefer chicken tostadas. But I’ll admit the cumin makes it taste legit.

  43. 5 stars
These tostadas were a hit. The sweet potatoes got perfectly golden and the mashed beans made everything feel super filling. I added a squeeze of lime and it really popped!

  44. 2 stars
I don’t know, it sounds kinda weird with those ingredients. Sweet potatoes with beans? Really?

    1. User avatar don.cremin9 says:

      4 stars
I used to think the same, but sweet potatoes and black beans are actually super yummy together! Trust me, give it a shot!

  45. User avatar tissues_with_issues says:

    2 stars
I don’t get the avocado amount—too much for my taste. Also I used canned corn and it tasted off, but that’s on me I guess.

    1. 4 stars
Interesting—mine always works great with canned corn. But I usually drain it really well and give it a quick rinse. Might be that canned corn tastes sweeter/metallic compared to fresh, so maybe that’s why yours felt off.

    2. User avatar alyson.schuppe7 says:

      5 stars
Totally get it—avocado is pretty “loud” in these. If you want it milder, I’d use 1/2 an avocado (or even skip half) and add a bit more cilantro or onion to keep the flavor bright.

  46. User avatar oswaldo.wilkinson says:

    3 stars
Tried it and it was kinda bland until I added more salt and some hot sauce. The recipe as written needs a little more seasoning guidance.

    1. User avatar idell.swaniawski30 says:

      5 stars
Totally agree—mine tasted pretty muted at first too. I ended up adding extra salt + cumin, and a squeeze of lime made a big difference. Clearer seasoning tips would really help.

  47. 5 stars
So easy and flavorful! I added a bit more chili powder for extra kick and it was perfect. Thanks for sharing!

  48. 4 stars
I liked it, but 425°F for 30 minutes was maybe too long for my cubes—some were darker than I wanted. Next time I’ll start checking around 20. Flavor was great regardless.

  49. User avatar Liet-Kynes says:

    4 stars
Yum! 🥑 I love avocado and sweet potato! Just a suggestion, try adding cheese too. Makes everything better!

  50. User avatar mel.daniel says:

    5 stars
These turned out so colorful and filling! The roasted sweet potatoes make it taste way more “taco shop” than I expected. I added a squeeze of lime and it really popped.

  51. User avatar brett.gulgowski says:

    5 stars
So good! I added some lime juice and it made it extra fresh. Also, can you put cheese on these? Just wondering.

  52. User avatar Duncan Idaho says:

    5 stars
5 stars because I had everything on hand and it didn’t take forever. Also, the chili powder + cumin combo is my comfort food.

  53. 2 stars
I tried this and it came out kinda bland. I’m sure it’s me not seasoning enough, but the directions are like “salt and pepper to taste” at several steps and I needed more chili. Also, my tostada shells cracked… maybe I pressed too hard.

  54. User avatar derick.walker says:

    4 stars
I’m not usually a black bean person, but mashing them helped a lot. The tostadas stayed crispy, which I rarely manage with anything like this.

    1. 5 stars
Okay but mashing the beans + oven tostadas actually makes sense 😄 Mine always turns soggy, so I’m excited to try this exact approach.

  55. User avatar vernetta.farrell says:

    3 stars
Honestly I’m skeptical about avocado mixing in like that. Mine got a little watery, but the flavor was nice and the beans helped balance it.

  56. 3 stars
Way too much chili powder for my taste. I’d cut it in half next time. Other than that, the toppings were bright and fresh.

  57. User avatar hue.farrell18 says:

    4 stars
Not bad at all, but my sweet potatoes took closer to 40 minutes to brown. Also I ran out of cilantro so I used parsley—still okay.

  58. User avatar jeanine.cassin says:

    1 star
Isn’t avocado bad for you? I don’t think these are healthy at all. 😒

  59. User avatar malika.wilkinson says:

    3 stars
I forgot to rinse the black beans (oops), so it was saltier than I like. Next time I’ll follow the steps better. Still would make again.

  60. User avatar hyman.goldner61 says:

    1 star
This is the worst! Tostadas are supposed to be crunchy, mine turned out soggy. I followed the recipe exactly, but it failed!

  61. User avatar Spider Worker says:

    5 stars
These were absolutely delicious! I loved the sweet potatoes with the black beans. Will definitely make again!

  62. 4 stars
Great recipe! The flavors came together really nicely. My family devoured them!

  63. User avatar tama.williamson says:

    5 stars
Black beans + sweet potatoes sounds like a weird combo but wow it works. The avocado salsa is the MVP. 10/10 would eat again.

  64. User avatar octavio.jones54 says:

    3 stars
I tried these but found them kinda bland. Maybe need more spices or something? 🤔

  65. User avatar jenni.reinger94 says:

    5 stars
These were surprisingly filling for a “tostada” situation. The sweet potatoes got nice and caramelized, and the mashed beans made it feel more restaurant-y. I’ll definitely make again—maybe add lime juice to the salsa.

  66. User avatar darell.hayes says:

    3 stars
I messed up and roasted the sweet potatoes too long… they were kinda crunchy. But honestly the black beans helped and we still ate them. 😅

  67. 4 stars
Pretty solid combo. I followed the spices pretty closely and they tasted balanced. Only thing: my avocados were a little under-ripe so it didn’t really shine until I mashed it more. Still good though!

    1. User avatar idalia.smitham2015 says:

      5 stars
So glad you got the balance right! Under-ripe avocado is real—more mashing usually fixes the texture and helps it cling better to the beans.

  68. 4 stars
Pretty good for a weekday meal. I used a bit more cumin and the flavor was great, but my tostadas got a little soggy after adding everything at once.

  69. User avatar alisha.kirlin2024 says:

    5 stars
    Super easy. Yum!

  70. 5 stars
These were surprisingly tasty—sweet, smoky, and the avocado topping really pulled it together. I used smoked paprika and it kicked it up a notch.
