Mugi Cha (Barley Tea)

September 11, 2023

Mugi Cha, or Barley Tea, is a traditional Japanese beverage made from roasted barley grains steeped in water. Popular across Japan, Korea (where it’s called boricha), and China, this naturally caffeine-free tea is celebrated for its toasty, nutty flavor and its cooling, hydrating properties, especially during the hot summer months.

Served both hot and cold, Mugi Cha is commonly enjoyed as a daily drink, often replacing water at mealtimes. The flavor is mild yet distinct, with a slight bitterness and deep roasted undertones that make it incredibly refreshing. It contains no sugar or calories (unless sweetened), making it a healthy, guilt-free alternative to sugary sodas and energy drinks.

Traditionally, Mugi Cha is made by simmering roasted barley kernels in water or by steeping pre-packaged tea bags. Cold-brewing it in the refrigerator overnight is a popular method during summer, resulting in a crisp, clean taste that helps cool the body and aid digestion.

Besides being refreshing, Mugi Cha is believed to offer several health benefits. It may support digestion, promote blood circulation, and help reduce fatigue. Due to its antioxidant properties and lack of caffeine, it’s suitable for children, pregnant women, and those trying to avoid stimulants.

Whether you’re enjoying a quiet moment at home or looking to add a healthy beverage to your routine, Mugi Cha provides a comforting, earthy flavor with centuries of tradition behind every sip.

Does it really taste good? I tried once and it was kinda bland. How can it be better? 🤔

    1. User avatar hyo.fahey5 says:

      4 stars
I think it’s all about the brewing time! I let mine steep for longer and it really brought out the flavor. Give that a try! 😊

Took me too long to boil! Had to check my phone every 5 minutes. Not great.

  5. User avatar ericka.emard says:

This tastes really nice but I wish the recipe mentioned whether to rinse the barley or not. I used it straight and it was fine, just wondering.

Barley tea is good for digestion, they say. I make it every week now! My family loves it. Give it a try, folks!

  8. 4 stars
Roasted barley is such an underrated ingredient. Simmering 30 minutes is perfect—color looks great too.

  9. User avatar versie.auer says:

    4 stars
Good but I thought it would be sweeter or something… where’s the sugar? 😂 4 stars.

  10. User avatar barry.beer86 says:

Not gonna lie, I was skeptical about brewing tea from grain, but the nutty smell while simmering convinced me. Great with a squeeze of lemon.

    1. User avatar tabetha.hammes82 says:

      3 stars
Okay but do you actually use roasted barley like the kind for coffee-style drinks? I think mine came out kinda bitter… maybe I simmered too long.

    2. User avatar jere.senger says:

      5 stars
I was skeptical too, but once it starts smelling like toasted nuts it’s hard to resist. I tried it chilled and it was surprisingly refreshing—lemon is a great idea!

  11. User avatar tyler.funk2024 says:

I don’t know, this barley tea tasted kinda bland to me. Maybe I did it wrong?

Mugi cha is actually from Japan, not Korea. Just saying. But I like it! ☕️

Mugi Cha for lyfe! So refreshing in summer! I drank it all the time in Japan.

  14. User avatar dani.weissnat7 says:

  15. User avatar Mr. Daisey Osinski says:

Easy recipe, I like that there’s no fancy stuff. Mine got a little darker than expected but the flavor was still good. Served it chilled with ice—nice in the summer.

    1. 5 stars
Yes! No fancy stuff is the best. I also simmered a bit longer and mine got darker, but it still tasted great chilled with ice—perfect summer drink.

  16. User avatar nan.hodkiewicz says:

    5 stars
Loved how simple this is—just barley + water and you get a cozy tea. I simmered mine closer to 35 min and it tasted a bit deeper. Chilled with ice was especially refreshing.

  17. User avatar tyler.reynolds10 says:

Does barley tea have caffeine? I need something to kick me awake in the mornin’!

    1. User avatar marivel.welch says:

      4 stars
Nope, barley tea is caffeine-free! It’s great for relaxation, but might not be the best for a morning kick!

    2. 3 stars
I thought it had some caffeine! Guess I’ll stick to coffee then. Thanks for the info!

  18. 4 stars
Isn’t barley tea supposed to be for hot weather? I drink it all year, haha! Funny!

    1. User avatar Perry Bartell IV says:

      5 stars
I think it’s great you enjoy it year-round! Barley tea is so refreshing. Love it!

  19. User avatar tonja.kunze34 says:

Love this tea! So refreshing, especially in summer. I added a bit of honey for sweetness. Yum!

