Irish Soda Bread

February 27, 2025

Irish soda bread is a classic, rustic bread that’s as simple as it is satisfying. With its crisp, golden crust and soft, slightly crumbly interior, this bread is the perfect accompaniment to soups, stews, or a hearty breakfast. Made with basic pantry staples – flour, baking soda, salt, and buttermilk – Irish soda bread doesn’t require yeast or long hours of rising. It’s quick to prepare and ideal for home bakers looking for a fuss-free, comforting bread.

The key to Irish soda bread is the use of baking soda as a leavening agent instead of yeast. The buttermilk reacts with the baking soda to create a slight rise and tenderness in the dough. The result is a dense yet soft crumb that has a subtle tang from the buttermilk. The bread is typically baked as a round loaf, and before it’s placed in the oven, a deep “X” is scored across the top. This not only adds a decorative touch but helps the bread cook evenly.

Traditional Irish soda bread is often made with just white flour, but variations can include whole wheat flour, oats, or even raisins for a touch of sweetness. Some recipes add a little sugar, while others keep the flavor savory, making it a versatile bread that can suit different tastes. It’s best served fresh from the oven, with a pat of butter, a dollop of jam, or alongside a steaming bowl of Irish stew.

While Irish soda bread is simple in terms of ingredients, it’s full of character and flavor. Its slightly tangy taste, combined with its hearty texture, makes it the perfect bread to serve on any occasion, from a St. Patrick’s Day celebration to a cozy family dinner.

This bread turned out amazing! Such a warm and hearty flavor. Will definitely make it again!

I was skeptical about the cake pan part but it worked. 40 minutes was spot on for my oven. The crust is so satisfying.

  3. 4 stars
Not gonna lie, I was skeptical about the cake pan—why not a baking sheet? But mine cooked evenly and the bottom was perfect.

  4. 4 stars
Looks simple! Wish I had known this during St. Patrick’s Day. Gonna try it soon!

This bread is sooo good! It reminds me of my grandma’s recipe. Thank you!

Looks good, but I thought it needed sugar or something. Irish bread usually is sweet, right? I might add some next time.

This bread is amazing! So easy to make and it smells fantastic while baking. Just like my grandma used to make!

Looks easy, but my bread never turns out like that. Is it really that simple or are you just lucky?

This bread really is the best! I can almost smell it through the screen! Can’t wait to make it!

I like how simple it is. The buttermilk amount was spot on for me—dough was soft but not sticky. House smelled like a bakery.

    1. User avatar arthur.mueller68 says:

      5 stars
Totally agree—this is one of those recipes where simple really means foolproof. The smell when it bakes is unreal 😍

I tried it but mine didn’t get that soft dough, more like dry crumbs. I used buttermilk from a carton—maybe I shook it less? Still tasted good though.

I don’t get why everyone loves soda bread. Mine came out dense and kinda tasteless. Maybe I did something wrong?

  10. User avatar shante.pacocha86 says:

Honestly, I burned mine. Gonna have to keep a better eye next time. 😅

  11. User avatar kenyetta.hansen says:

Just put it in the oven and hope? Kinda feel like it’s too simple to be legit, but okay I guess. Got a hollow sound, so points for science?

  12. User avatar mitchel.west94 says:

    2 stars
I tried kneading “briefly” but I got nervous and kept messing with it 😅. It turned out heavier than expected. Still edible though.

Love this recipe! I used whole wheat flour instead and it was still good. Bread for life!

    2. User avatar bernice.marks62 says:

      3 stars
Baking soda is kinda important though, right? How did it taste with that? I’d be scared it wouldn’t rise. 🤔

  15. User avatar liberal.hero says:

This bread was super easy to make! It turned out perfect for my family dinner. Thanks for sharing!

Made this last weekend—super easy, and the cross scoring actually helps it rise nicely. Mine came out a little darker but tasted perfect with butter and tea.

    1. User avatar my.luettgen72 says:

      5 stars
Glad yours turned out! The darker color can happen depending on ovens—still sounds like the bake time was right since it tasted perfect. How long did you end up baking it?

  17. User avatar Restless Draugr says:

    2 stars
Just an ok recipe, kinda bland for my taste.

    1. User avatar ShanksOnePiece says:

      3 stars
Bland? Really? It’s soda bread, not a cake! Maybe try toasting it and adding cheese or somethin?

