Sometimes the simplest dishes are the ones that make the biggest impression, and cucumber and mint salad is a perfect example. Crisp, cool cucumbers meet fragrant fresh mint in a light, zesty dressing that awakens the palate and complements just about any meal. Whether served as a starter, side dish, or part of a summer picnic spread, this salad is always a crowd-pleaser.
The star of the show is, of course, the cucumber. Its natural crunch and subtle flavor make it the perfect base for a refreshing dish. English cucumbers work especially well thanks to their thin skin and minimal seeds, but any type will do. Slice them thinly or into half-moons, depending on the texture you want.
Fresh mint brings a burst of coolness that pairs beautifully with the cucumber. The leaves are typically torn rather than chopped to preserve their delicate oils and aroma. Together, these two ingredients create a clean, cooling flavor profile that’s especially welcome on hot days or when serving spicy main dishes.
The dressing is light but full of flavor. A splash of lemon juice or white wine vinegar adds brightness, a drizzle of olive oil brings a hint of richness, and a touch of salt and pepper balances everything out. Some variations include a spoonful of yogurt for a creamy twist, or a pinch of sugar to round out the acidity.
This salad is best served chilled and made shortly before serving to keep the cucumbers crisp. You can elevate it with extras like thinly sliced red onions, crumbled feta, or a handful of pomegranate seeds, but the original version shines in its simplicity.
Perfect with grilled meats, spicy dishes, or as a palate cleanser between courses, cucumber and mint salad is a timeless recipe that proves fresh ingredients don’t need much to be delicious. Light, bright, and incredibly easy to make, it’s a recipe worth keeping in your rotation year-round.

Tastes better than it sounds, really liked it!
I dunno, sounds kinda bland to me. Cucumber and mint? Where’s the flavor at?
I’ve always been skeptical about cucumber salads, but this one sounds refreshing! Will give it a try.
I dunno, it feels kinda bland. Might need some more dressing or something?
Tastes like nothing. Just cucumbers. I expected more flavor.
Cmon! How can you say it tastes like nothing? It’s a salad! It’s not meant to be a full meal.
I think it’s supposed to be light and refreshing. Sometimes simple is best! Maybe add some feta or tomatoes?
This salad is so refreshing! I love the combo of cucumber and mint.
I think you forgot to say how many servings this makes? 🤔
Good catch! 😊 Usually, recipes say it makes about 4 servings.
Servings? Who cares! It’s just cucumbers and mint, just make it! 🤷♂️
Not a fan of cucumbers… next time I will try it with carrots.
But cucumbers are so refreshing! Carrots are kinda sweet, it won’t taste the same.
That’s a great idea! Carrots will add a nice crunch too. Hope it turns out tasty!
So easy! I added some feta cheese and it was even better!!
That’s a great idea! Feta adds a nice creaminess to it. I’m definitely trying that next time.
Yum! I made this while cooking for my vegan friends and they loved it! Will share the recipe! 🙂
That’s awesome! It’s great to hear your friends enjoyed it. I bet it was refreshing!
This salad was refreshing and easy to make! Perfect for a hot day.
I tried this but it was kinda bland. Needs more flavor imo.
Omg, I love mint! This was delicious!
I didn’t have mint, so I used basil instead. It was still nice, but not the same.
Basil sounds interesting! I might try that next time. Thanks for sharing your twist!
I dunno, man. Basil with cucumbers? That’s kinda weird, don’t you think?
Not bad, but my kids were like ‘eww!’} Should’ve added some cheese or something.
Kids can be picky. But I think it’s fresh and healthy, so maybe just keep offering it!
I totally get it! Cheese would make anything better. Try adding feta next time! 😋
This salad is sooo refreshing! Perfect for summer days. I added some feta cheese too, yum!
I love that you added feta! It makes everything better. Can’t wait to try this myself.
Cucumbers? Seriously? They taste like water! Maybe with a little chili it’s better, idk.
Yum!
Why do you peel the cucumbers? I always eat the skin. Makes it crunchier!
Did you know cucumbers are 95% water? This is a great way to hydrate!
Tried this tonight—pretty simple, but the flavor really pops. I didn’t peel my cucumbers and it still worked great. Would absolutely make again.
Maybe I’m doing it wrong but mine tasted kinda sour—would’ve helped to add a pinch of sugar? Also I didn’t chop the mint fine enough. Still edible though.
So glad it worked for you! I always like skipping peeling too—gives it a little crunch. 😄
I really loved this recipe! Quick to prep and super yummy. Made it for a picnic.
Easy and healthy. Just make sure to chop the mint real fine.
I tried this with some extra garlic and it turned out great! The mint really makes it fresh!
I dunno, I thought cucumbers were supposed to be crunchy. This looks kind of mushy. 🤔
I don’t like cucumbers. Can I use carrots or maybe lettuce instead?
This salad is so refreshing! Perfect for summer days.
My cucumbers got watery, and the salad felt kinda watery after chilling. Maybe I should salt them first? Still tasted okay though.
Yeah, salting first can help a lot. If you slice them and sprinkle with a little salt, let them sit 10–15 min, then pat/dry off the extra moisture before tossing—your salad should stay less watery after chilling. Also, thicker slices or fewer/shorter chill times can help too.
Why using fresh mint when u can use dried? Anyway, it turned out good.
Mint is like the best herb ever! I even put it in my drinks. 10/10!
This salad is so refreshing! Love the mint taste!
Easy to make and very fresh. But a lil bland for my taste, could use more seasoning.
I totally get what you mean! I added some feta and it made it way better. Seasoning makes all the difference! 🧂
Just cucumbers and mint… really? I expected more. Disappointed.
I left out the olive oil. Still tasted good, but I think it helps.
I used dried mint because that’s what I had… definitely not the same. Still edible, but it lost that fresh flavor. Fresh leaves are the key.
