When you’re looking for a bold and satisfying meatless meal, this chipotle veggie fajita bowl delivers everything you could want: smoky heat, vibrant veggies, and layers of flavor in every bite. It’s the kind of dish that makes you forget all about takeout.
At the heart of this bowl are the fajita-style vegetables. Think charred bell peppers, sweet red onions, and tender zucchini, all tossed in olive oil, garlic, lime juice, and smoky chipotle seasoning. Roast or sauté them until they’re slightly caramelized but still full of bite. This mix brings a depth of flavor that’s both spicy and a little sweet.
The base is up to you. Brown rice, cilantro-lime rice, or even quinoa all work well here, soaking up the chipotle-laced juices from the veggies. Add a spoonful of black beans or pinto beans for extra protein, then build on the layers with fresh toppings.
Avocado or guacamole brings that creamy richness, while fresh pico de gallo or chopped tomatoes add a burst of brightness. A handful of shredded lettuce or cabbage gives it crunch, and pickled jalapeños can kick the heat up another notch. Don’t forget a drizzle of chipotle-lime crema or a simple squeeze of lime over the top to tie everything together.
The beauty of this fajita bowl is its flexibility. You can meal prep the roasted veggies and beans ahead of time, then just assemble your bowl when you’re ready to eat. It’s also completely customizable, whether you’re going vegan, vegetarian, or just trying to squeeze more veggies into your week.
This chipotle veggie fajita bowl is a great way to enjoy Tex-Mex flavors in a healthy, hearty format. It’s filling without being heavy and spicy without overwhelming your palate. Whether you’re packing lunch, planning dinner, or hosting a build-your-own bowl night, this recipe checks every box: colorful, quick, and completely craveable.

Ingredients
- 1 tbsp olive oil
- 1 onion sliced
- 1 bell pepper sliced
- 1 zucchini sliced
- 1 cup cooked rice
- 1 cup black beans drained and rinsed
- 1 tbsp chipotle powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 avocado sliced
- 1/4 cup cilantro chopped
- Lime wedges for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onion, bell pepper, and zucchini. Cook for 5-7 minutes, until the vegetables are tender.
- In a small bowl, combine the chipotle powder, cumin, paprika, garlic powder, salt, and pepper. Sprinkle the spice mixture over the vegetables and stir to coat.
- Add the cooked rice and black beans to the skillet. Cook for an additional 5 minutes, until heated through.
- Serve the fajita mixture in bowls. Top with sliced avocado, chopped cilantro, and a squeeze of lime juice.
- Enjoy!
Not bad, but it needed more salt in my opinion. Also I don’t usually rinse black beans, so I maybe should’ve followed that part more closely.
I agree—mine was a little bland too until I added more salt at the end. I also kept the chipotle a touch lighter than the recipe and it still had flavor.
Huh, I don’t rinse black beans either 😅 I kinda figured it’d be fine. This still tasted good, but my texture was more “bean-y” and less smooth. Maybe you’re right to follow it closer.
I didn’t have black beans, so I used kidney beans. Still turned out fine!
Easy and yummy. 10/10!
I tried something like this but I think 5 minutes for the veggies might be too short? Mine needed closer to 10. Still sounds tasty though!
Totally agree—this looks super easy and those chipotle flavors must be amazing with the avocado. Yum! 😋
Bowl was bland even with the spices. maybe my chipotle was old. Also avacado went brown fast—i should’ve sliced last minute.
I think the avocado browning prob changed the whole vibe, lol. next time try tossing it with a little lime juice before serving. also… 1 tbsp chipotle powder seems like a lot? I only use like a tsp and it’s plenty spicy.
Ugh, that’s frustrating! Your notes sound super spot-on—if the chipotle powder was stale or the spices sat too long, the flavor can go totally flat. I also find it helps to bloom the spices in the skillet for 30-60 seconds after you mix them with the veg, and definitely salt to taste at the end.
Healthier than takeout for sure. I wish there was an option for adding corn or peppers, but the base recipe is a great template.
This was so good! I loved the spice mix, it really brought out the flavors! Definitely making this again.
I’m glad you loved it! The spice mix really is the star of the show. Makes veggies taste so much better! 😊
Pretty good, but 1 tbsp chipotle powder felt a bit too intense for me. Next time I’ll use less or mix it with more paprika.