    2. User avatar violette.braun says:

      5 stars
I actually loved it! The simplicity of the bread really brings out the flavor. Maybe you just need to add some butter or jam?

  18. User avatar Falmer Shadowmaster says:

Made this and it actually turned out like the pictures—great crust and that hollow sound test is so real. I used fresh baking soda and shook the buttermilk like the recipe said. Will bake again!

    1. 5 stars
Yes!! That hollow sound test is the best—mine used to fail until I started shaking the buttermilk too. Glad yours matched the pictures!

    2. User avatar willy.bergstrom2017 says:

      3 stars
I tried something similar but my loaf came out kinda dense… i think i maybe used baking soda that was old? also i greased the pan but should’ve floured more i guess. still, happy it worked for you!

  19. User avatar goldfish says:

    2 stars
Honestly, I don’t get the hype. It was just okay. I thought it would be more flavorful.

    1. 5 stars
I totally disagree! This bread is meant to be simple but so good! Did you try adding some fresh herbs or butter? It works wonders!

    2. User avatar morgan.moore87 says:

I dunno, I thought it was pretty good for being so easy to make. But I guess tastes differ.

Looks great! But what if I don’t have buttermilk? Can I use milk instead? Anyone knows?

  21. User avatar Gaius Helen Mohiam says:

    1. User avatar nu.hackett33 says:

I’m so glad to hear that! It’s one of my favorites too. Do you add anything special to yours?

  22. User avatar ivelisse.johnson49 says:

    4 stars
Pretty good, but my dough felt a bit dry at first. I ended up adding a splash more buttermilk and it came together. Next time I’ll trust the “soft dough” line sooner.

    1. 3 stars
Dry? Hmm. Maybe your flour was packed or your buttermilk wasn’t really shake-y. I think 1 and 3/4 cups is kinda exact though… adding extra kinda changes the bread. Still glad it worked out!

    2. User avatar rachell.franecki22 says:

      5 stars
Totally agree—mine gets dry if I’m a little skimpy with the buttermilk. Waiting for “soft dough” would’ve saved me, lol. Next time I’ll check consistency earlier.

  23. 5 stars
I followed it exactly, including shaking the buttermilk (never thought to do that lol). Texture was crumbly and moist—pretty much perfect for Irish soda bread.

  24. 3 stars
Just tried this recipe, and kinda disappointed. It didn’t rise like I expected. What did I do wrong?

  25. User avatar nancey.bins1964 says:

    5 stars
Love this recipe. Quick and simple without any fuss! 🍞👍

  26. User avatar Dr. Krystle Rosenbaum says:

Delicious!! This is the first time I’ve tried Irish Soda Bread and I’m in love. Perfect with butter!

    1. 5 stars
I’m so glad you loved it! Irish Soda Bread is my go-to for breakfast. 😊

  27. User avatar annalisa.prohaska86 says:

    5 stars
This came out so good—mine browned perfectly and the cross actually looks great. I used fresh baking soda (thank you for that reminder) and it rose nicely.

  28. User avatar benny.okuneva28 says:

I tried adding some raisins and it was a disaster. Should’ve followed the recipe exactly.

“Shake before measuring” is such a real tip. I always forget and my results used to be weird. This loaf was tender and not overly salty. Will make again.

    1. User avatar Lucio Turcotte says:

      5 stars
Yes!! I swear tiny changes like baking soda freshness make the biggest difference. Glad it came out tender and not too salty—Irish soda bread can swing either way.

  31. User avatar Draugr Thrall says:

    2 stars
What is this? No yeast? Is it even real bread? I have doubts… looks easy though.

    1. User avatar Miss Alton Ziemann says:

      5 stars
It’s traditional Irish soda bread! No yeast is normal for this recipe. It’s quick and tasty!

  32. User avatar gayle.nienow26 says:

    3 stars
Why do we need to shake the buttermilk?? Seems silly to me. 😕

    1. User avatar francene.jast says:

      3 stars
I think the shaking is just to make it feel special. 🤷‍♂️ But I usually don’t bother and it still turns out fine.

    2. User avatar Dr. Junior Gorczany says:

      5 stars
Shaking the buttermilk helps to mix the solids and liquids together, ensuring a smoother texture in the bread. It’s not silly when you think about it! 😊

  33. User avatar jeanelle.okeefe says:

    4 stars
The dough was a bit shaggy for me—had to add a tiny splash more buttermilk. Still delicious, just not as “round loaf” pretty.

