1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1/4 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Butter or oil for cooking
Maple syrup for serving


1.In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
2.In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract.
3.Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; it's okay if there are a few lumps.
4.Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
5.Using a 1/4 cup measuring cup, pour the batter onto the skillet or griddle. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown.
6.Repeat with the remaining batter, adding more butter or oil as needed.
7.Serve the pancakes warm with maple syrup.