Five stars. Avocado on top is mandatory. Boom.
I’m skeptical about zucchini in fajitas, but honestly it was fine. Texture was soft though—maybe thicker slices would help.
Was kinda bland for my taste, y’know? Maybe adding some cheese would help? Just a thought.
Easy peasy! Just took 30 min and looks great. I mean, who doesn’t love a bowl of veggies?
I dont like mixing beans with my rice. Unappetizing!
I made it but i think I overcooked the zucchini and it got mushy. Flavor was there though—next time I’ll watch the timing better.
This is such a solid weeknight bowl—love how the chipotle spices really coat everything. The avocado + lime combo is chef’s kiss.
Pretty good, but my veggies took longer than 5-7 minutes to get tender (maybe my pan was too hot/crowded). Still tasty though—could see adding corn or fajita seasoning if you like it louder.
Not sure about the cumin amount—mine tasted a bit “earthy.” Still ate it all though 😅
Quick meal and good but I added chicken for protein. Not strictly veggie anymore lol!
I might’ve mixed up the spices… tasted weird. Gotta follow the recipe next time. LOL!
I followed it exactly and it was… fine. Kinda bland until I added more lime and salt. Not sure if my chipotle powder was weak.
I totally get that—mine was also kind of “meh” at first. I think the chipotle + cumin amount is fine, but the salt is usually what makes it pop. Next time I’d taste as it cooks and add a little more salt (and maybe a bit more chipotle) before the rice/beans go in. Also, if your chipotle powder is older or milder, that could explain it. Lime helps a ton too—glad you found that fix!
Zucchini??? Ain’t nobody got time for that. I used corn instead.
Simple and quick! Perfect for busy weeknights. I added chicken and it was even better! 🙌
I thought it was good, but a bit too spicy for my kids. Next time, I will use less chipotle powder.
Solid recipe. I wish the instructions said whether to use medium-high heat at step 2. Took me longer than 7 min for the zucchini to soften.
Lime juice is a must!!! Doesn’t taste the same without it!
Really? I don’t think lime is that crucial. I’ve made it without and it was fine.
Totally agree! Lime just brings everything together, it’s like the magic ingredient! 🌟
I’m skeptical about putting zucchini in fajitas—felt a little watery. Taste was fine though, just not the texture I expected.
Totally get that—zucchini can turn watery if it releases too much liquid. Next time I’d salt it lightly, let it sit 5–10 min, then pat dry and cook it a bit hotter/longer to drive off moisture. Maybe also skip adding it too early with the onion/pepper.
Interesting… I always thought zucchini was kinda soggy in fajitas too 😅 But your bowl concept makes sense. Maybe cook the zucchini separately? Mine usually comes out watery even when the taste is good.
too many greens for me! wth is a chipotle anyway? I just used ketchup, lol.
Delicious!!! 😍
I don’t know about the spices, this seemed a bit bland to me. Maybe add some hot sauce?
I think the spices are just fine! Maybe you just need to adjust to the flavors? Adding hot sauce can spice things up!
I tried this without the beans because I’m allergic. Still turned out great! 🙂
Simple and quick recipe! Perfect for a busy weeknight. Thumbs up from my family!
Chipotle powder is my favorite! I think this is gonna be my new go-to dish! 👍
I can’t wait to try this! Chipotle powder really brings the flavor. 🌶️
I was skeptical about chipotle powder with just veggies, but wow—smoky and satisfying. My whole family went back for seconds.
I didn’t have zucchini so I used mushrooms. Still delicious—great idea for meal prep. Goes well with some extra lime and hot sauce.
Pretty tasty and easy. I used a little extra smoked paprika because I love the depth. Would do again for meal prep!
Yes! Extra smoked paprika is the way—so much more depth. Glad it works well for meal prep too. 😄
Honestly? It’s fine, but fajita usually has more color and char. I’d broil the veggies or use a hotter skillet next time.
I’m skeptical about how much flavor just comes from spices, but wow, it really does. My family asked for seconds. Didn’t even miss the meat.
This came out so flavorful! I love how the chipotle and cumin actually cling to the veggies. The lime at the end really pulls it together.
The spice mix is great, but my veggies took closer to 10 minutes to get tender. Still worth it, just keep an eye on the pan.
My kids ate it (rare win). I cut the chipotle down to 1/2 tbsp and it was perfect. Will make again for sure.