  34. User avatar rubi.paucek2000 says:

    2 stars
Fine just fine, but wish it had some raisins or something

  35. User avatar basementDweller says:

    5 stars
    Delicious!

  36. User avatar jonna.kihn96 says:

    2 stars
Too salty for my taste! I used half the salt and it was still too much. Anyone else have that problem?

  37. User avatar jeanie.gibson61 says:

    3 stars
Stupid question but what’s buttermilk? Can I use regular milk? I don’t have any buttermilk!

  38. 3 stars
Good but the oven temp seems off, took longer than 45 mins. 🤷‍♂️

    1. User avatar bernard.boyle says:

      4 stars
Yeah, my bread took longer too! Maybe my oven’s off? But still tasted good!

  39. User avatar Falmer Shaman says:

    2 stars
My oven runs hot and 35 minutes wasn’t enough. Also, I forgot to grease/flour the pan at first and it stuck… so that was fun. Flavor was decent though.

  40. User avatar garry.bechtelar76 says:

    4 stars
This was my first time making bread! It came out a bit flat but still yummy. I’m learning!

  41. User avatar joey.heller55 says:

    3 stars
My dough was too sticky to knead. Maybe my buttermilk was off? I added a little extra flour and it came together eventually. Would try again.

  42. User avatar jolanda.okeefe55 says:

    5 stars
This reminds me of my grandma’s bread. No fancy yeast, just quick and comforting. I’ll be making it again for sure.

    1. 5 stars
Aww that’s exactly how I feel about Irish soda bread too—so cozy and no fuss. I always make sure my baking soda is fresh though, or it won’t rise right. Definitely trying your approach!

  43. User avatar ayanna.medhurst44 says:

    2 stars
I used baking soda that was probably old (oops) and the loaf didn’t rise much. Lesson learned: fresh baking soda matters a lot. Flavor was still okay though.

    1. User avatar Magrathean sperm whale says:

      5 stars
Oof, yeah old baking soda is such a silent killer 😅 Glad it still tasted okay though—your lesson is spot on.

  44. User avatar garry.deckow35 says:

    4 stars
The cross scoring step is weirdly satisfying. Mine expanded nicely in the oven. Tastes good plain, but I’m thinking butter + jam would be dangerous (in a good way).

    1. 5 stars
Yes!! The cross scoring is oddly therapeutic 😂 Mine also bloomed a lot, like it found its way in the heat.

    2. User avatar theresia.lindgren70 says:

      3 stars
Butter + jam sounds like too much sugar for soda bread… but “dangerous (in a good way)” is kinda convincing. Gonna try it with *light* jam maybe.

  45. 2 stars
I don’t know why everyone loves this. Mine turned out super dry and crumbly. What did I do wrong?

  46. 5 stars
Perfect recipe! Just made it and my kids loved it. They ate it all before I could even butter it 😆.

  47. User avatar jamie.ferry says:

    3 stars
Honestly, it tasted good but I think I messed up the baking soda. I used one that was probably old and it didn’t rise much. If you’re unsure, check freshness like the recipe says.

    1. User avatar Claire Paucek says:

      5 stars
Totally makes sense—old baking soda can definitely make it not rise. Next time, do a quick freshness check and you’ll be golden. The hollow sound test is such a lifesaver too!

  48. User avatar genaro.turcotte says:

    3 stars
I don’t know how to knead dough! Can I use a mixer instead? Help!

  49. 3 stars
Not bad, but I think my soda was old. It didn’t rise much. Will try again!

  50. User avatar Nedra Durgan I says:

    3 stars
I dunno, this turned out kinda dry for me. Maybe I didn’t measure the buttermilk right? I’ll give it another shot.

  51. 4 stars
Simple and quick! Just like my granny used to make! Will definitely make again.

  52. 4 stars
Good, but mine got a little too browned on top at 425°F. Next time I’ll loosely cover with foil halfway through. Still tasted great with butter.

  53. User avatar Gag Halfrunt says:

    2 stars
Honestly, mine came out kinda bland. I know it’s supposed to be simple, but I feel like it needs sugar or something. Wouldn’t call it a wow for me.

