My kids loved this, which is a miracle! Haha. Even asked for seconds. Good job!
1) Rice bake sounds good but 2) my oven temp runs hot so 40 min turned into 25 min and it burned a little. Fixable though. Flavor is great if you watch it.
Totally agree—40 min can be too long if your oven runs hot. I’d start checking at ~20–25 min and pull it when it’s just getting golden. The flavor combo sounds awesome though; I’ll definitely watch it next time.
I accidentally used green olives instead of Kalamata. Still turned out good!
Green olives are actually a good idea! They add a different flavor. Glad it still turned out well!
Okay wow, this was actually fire. I used leftover rice and it came out golden on top like the recipe says. Next time I’ll add parsley on top, for sure.
Nice and fresh! Perfect for summer picnics. 😍
Tried this but my oven is old and it burned everything. Maybe need to adjust the temp.
Easy recipe, but I accidentally burned it… Still good though!
This turned out way better than I expected—crispy top with all the Mediterranean flavors. I added a little lemon juice at the end and it was perfect.
Love this! The crunchy top + feta/olives sounds so good. Did you cover it at all while baking, or bake the whole time uncovered?
Made it exactly as written and it turned out pretty good. I do think 35 minutes might be a bit short if your baking dish is deep—mine needed closer to 45 for that golden top.
I don’t know. It seems a bit bland to me. Maybe more spice next time?
Simplicity at its best! Can I use brown rice instead? 🤷♂️
I think it’s missing some spice. Next time I’ll add hot pepper, for sure!
Idk why everyone loves this recipe. It was really bland.
Yum! I added chicken to mine. You should try it!
I like Greek food, but baking cucumbers feels weird to me. Still, texture was okay after cooling—just don’t expect crunchy cucumber.
Baked this for my family and they loved it! Will make again.
Just 2 rice?? I thought I needed 22 cups! 😂
This is absolutely delicious! The feta adds so much flavor. Will definitely make this again!
Super salty. I used big chunks of feta and it took over everything. If you’re watching sodium, go easy on the cheese.
Super easy and delicious! The feta really makes it pop. Will definitely make again!
Sounds good, but not sure about the olives. They’re kinda strong for me. Anyone else feel that way?
I agree! Feta adds such a great flavor. It’s one of my favorites now too!
This recipe was a huge fail for me. The rice came out mushy.
Quick and easy! A perfect side dish for chicken. Will make again!
I’m skeptical about “crispy” in a rice bake—like, how? But wow… the top did crisp a bit and the vinegar dressing actually made it taste fresh instead of heavy.
Too many olives? I don’t know. My sister loves them but I couldn’t handle the flavor. Next time, less!
1/4 cup olives is not enough olives for me lol. Also I was out of red wine vinegar so I used apple cider vinegar—still okay.
Good base recipe, but I swapped the olives for capers and it still turned out great!
This is such a flavorful dish! Loved the feta and olives together. Yum!
Super easy and healthy! My kids even liked it. Will make again.
Took way longer to bake than it said, but worth the wait!
This was so delicious! The flavors are amazing and the feta cheese really adds a nice touch. My family loved it!
This was amazing! So flavorful and easy to make. My family loved it!
How many servings does this make? Seems like not enough.
Not as good as I expected… it just tasted like rice. Needs something more.
It’s just rice… like what did you expect? It’s a rice bake after all. Add more stuff next time!
I think the flavor could be improved with more spices! Maybe try adding some garlic or chili flakes? Just saying…
Flavor is really bright and Mediterranean. Only tweak I’d make is adding a bit more oregano (or even garlic) because I wanted it punchier.
Totally agree—this is super bright. I usually bump the oregano a little too (and sometimes add a small clove of garlic) and it really levels it up. Great tweak!
Hm I’m not sure about adding more oregano or garlic—mine already tasted kinda strong from the vinegar and olives. Maybe just add salt/pepper and let it sit longer next time?
Y’all, can you use white rice instead? I don’t have any cooked rice. Help!
Absolutely delicious! Perfect for a summer dinner!
