1 whole chicken (about 4 pounds)
2 lemons, sliced
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons olive oil
Salt and pepper to taste


1.Preheat the oven to 425°F (220°C).
2.Rinse the chicken and pat it dry with paper towels.
3.In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.
4.Rub the mixture all over the chicken, including under the skin.
5.Place the sliced lemons inside the chicken cavity.
6.Transfer the chicken to a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
7.Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
8.Serve the lemon herb roast chicken with your favorite side dishes.
