  • 1 cup chopped tomatoes
  • 1 cucumber peeled and diced
  • 1 red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano

    1) Rice bake sounds good but 2) my oven temp runs hot so 40 min turned into 25 min and it burned a little. Fixable though. Flavor is great if you watch it.

      Totally agree—40 min can be too long if your oven runs hot. I’d start checking at ~20–25 min and pull it when it’s just getting golden. The flavor combo sounds awesome though; I’ll definitely watch it next time.

    Made it exactly as written and it turned out pretty good. I do think 35 minutes might be a bit short if your baking dish is deep—mine needed closer to 45 for that golden top.

    Flavor is really bright and Mediterranean. Only tweak I’d make is adding a bit more oregano (or even garlic) because I wanted it punchier.

      Totally agree—this is super bright. I usually bump the oregano a little too (and sometimes add a small clove of garlic) and it really levels it up. Great tweak!
