    Not sure about the food coloring—feels a little unnecessary. Also I used vanilla ice cream that was pretty sweet already, so I think it might be sweeter than it needs to be.

      Yeah I felt that way too—food coloring’s optional. I usually do just a couple drops (or none) and it still tastes like a shamrock shake to me. If your vanilla is already sweet, you could cut back the ice cream a bit or add a splash more milk.

      I think the green coloring is kind of the whole point tho lol. But if you used a super sweet vanilla, I get it—mine always comes out sweet with vanilla. Maybe lower the mint extract? Like 1/4 tsp instead of 1/2.
