Ingredients

2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 cup green beans, trimmed and cut into 1-inch pieces
4 cups vegetable broth
1 can diced tomatoes
1 cup cooked cannellini beans
1 cup cooked whole wheat pasta
1 cup baby spinach
2 tbsp chopped fresh basil
1 tbsp chopped fresh parsley
Salt and pepper to taste

Instructions

1.Heat olive oil in a large soup pot over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables start to soften, about 5 minutes.
2.Add the zucchini, green beans, vegetable broth, and diced tomatoes with their juices. Bring to a boil, then reduce heat and simmer for 20 minutes, until vegetables are tender.
3.Stir in the cooked cannellini beans and whole wheat pasta. Cook for an additional 5 minutes.
4.Add the baby spinach, chopped basil, and parsley. Season with salt and pepper to taste. Cook until the spinach wilts, about 2 minutes.
5.Serve hot and enjoy!
