8 ounces whole wheat penne pasta
1 cup dried lentils
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 zucchini, diced
1 cup cherry tomatoes, halved
1/4 cup Kalamata olives, pitted and halved
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped, for garnish


1.Cook the whole wheat penne pasta according to package instructions. Drain and set aside.
2.In a separate pot, cook the dried lentils according to package instructions. Drain and set aside.
3.In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic and cook until onion is translucent.
4.Add the diced red bell pepper, yellow bell pepper, and zucchini to the skillet. Cook for 5 minutes, until vegetables are tender.
5.Add the cooked lentils, cherry tomatoes, Kalamata olives, fresh lemon juice, dried oregano, dried basil, dried thyme, salt, and pepper to the skillet. Stir to combine.
6.Add the cooked pasta to the skillet and toss everything together until well mixed.
7.Cook for an additional 2-3 minutes, until pasta is heated through.
8.Serve the Mediterranean lentil pasta hot, garnished with fresh chopped parsley.