    1. 5 stars
I totally agree! Mugi Cha is the best, especially on hot days. Honey is a great touch! ☀️

    2. User avatar oPandariaNo says:

      2 stars
I don’t get the hype. Isn’t barley tea just water with a hint of flavor? *shrugs*

  20. User avatar Walton Russel says:

    3 stars
Can you re-use the barley or is it one-and-done? I hate wasting food!

  21. 2 stars
Not what I expected. The smell while boiling was kinda weird.

  22. User avatar jerrod.mcglynn2004 says:

    4 stars
Simple and effective! I love how easy this recipe is. I added a bit of honey, and it was perfect! Will definitely make again.

  23. User avatar MAGA2024.Trumpster says:

    2 stars
I followed the steps but mine looked kinda cloudy and tasted bland. Maybe my barley wasn’t roasted enough? Idk.

  24. 4 stars
I didn’t have “roasted barley” so I used regular barley and… yeah, not the same. After toasting it a bit first, it actually worked.

  25. 2 stars
I thought it would taste sweet. What a letdown! It was really bitter instead.

    1. User avatar hedgehog says:

      4 stars
I’m sorry you didn’t like it! Mugi cha is supposed to be a bit nutty, not sweet. Maybe you brewed it too long?

    2. User avatar Slartibartfast says:

      2 stars
Bitter? I thought it was supposed to be refreshing. Maybe you meant to make a sweet tea? 🤷‍♂️

  26. User avatar cockroach says:

    3 stars
I’m skeptical about how much flavor you get from just barley and water. Mine tasted kinda watery until I steeped/ simmered extra time. Next time I’ll roast the barley myself a bit darker.

    1. User avatar dot.raynor42 says:

      4 stars
Yeah I get your point—if the barley isn’t strong enough, it can totally taste thin. I’ve had better luck simmering closer to 40 mins and letting it sit off-heat for a bit before straining.

  27. User avatar jarrod.windler says:

    3 stars
For some reason, mine tasted a bit bitter. Maybe I boiled it too long? 🤔

  28. 2 stars
Mine didn’t taste like what I’ve had at restaurants. Maybe I used the wrong “roasted barley” because mine was more caramel-ish. Anyone have brand tips?

  29. 2 stars
Couldn’t find roasted barley, so I toasted regular barley myself. Maybe I did it wrong, but it came out darker and bitter.

  30. User avatar manual.witting says:

    4 stars
I made this for my family and they actually liked it! Surprised me.

  31. User avatar Quickbeam says:

  32. User avatar mara.bayer4 says:

    3 stars
Tasted alright, but a bit bland for my liking.

  33. 5 stars
This tastes so comforting—nutty and lightly toasted. I simmered a bit longer (about 35 min) and it got even richer. Definitely making again.

    1. User avatar tommie.hudson1965 says:

      5 stars
Yes! That nutty toasted flavor is exactly why I love this one. I usually do closer to 35 min too—totally richer.

    2. 4 stars
I tried it and it was good, but mine tasted a little too mild. Maybe my barley wasn’t roasted enough? Still comforting though.

  34. 5 stars
Wow, who knew making tea could be so easy! Will be making this again for sure!

    1. User avatar allan.hansen25 says:

      2 stars

    2. 5 stars
So glad you found it easy! Barley tea is super refreshing, especially in summer.

  35. 5 stars
This is the best tea ever! I love the nutty flavor of barley. So good hot or cold! 🍵

This tastes kinda like coffee without the bitterness. I even served it chilled with ice and it was a vibe.

  41. User avatar Zack Greenholt says:

    1 star
Not my favorite. I prefer iced tea instead. Barley tea just aint it for me.

  42. User avatar Dwarven Shpere says:

    2 stars
I tried it but wasn’t a fan. It tasted kinda bland to me. Maybe I did something wrong? I’ll stick to my regular tea. 2 stars.

  43. User avatar CTRLplusW says:

    4 stars
Honestly, I was skeptical but this tastes way better than I thought it would. Who knew? Thx!

    1. User avatar clementine.hettinger1980 says:

      5 stars
I can’t believe it! I always thought tea was just leaves. This is a game changer!

  44. 4 stars
This is a healthy drink, but I’m not a fan of the smell. Can you add flavors like lemon?

  45. User avatar glen.nienow91 says:

    5 stars
So easy! I had roasted barley already, so it was basically just simmer, strain, and done. Tastes nutty and super comforting—hot is great on cold nights.

