Spinach & Egg Scramble Toast

4 slices of whole wheat bread
4 large eggs
2 cups of fresh spinach
1/2 cup of shredded cheese (optional)
Salt and pepper to taste
Butter or oil for cooking


1.Heat a non-stick skillet over medium heat.
2.Add the spinach and cook until wilted, about 2 minutes.
3.Remove the spinach from the skillet and set aside.
4.In the same skillet, melt a pat of butter or heat some oil.
5.Crack the eggs into the skillet and scramble them.
6.Add the cooked spinach and shredded cheese (if using) to the eggs and mix well.
7.Season with salt and pepper to taste.
8.Toast the slices of bread.
9.Spread butter or your favorite spread on the toasted bread slices.
10.Divide the egg and spinach mixture evenly among the slices of toast.
11.Serve hot and enjoy!
