Ingredients
  

  • 4 potatoes medium, peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 tsp thyme dried
  • Salt and pepper to taste
  • parsley chopped fresh for garnish

Instructions
 

  • In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.
  • Add the diced potatoes, dried thyme, salt, and pepper to the pot. Stir to coat the potatoes with the seasonings.
  • Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for about 20 minutes, or until the potatoes are tender.
  • Using a potato masher or immersion blender, mash the potatoes until desired consistency is reached.
  • Stir in the milk and heavy cream and heat through. Taste and adjust seasoning if needed.
  • Serve the potato soup hot, garnished with chopped fresh parsley.

    Not bad, but I think 20 minutes isn’t enough for bigger potato chunks. Mine weren’t fully tender until closer to 30. Otherwise solid.

      Totally agree—Step 1 saying “heat some oil” is super vague. Even a quick “1–2 tbsp” would’ve saved me from guessing 😅 Glad it still turned out fine though!

      I actually just used a splash of olive oil and that’s how my grandma did it. “Some oil” is fine—potatoes always sort it out. But yeah, measurements would be nicer.