    1. User avatar Dro'marash says:

      5 stars
Agree—so cozy. I’ve never tried barley tea with pre-roasted barley, but I’m convinced it would cut the time a lot. Do you strain super fine, or just regular?

  46. User avatar Draugr Scourge says:

    5 stars
What a tasty find! I added some mint leaves and it was delightful! Highly recommend.

    1. User avatar arnold.yundt says:

      2 stars
Really? Isn’t barley tea just plain? I thought the idea was to keep it simple.

    2. User avatar bennett.romaguera67 says:

      4 stars
Mint leaves! That’s a great idea, I’ll have to try that next time.

  47. User avatar Peregrin Took says:

  48. User avatar debbie.rowe5 says:

    5 stars
This is so simple but really comforting. I followed it exactly and the flavor is toasty and nutty—perfect hot or iced.

  49. User avatar marshall.greenholt62 says:

    3 stars
Tried it exactly as written and it came out a bit bland for my taste. Next time I’ll steep longer or use slightly more barley.

    1. User avatar michael.mayert1960 says:

      5 stars
Good call on steeping longer—30 min can be a little shy depending on how dark the roasted barley is. I usually do closer to 45 and it gets more nutty.

    2. User avatar wan.dubuque35 says:

      4 stars
Bland here too, honestly. I doubled the barley to 1 1/2 cups once and it helped a lot. Might be my barley was lightly roasted.

  50. User avatar Parker Carr says:

    3 stars
Used 1 cup barley like the recipe says, but I think I boiled too hard at first because it turned kinda dark/strong. Still drinkable though.

  51. User avatar jae.mueller11 says:

    2 stars
idk… barley tea is kinda boring to me 😅 But I’m sure some people will love it.

    1. User avatar oPandariaNo says:

      5 stars
Barley tea boring?? Nah, it’s comfort. Plus it’s caffeine-free (well, mostly) so I can drink it at night 😄

    2. User avatar zada.walter20 says:

      4 stars
Totally get that—it’s pretty simple. I like it more when I add a splash of milk or a bit of honey.

  52. User avatar owen.brown56 says:

    5 stars
Wow I can’t believe how easy this was! I thought it’d be complicated but nah, just boiling water! Love it!

    1. User avatar melvin.vonrueden says:

      3 stars
Is it really that easy? I thought you had to do more with it, like add spices or something…

    2. 5 stars
I totally agree! It’s amazing how something so simple can taste so good! I always have it ready in the fridge!

  53. User avatar Grunthos the Flatulent says:

    1. User avatar edmund.graham2014 says:

      5 stars

  54. User avatar Mr. Prosser says:

    5 stars
This is the most budget-friendly drink ever. I make a pitcher and it lasts all week. 10/10

    1. 5 stars
Yes!! Mugi cha is so underrated. Roasted barley is honestly the cheapest cozy drink ever—love making a big pitcher for the week.

  57. 1 star
Not sure why people drink this? It tastes like dirty water to me. 🤮

  58. User avatar yanira.bosco88 says:

    2 stars
I tried making this and ended up with mushy barley all over the kitchen. How do you keep it from going everywhere???

  59. User avatar Falmer Archer says:

    2 stars
Meh, I prefer regular tea lol. Too much work for this!

  60. User avatar carlotta.haley says:

    5 stars
Honestly, this is one of those “why didn’t I think of it” drinks. The flavor is nutty and not too sweet, which I love.

  61. User avatar jessie.oreilly75 says:

    3 stars
Mine came out a little too strong even though I simmered the full 30 min. Next time I’ll use slightly more water. Still edible though!

  62. 3 stars
It tasted kinda bland for me at first, so I brewed it a bit longer (closer to 40 min). After that it improved a lot.

    1. User avatar roxy.bergnaum65 says:

      5 stars
Good tip! I always worry mine is “under-brewed” since the directions say 30 min—40 min makes sense for a stronger flavor.

    2. User avatar paris.vonrueden47 says:

      4 stars
I tried it once and it was super bland too. I kept thinking I did something wrong, but maybe my roast barley was lighter? Brewing longer fixed it for you—gonna try 40 next.

  63. 2 stars
I followed it exactly, but it tastes kinda flat to me. Maybe my barley wasn’t roasted enough? Still drinkable though.

  64. User avatar samuel.miller says:

    5 stars
So simple but so good. I drink it when I’m feelin’ kinda sick, helps my tummy.

I tried it chilled too and it was surprisingly refreshing. The flavor is mild but nice, like a lighter coffee vibe. Will make again.

