Pork and Eggplant Rounds
Delicious and healthy pork and eggplant rounds recipe
Ingredients
- 1 pound pork tenderloin sliced into rounds
- 1 large eggplant, sliced into rounds
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
Instructions
- Preheat the oven to 400°F (200°C).
- Place the pork rounds and eggplant rounds on a baking sheet.
- Drizzle with olive oil and season with salt, pepper, oregano, basil, garlic powder, onion powder, and paprika.
- Bake for 15-20 minutes or until the pork is cooked through and the eggplant is tender.
