Ingredients
- 10 oz spinach chopped, fresh
- 8 oz mushrooms sliced
- 1 cup onion chopped
- 2 cups milk whole or 2%
- 1 cup heavy cream
- 1 cup Cheddar Cheese shredded
- 8 cups bread cubed – stale bread works best
- 6 eggs large, beaten
- 1 tsp salt
- 0.5 tsp black pepper ground
- 2 tbsp butter for greasing the baking dish
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with butter.
- In a large skillet, cook the mushrooms and onions over medium heat until they are soft and the onions are translucent.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat.
- In a large bowl, whisk together the eggs, milk, cream, salt, and pepper.
- Layer half of the bread cubes in the bottom of the greased baking dish.

Yeah I’d say packed is the safest for fresh. When I use frozen I thaw, squeeze it dry, then measure what’s left. Otherwise the strata ends up a bit wet/soggy.