Roasted barley + water is basically magic. I didn’t have a “medium” pot so I just used a small one and it still worked.

  88. User avatar Death Hound says:

    5 stars
awesome recipie! I made this for my family and they all loved it!!! love love love!!!

    1. 2 stars
Really? It’s just barley and water, I don’t get what’s so great about it…

    2. 5 stars
So glad to hear that! It’s always a hit with my family too!

  89. User avatar nick.barrows9 says:

    2 stars
Wrong time! I only simmered 10 minutes (got distracted) and it was super bland. So yeah, you really gotta do the full 30 minutes at least.

  90. 4 stars
Simple recipe but so good! I drink it just about every day, perfect for hot days.

    1. User avatar hal.witting says:

  91. User avatar Meriadoc Brandybuck says:

    2 stars
I followed the recipe but it turned out bitter. Maybe I boiled it too long? Any tips?

  92. 2 stars
Eh, I don’t know. It just tastes like water to me. Maybe I did something wrong? I used less barley than it says.

  93. User avatar Corrupted Shade says:

    3 stars
Not gonna lie, I expected it to taste more “tea-like.” It’s kind of nutty/grainy (which is fine), but it’s not my usual cup of tea.

  94. User avatar Draugr Wight says:

    2 stars
I don’t have roasted barley, so I toasted regular barley in a pan. Worked okay, but the color and aroma were different.

    1. User avatar brant.purdy says:

      3 stars
Wait—so you didn’t roast it at all? 😅 I think regular barley will be kinda bland unless you toast it longer. Did you get it as dark as the store-roasted?

    2. User avatar Li Shenlong says:

      5 stars
Good to know! I’ve done that with what I had too—totally agree the aroma/color can shift. Next time I’ll watch the toast level more carefully.

  95. User avatar mckinley.hill61 says:

    3 stars
Could I just steep it like regular tea instead of simmering 30 minutes? I’m lazy 😅

  96. User avatar Miss Mariano Morissette says:

    4 stars
30 minutes seems too short? I simmered 60 and it came out way better. Next time I’ll stick with longer simmer time for sure.

    1. 5 stars
Totally get that—my batch also tastes flatter if I rush it. I’d trust your 60 minutes for a richer flavor.

  97. User avatar carmen.price92 says:

    2 stars
I followed it exactly and it came out kind of bitter. Maybe I boiled too hard? I’m not sure, but I won’t make it again unless I adjust the heat.

    1. User avatar Eddie the Computer says:

      3 stars
Hmm, bitter after following it exactly? Roasted barley can vary a lot by brand/roast level. If yours is darker-roasted, it’ll taste more bitter even with the same steps.

  98. User avatar raymond.prosacco48 says:

    5 stars
    Yummy!

  99. 3 stars
I heard this was good for digestion. Not sure if that’s true but it taste kinda like roasted nuts… not what I expected. 3 stars.

I don’t understand the hype about this tea! It takes too long to make. Who even has 30 minutes to wait? 😒

I get that it takes time, but it’s so worth it! The flavor is amazing once you wait. Just put it on and do something else while it brews. 😊

30 minutes? Really? Why can’t you just use tea bags? This is too much work for a drink! 😩

Huh? You didn’t say how much barley! I just dumped in a bunch and it was super strong!

My barley tea came out a little bitter. Next time I’ll simmer closer to 20 minutes and strain more thoroughly.

This recipe is a scam. I expect tea to be fast, not boil for so long! Who has that time? 30 mins for tea??

30 mins? Why not just pour some hot water over the tea bag? That’s faster! 🤷‍♂️

I get where you’re coming from, but tea can be worth the wait! Roasting barley gives it a unique flavor. Maybe try it once? 😊

Barley tea? Really? I thought it was just for soup, not for drinking. Interesting, but not for me. 🙅‍♂️

Not bad, but I think 4 cups water is too much for 1 cup barley. Next time I’ll reduce the water so it’s stronger. Otherwise it was kinda mild.

I used a little less water because I like it stronger, and it turned out great. Definitely a new staple in my kitchen.

Nice! I always wondered if cutting down the water would make it too strong, but I’m glad it still worked. I’ll try your ratio next time.

Stronger mugi cha is the best. I usually go by taste, so your “a little less” approach makes sense. Thanks for the tip!

I dunno, isn’t barley for animals? My cows would never drink this.

It’s okay, not bad. My whole family drank it but nobody went back for seconds. Maybe my barley was old? Either way, easy to make.
