Saffron-Infused Baked Peaches

February 21, 2024

Saffron-infused baked peaches are the kind of dessert that feels both indulgent and refined. The natural sweetness of ripe peaches pairs beautifully with the exotic floral notes of saffron, making this treat perfect for a special occasion or a simple yet luxurious after-dinner indulgence. This dish is the perfect balance of sweet, aromatic, and subtly spicy, with the saffron adding a unique depth of flavor that elevates the humble peach into something extraordinary.

The process is incredibly simple, but the result is stunning. Start by halving ripe, juicy peaches and removing the pits. You can bake them with their skin on, which helps hold the shape while the peaches soften in the oven, or peel them if you prefer a smoother texture. The peaches are then drizzled with a honey-saffron syrup, a fragrant infusion of warm honey, a pinch of saffron threads, and a touch of warm water. The saffron blooms in the liquid, releasing its rich golden color and signature scent.

Once the syrup is poured over the peaches, the whole dish goes into the oven to bake, allowing the fruit to soften and soak in the delicate flavors of the honey and saffron. The result is a beautiful combination of caramelized edges and tender, juicy centers, with a golden saffron glaze that drips down the peaches, creating a syrupy sauce that’s perfect for spooning over the fruit.

For an extra touch, you can sprinkle toasted almonds or pistachios on top for crunch, or add a dollop of whipped cream or a scoop of vanilla ice cream to enhance the dessert’s richness.

Saffron-infused baked peaches are a striking and sophisticated dessert that combines simplicity with elegance. The floral notes of saffron complement the sweetness of the peaches in a way that makes every bite feel like a special treat, turning a simple fruit into a luxurious indulgence. Whether you’re serving them for a dinner party or enjoying them on a quiet evening at home, these peaches are a beautiful and flavorful way to end any meal.

I’m skeptical about saffron being worth it here. Also, 1 tsp threads feels like a lot for peaches—mine might get too floral. Anyone tried reducing it?

Tried this but the saffron was too strong. Maybe use less next time? Just my opinion.

I love saffron, but I get what you mean! Maybe just a pinch next time? 😊

Only 20 minutes? My peaches never get that tender that fast, unless they’re super ripe. Maybe check earlier—like at 15—so they don’t go too mushy.

Made it tonight and it came out super fragrant. The raisins + pistachios texture is the real win. Will bake again!

Omg yes—raisins + pistachios is such a great combo. Glad the saffron came through too! 😊 I’m stealing your “texture win” line for my next bake.

I made this too but mine didn’t turn out as fragrant… I think I overcooked the peaches a bit. Still tasty though—pistachios were crunchy at least.

375°F for 20 minutes felt a little long for my peaches—they got too soft. Maybe my oven runs hot? Still tasty.

Tastes great!!! But I accidentally added too much honey. My bad… but still good. 4 stars!

I’ve done the same thing with honey! It can be so tempting to drizzle more. Still, the recipe sounds delicious! Glad you liked it!

375°F for 20 minutes felt short for my peaches; mine were softer but not as juicy as expected. Maybe my peaches were firmer than stated.

375°F for 20 mins is totally short if your peaches ain’t super ripe. I tried it with firmer peaches and they stayed kinda “peachy but dry.” I’d either use riper ones or bake longer, no doubt.

I felt the same at 20 minutes—my peaches weren’t very juicy either. Next time I’ll give them like 30 minutes or cover with foil for the first half so they steam more.

Who eats peaches without ice cream??? Can’t wait to make this!

  9. 4 stars
I made this last summer. Mine took more like 25-30 minutes because my peaches were super ripe and juicy. Still turned out great—pistachios and raisins are a surprisingly good pairing.

10/10 for presentation. The colors look gorgeous after baking, and the toppings stay nice and crunchy-ish.

Idk why you would add raisins, don’t they just ruin it? I might skip them.

The raisins + pistachios on peaches is… surprisingly good? I was skeptical, but I can see it working. Like a fancy fruit salad, lol.

The honey + saffron steeping step is legit, I can’t deny that. Next time I’ll add a pinch of salt because mine tasted a tiny bit flat.

  14. 2 stars
Five minutes steeping saffron doesn’t sound long enough… like at all. Might be better with more time or I don’t know, more threads?

Saffron is expensive though… would it still work with just turmeric or something? Not sure I can justify 1 tsp threads.

  16. 3 stars
Is 375 degrees really hot enough? Didn’t cook through for me. Next time, maybe 400°.

Baked peaches sound weird but I gave it a shot. Surprisingly good! 😋

I was skeptical too but this is really delicious! The saffron adds such a unique flavor. 😍

What are peaches? I’m not sure I like this. But the ice cream part sounds nice!

  19. 4 stars
I didn’t have saffron, so I used cinnamon instead. Still turned out good!

Cinnamon? That’s a bold move! I might have to try that next time. 😄

But like, why not just get saffron? It’s not that hard to find. 🙄

Not sure about baking time… 20 minutes at 375°F left my peaches a little firm, so I’d check at 15. Still tasty, but I expected them to be way softer.

    1. User avatar gus.goyette41 says:

Huh, mine were super soft right at 20… maybe your peaches were more like “semi-ripe”? Also i think 375F is a lil high if they’re thick? Try lower heat or slice thinner next time. Still sounds great tho.

    2. 5 stars
Good point! I always start checking around 15 min too—mine tend to stay firmer if the peaches aren’t super juicy. Next time I’ll aim for “tender” instead of trusting the full 20.
