Ingredients
  

  • 8 oz soba noodles
  • 1 lb shrimp peeled and deveined, large
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp sesame seeds
  • 4 Green onions thinly sliced
  • 1/2 cup cilantro chopped
  • 1/4 cup peanuts chopped

Instructions
 

  • Cook the soba noodles according to package instructions. Drain and set aside.
  • In a small bowl, whisk together the soy sauce, sesame oil, honey, garlic, and ginger. Set aside.
  • Preheat grill to medium-high heat. Thread the shrimp onto skewers and brush with the sauce mixture.
  • Grill the shrimp for 2-3 minutes per side, until cooked through and slightly charred. Remove from grill and set aside.

    Not sure about grilling on skewers—mine cooked unevenly and I had to finish in a pan. Tasted good though. Also my soba stuck to the pot a little.

For the soba sticking, try rinsing right after draining and keep it from sitting too long—also a tiny bit of oil in the pot/bowl helps.

    I followed the recipe mostly, but I only had tahini so I subbed some of the sesame oil with it. Still tasty, but it was a little thicker and not as fragrant. Next time I’ll use the real sesame oil.

      Totally fair—honey can swing it sweet fast. I’d try cutting it to 1/2 tbsp or even swapping honey for a little extra soy/sesame oil so the sesame flavor comes through more. Also, did you use the full 2 tbsp sesame oil? That’s a lot (in a good way) but it could change the balance.
