Ingredients
  

  • 1 pound white fish fillets
  • 1 onion, chopped
  • 2 cloves garlic minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 2 tomatoes, diced
  • 4 cups fish or vegetable broth
  • 1/4 cup fresh parsley chopped
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the bell peppers and zucchini to the pot and cook for another 5 minutes, until slightly softened.
  • Stir in the tomato paste, paprika, and cayenne pepper. Cook for 1 minute.
  • Add the tomatoes, fish fillets, and broth to the pot. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.
  • Season with salt and pepper to taste. Stir in the fresh parsley.
  • Serve hot and enjoy!