These flavors are legit. The chipotle + cumin combo makes the whole bowl taste like it came from a real fajita spot. I added a little extra lime and it was perfect.
Yes! The chipotle + cumin combo is the real magic. I’m glad the extra lime worked for you—mine always needs a little brightness too.
Pretty good weeknight meal. The veggies cook down nicely, but I found it needed more salt than the recipe says. Still would make again.
Totally agree—this is a solid weeknight bowl. I also added a bit more salt (and a squeeze of extra lime) and it really brought the flavors together. Would make again too!
Hmm… I’m not sure about the chipotle amount. I followed it and it tasted a little flat to me, like it needed more spice AND more salt. Next time I’ll double the chipotle powder but go easy on everything else so it’s not too smoky?
My first try I forgot to rinse the black beans (oops). Still ate it, but it was way too salty. Learned my lesson lol.
Easy peasy and good! I used quinoa instead of rice, turned out fine.
Not bad, but my rice dried out a little in the pan after adding it. I think I needed a splash of water/soy sauce to keep it moist. Flavor was still solid.
It’s fine but kinda bland for me. I followed the salt/pepper “to taste” and still felt like it needed more acidity—maybe more lime or a splash of something. Also, my zucchini got a little mushy lol.
Totally get that—this is one of those recipes where “to taste” can still feel flat. I usually add a little extra lime right at the end and sometimes a tiny splash of apple cider vinegar to wake it up. Also zucchini gets mushy fast; next time I’ll do it in a hotter pan for less time or cut thicker pieces.
This is amazing! So much flavor, and so easy to make. My family loved it!
I followed it pretty much exactly, but I added a little extra cumin and it tasted even better. Veggies stayed nice and tender.
I tried this recipe but forgot the lime. It was okay but not great. Next time, I’ll do better!
Meh. Veggies were fine but it didn’t feel like “fajita” enough… also I forgot the lime and then it was just bean rice with peppers lol.
Pretty good, but I think 5-7 minutes isn’t enough for the zucchini to soften the way I like. I cooked mine closer to 10 and it turned out better.
I cooked mine 5-7 and it was fine? maybe depends how thick you cut the zucchini… also my pan was hotter so maybe that helped.
Totally agree—zucchini can be stubborn. I usually go closer to 10 too, and the texture is way better for bowls like this.
I tried it without the avocado because I was out… BIG mistake. Couldn’t get the creaminess like they said.
Oh nooo 😭 the avocado really does make it—like that creamy balance with the chipotle. Next time I’d use something similar if you’re out (maybe a little plain Greek yogurt or even extra lime + olive oil).
Mine came out all mushy. Probably cooked it too long or something. Will try again.
OMG delicious 😄 I used brown rice and it still worked. Avocado on top = mandatory, don’t skip it.
Not gonna lie, I was skeptical about chipotle powder with rice/beans, but it actually works. Cilantro makes it feel fresh. Next time I’ll use a spicier chipotle if I can find it.
I’m not convinced about putting beans + rice in the same pan for 5 minutes—won’t the flavors just sit on top? But honestly it turned out okay.
Wow! Cheap ingredients, big flavor. I even meal-prepped it and it reheats great. 10/10 would not skip the lime.
My kids loved it! Even the picky eater finished everything! 😍
That sounds amazing! I can’t believe even the picky eater liked it! 😄 I’m definitely trying this recipe.
Really? My kids are super picky too, I doubt they will eat this. But good for yours! 🥴
Pretty good, but I found it a bit spicy (my chipotle powder must be strong). Next time I’ll reduce it or use mild paprika instead of regular. Still tasty though.
Yum! I ate it all by myself, so good! 😋
I love this recipe too! The spices are perfect! 🌶️
Sounds good but I don’t like beans. Can I skip them?
Made this tonight and it was shockingly good. The chipotle + cumin combo is legit, and the lime at the end pulls everything together. I used brown rice and it still worked.
Super easy and the spices smell amazing while cooking. I used fresh cilantro and it made everything feel brighter. 10/10 for weeknights.
This recipe changed my life! Very filling and healthy. Cooking it again for sure!
The spice level was a little intense for me. Next time I’ll cut the chipotle powder in half and maybe add a bit more salt at the end instead of upfront.
