Ingredients
  

  • 4 pieces orange bell peppers medium-sized
  • 1 cup cooked rice white or brown
  • 1/2 pound ground beef lean
  • 1 cup Tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese cheddar or your choice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Cut faces into the peppers to resemble Jack o’ Lanterns.
  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • In a large bowl, combine the cooked beef, rice, tomato sauce, garlic powder, onion powder, salt, and pepper.
  • Stuff each pepper with the beef and rice mixture and top with shredded cheese.
  • Place the stuffed peppers in a baking dish and cover with foil.

    Not gonna lie, I’m skeptical that stuffed peppers at 350°F cook through in only 25-30 minutes. The flavor was good, but my rice was a bit dry at the end. Maybe more sauce or a little water would fix it.