  54. User avatar christiana.marquardt90 says:

    3 stars
easy to make! but my dough was sticky, like super sticky, might’ve added too much buttermilk.

  55. User avatar brian.gerhold8 says:

    4 stars
I don’t understand why they call it soda bread. I didn’t taste any soda??

    1. 4 stars
The soda in soda bread comes from baking soda! It’s what helps it rise without yeast. Give it another try!

    2. User avatar kirby.breitenberg says:

      3 stars
Soda? Like, fizzy soda? I thought that too at first but it’s just the term. Taste is still great, don’t worry!

  56. 5 stars
The scoring part freaked me out with the sharp knife lol but it actually looked cool. Mine cracked a bit more than I expected—still delicious with butter.

    1. 5 stars
Lol I totally get that—those scoring steps always feel a little too intense at first. If it still tastes great, I’d say you nailed it. I’ve had mine crack more too; I think the loaf expands where it wants 😄

  57. 1 star
I forgot the salt, oops! It didn’t taste right. Lesson learned.

    1. User avatar h4ck3RR says:

      4 stars
Salt really makes a difference! Good on you for learning from it! Next time will be better!

  58. User avatar taylor.schaden1950 says:

    5 stars
Super easy recipe. I don’t even have fancy stuff, just flour and buttermilk. I added a little caraway seed and it tasted like the store-bought kind.

  59. 3 stars
I tried measuring buttermilk “after shaking” and maybe I shook too much? It was fine, just wetter dough so I added a bit more flour. Would make again.

  60. User avatar tommye.carter11 says:

    4 stars
    5 stars. Cross looks awesome.

  61. User avatar Corrupted Shade says:

    5 stars
Definitely a keeper! My family loved it with butter.

    1. 5 stars
Glad to hear it! Butter makes everything better. How did you serve it?

  62. User avatar Gurney Halleck says:

    3 stars
425°F is a lot! Mine cooked too fast on the outside, and the center was a little gummy at first. Next time I’ll start checking at 30-35 minutes.

  63. 5 stars
This turned out so good—my kitchen smelled like comfort. The deep cross definitely helps, and it was nicely browned by 40 minutes.

    1. 4 stars
40 minutes and nicely browned? Dang, I always think it’ll be undercooked. Also I used baking soda I *think* is fresh… maybe that’s why mine gets weirdly pale 😅 Still, the hollow bottom test helps.

    2. User avatar Daedric Prince says:

      5 stars
Yes!! That cross really does something—mine even browned faster around it. Glad it hit that comfort-smell vibe for you 😊

  64. User avatar verline.wiza1972 says:

    3 stars
I’m skeptical about the cake pan part. I used a normal baking sheet and it spread a bit. Flavor was fine though. Next time I’ll stick closer to the pan size.

  65. User avatar su.johnson says:

    4 stars
The hollow-sounding bottom test saved me—mine was ready right around 40 minutes. I love recipes that give that kind of cue.

  66. User avatar ferdinand.herzog says:

    4 stars
Pretty solid recipe. I messed up one part—my oven runs hot, so I started checking at 30 minutes. Still turned out good, just a little darker. Buttermilk + soda combo is key.

    1. User avatar Barliman Butterbur says:

      4 stars
Buttermilk + baking soda is literally the whole science thing, so yeah makes sense. My oven does the same—usually I just burn the top and then pretend it’s “rustic” lol. Next time I’ll watch it sooner.

    2. User avatar jaime.turner75 says:

      5 stars
Thanks for the tip! I’ve always wondered if checking early is okay with an oven that runs hot. “Bottom sounds hollow” is a great doneness test too.

  67. User avatar louetta.denesik says:

    4 stars
425°F seems high, I almost lowered it. Glad I didn’t—mine browned fast though, so I’d say keep an eye on it around the 35-minute mark.

  68. User avatar blanca.dare60 says:

    2 stars
Not gonna lie, mine didn’t sound hollow, more like… damp bread. I think my baking soda was old (didn’t shake it, lol). Also kneading for “just enough” is hard.

  69. User avatar w00d_ch0p says:

    2 stars
Kinda bland for me even with salt. I might add a pinch of sugar or a little more salt next time. Bread is bread though.

  70. 4 stars
Followed the steps exactly and it was a little dense, but still tasty. Maybe I over-kneaded? Next time I’ll be gentler. Also, the hollow sound trick works!