Good call—chipotle can be punchy. Cutting it in half should make it way more balanced. I like the idea of salting at the end too; helps you control it.
I dunno, I’d keep the chipotle full strength—sounds perfect! But yeah if it’s too hot, reduce chipotle and add salt later. Also how long did you cook the spices? I usually let them toast 1 min so they don’t taste sharp.
I tried this and… it came out a little watery? Not sure why. Maybe my zucchini was too wet. Next time I’ll sauté longer.
I skipped the avocado and cilantro. Didnt notice much difference, lol.
Kinda tastes like taco leftovers in a bowl (affectionate). Would recommend if you’re craving something filling but meatless.
I know exactly what you mean 😂—like taco leftovers, but in the best way. The chipotle + cumin combo really does that smoky “fajita” vibe. Meatless but still super filling.
Chipotle + cumin combo is legit. The avocado and cilantro balance it perfectly. Definitely adding to my rotation.
Chipotle powder + cumin is my go-to, but I wish there was something for more smokiness like smoked paprika or adobo. Still good and easy.
Delicious and super quick for a weeknight. I used frozen peppers and it still turned out. The cilantro + lime is the finishing move.
I’ve never cooked zucchini before, but it turned out really good! Who knew? 😄
That’s awesome! Zucchini is so versatile. I was nervous the first time too, but it’s super easy once you try it! 👍
Really? Zucchini’s good? I always thought it was kinda bland. Maybe I should give it another shot.
I’m skeptical about the chipotle powder amount. 1 tbsp sounds like a lot, and it was overpowering for me. If you like bold smokiness, you’ll be happy.
I followed the recipe exactly and it turned out bland. Maybe I used old spices? I think it needs extra salt or some chili sauce.
I’m obsessed with bowls like this—quick, filling, and it doesn’t taste like ‘diet food.’ Avocado on top is mandatory.
Yes! This looks exactly like what I want after a long day—fast, filling, and still tastes legit. The avocado + lime combo is the move.
I like the idea but 1 cup cooked rice feels like a lot? I always do like half, otherwise it’s too heavy. Also chipotle powder can be super spicy so go easy.
It was pretty good, but I used too much salt by accident. 🤦♂️
Chipotle powder is expensive where I live so I only used half. Wish I had committed to the full amount—still tasty, just less “fajita” flavor.
Not bad, not amazing. The recipe is fine, but mine got kind of dry since I cooked the rice too long in the skillet. Still edible though.
Not sure about the chipotle powder. It made it too spicy for me. Maybe I should have used less.
I think the chipotle powder is great! Just use a little less if you’re sensitive to spice. It’s all about balance!
I think the cumin amount is a bit high? It tastes kinda earthy and not sweet/spicy like I expected. Could be my brand of spices though.
Huh, I thought chipotle powder would be the main flavor. Maybe you used regular chili powder instead of chipotle? Also 1 tbsp chipotle + 1 tsp cumin seems like a lot—could explain the “earthy” taste. Try less cumin and more lime at the end!
Totally could be the cumin/brand. I’ve noticed some cumin is super earthy if it’s old or ground too fine. I usually cut it to 1/2 tsp and add a pinch of brown sugar or extra paprika to bring the warmth back.
Chipotle powder can be a lot—mine turned out kinda smoky/strong. Next time I’ll cut it in half, but the flavor was otherwise on point.
Pretty good, but my veggies took longer than 5-7 minutes to get tender. Next time I’ll slice thinner or cook with the lid on. Still delicious though.
Waste of time. Just get takeout instead. No point cooking when you can eat pizza.
The instructions were clear, but I still burned my veggies 😩. Gotta practice more.
Practice makes perfect! Don’t give up, it’ll get easier. 🍽️
Underwhelming. Needed more seasoning. I added hot sauce at the end to fix it.
I totally agree! It definitely needs more flavor. I added chili powder and it made a huge difference!
Quick and easy! Perfect for weeknight dinners. Will definitely make again!
1 tbsp olive oil feels like too much for my skillet, and the chipotle powder was way too strong for me. I think next time I’ll cut it in half.
Uhh, can you use like, any veggies? I only had carrots and it was kinda weird.
Idk, I think it would taste better with the right veggies. Carrots ain’t it for me!
You can definitely mix it up! Just be careful not to use super watery veggies. But carrots can work too!