Totally agree! This dish is a hit at my summer BBQs! 🌞
Wait, is this really Greek? Rice doesn’t seem Greek to me. But okay…
I’m not sure about this one. The combination seems off. 😕
Not my fave, tasted too vinegary for me. I’ll stick to plain rice.
I added chicken and it turned out great. Not what I expected from a rice dish!
Chicken in a rice bake? Interesting choice! I usually stick to the original but good to know it worked for you!
It sounds good and all, but that whole chicken thing is weird. Isn’t Greek rice supposed to be vegetarian?
I followed the steps but my rice didn’t get “golden brown and crispy” at all. Maybe my oven runs cool? Still tasted good, just not the texture I wanted.
Wasn’t a fan… it tasted too salty for my liking.
I thought it was delicious! Maybe you added too much salt by accident?
YUMMY!! I added some chicken and it was delicious. Will make again!
Delicious, but I think a pinch of garlic would take it to the next level!
Rice bake? What? Never heard of this before. Wouldn’t just fried rice be better?
Rice bake is actually really good! It’s more about the flavors you get with all those ingredients mixed together. Just try it, you might be surprised!
Fried rice is fine, but this is something completely different! It’s like a warm rice salad. Give it a shot, you could like it!
Greek rice bake? Wrong country, should be pasta bake. LOL! But I guess it’s still okay.
Haha, I get where you’re coming from! But honestly, I love the rice theme in this dish. Makes it unique!
It was alright. Not exciting, but it filled me up. 🤷♂️
This looks amazing! Can’t wait to try it this weekend.
Not my fav. I find the olives too strong. Next time, I will skip them.
This was super easy to make! I love the flavors. Definitely recommend!
I made this dish last night, and my family loved it too! The flavors are just perfect together.
I dont like olives, can I just leave them out? 🤔
This was such a nice twist on a rice bake—feta + olives is always a win. I baked mine closer to 40 minutes for that golden top and it came out great.
Did I read that right? You bake rice?!? Sounds messy. Might try it though.
Super easy recipe, I had to put a bit more vinegar to give it a zing. 😋
Eh, I was skeptical about rice bake. It turned out mushy and bland. Wouldn’t recommend.
I think there’s too many ingredients. Just rice n cheese is better! 👎
Not a fan of feta, does it ruin the recipe? 🤔
Feta is really salty and strong, maybe it does ruin it for some people. Just don’t put it in if you don’t like it.
I think the feta adds a nice flavor, but if you don’t like it, you could leave it out or try something else! Maybe a little shredded mozzarella instead?
Yum! Even my kids loved it! 😍 I’ll be making this often!
I don’t know about mixing all these ingredients. Seems a bit odd. Maybe I’m just not a rice bake person.
Easy and tasty! Just what I needed after a long day. Thanks for sharing! 🙂
I love Greek flavors, but mixing salad ingredients then baking feels weird to me 😅 Still, if the top gets crispy, I can see the appeal.
Hmm, baking cucumbers seems wrong though 😅 they’ll get watery. I’d maybe add the cucumber after baking or swap it for something less watery. But I do like the feta/olive combo!
I totally get that it sounds odd, but I think it’s like a Greek-style casserole twist on salad. The feta + olive oil really helps it get that golden, crispy top 😋
Greek stuff? Not my thing. But my mom liked it.
Did it have too much rice? 🤔 Seems like it’s missing some protein, like chicken.
Meh, it was okay. I think I added too much wine vinegar. Next time less for sure. 🤔
It was okay… felt like something was missing. Maybe more spices?
I totally agree! It definitely needs more flavor. Some garlic or even a pinch of chili flakes could really make a difference!
This was absolutely delicious! The flavors blended so well together, and my family loved it!
Baking rice? Is that even a thing? Sounds weird to me.
Couldn’t find Kalamata olives so I used green ones and it was still tasty. Not exactly the same vibe, but honestly it worked. Also I forgot to let it cool and it was messy.
Yum! 🍚👌
Just okay. I mean, it’s just rice and stuff. This recipe might not be for everyone.
I totally disagree! This dish is full of flavor and not just rice. The feta and olives make it special. Love it!