Idk, maybe I’m just not a fan of veggies. I didn’t like it much. 🙁
I tried making this but it didn’t turn out as expected… Maybe I added too much cumin? Not sure.
So easy and actually satisfying—my picky roommate ate two bowls 😅. I used brown rice and it still worked great.
2 out of 5 because it’s missing cheese. Like… bowls need cheese. But flavor is okay.
Easy! One pan-ish. I forgot to rinse the beans at first (oops) and it was still fine. Would recommend with lime.
I did it without lime once… it tasted kinda flat? Also I thought chipotle was like tomato paste, so I was confused at first 😅 But this turned out good anyway.
Yes! The lime really pulls it together—makes the chipotle pop. I also love how quick it is in one pan.
Pretty good for a quick weeknight bowl. I used a little more cumin than the recipe calls for because I like it bold, and it was perfect.
Meh. Mine tasted a little flat even with the spices. Maybe my chipotle powder was old? I’ll try again with fresh seasoning.
This is just another veggie bowl recipe. I don’t see the hype, it’s just okay.
Y’all, this is just a veggie stir fry in a fancy bowl. C’mon now.
It’s not just a veggie stir fry! The spices really make it special. Give it a try!
Made this for lunch and it was honestly so flavorful. The chipotle + cumin combo really hits, and the avocado with lime makes it feel like restaurant food. Will definitely repeat.
This was absolutely delicious! I loved the spice mix you suggested. Will definitely make it again!
Delicious? Really? I tried this and it was too spicy for me. Maybe I used too much chipotle? Not sure I’d make it again.
I’m so glad you loved it! The spice mix really brings everything together. Can’t wait to hear how it turns out next time!
This was amazing! The chipotle spices really make it pop! 🌶️
“1 cup cooked rice” and then another cup of stuff and it’s still healthy? idk i think i needed more cheese LOL but i guess that’s not the point
Yeah I get what you mean 😅 but “1 cup cooked rice” is still a normal portion—like it’s balancing the beans and veggies. If you wanted more cheese though… that’s never the point until it becomes the point lol.
This bowl is amazing! So full of flavor and very filling. Definitely a 5-star recipe!
I agree! I made it yesterday and loved it too. So simple yet delicious! 🌟
This was absolutely delicious! My family loved it. Will definitely make it again!
Amazin!! My kids devoured it in mins! More recipes like this, please!
Good idea, but my spice mix felt a little strong—maybe I overdid the chipotle powder. I think cutting it to 1/2 tbsp would be perfect for mild eaters.
Nothin like a good veggie fajita! Used quinoa instead of rice and it was perfect.
Meh, was just okay. I thought it would be better. 🙁
I thought it was amazing! So much flavor! Maybe you missed an ingredient? 🤔
Honestly, I found it pretty bland too. Needs more spice, I think. What about adding some jalapeños?
Sweet and spicy just like I like it! I’m making it again tonight!
I don’t know about the cumin/paprika ratio… mine tasted kinda smoky and flat at the same time. Could’ve been my spices though.
Yum!
I made this last night, and it was soo good!! I’m definitely making it again. 😋
I made this for meal prep and it was gone in two days. Loved the contrast of warm fajita veggies with fresh cilantro and avocado.
I don’t know about those spices. Too much chipotle for me. Could be better.
Flavor is good, but my bowl was a bit dry—maybe because my rice was cold. Would add some lime juice or salsa while reheating.
Glad you liked the flavor! Dry bowls totally make sense—cold rice will soak up some of the moisture. Next time I’d warm the rice/beans separately (or add a splash of water/broth when reheating) and then finish with lime or salsa like you said.
Not bad at all! I used brown rice and it still worked. Next time I might cook the pepper/onion a minute longer for more char.
Yum!!! I threw in some leftover chicken and it was delish! Thanks for this!
I forgot to rinse the black beans and it was kinda salty. Tasted better after I added extra lime, but yeah—follow the steps lol.
This is the best veggie bowl ever! So flavorful and easy to make.
Made this tonight and it was such a comforting, smoky bowl. The chipotle powder really does the heavy lifting—5/5 vibe.
Didn’t have black beans, so I used kidney beans. Close enough, right? Was still good!
Kidney beans work too! Glad you liked it! 😊
Tried this tonight and it’s seriously flavorful. The chipotle + cumin combo is spot on, and the lime at the end really ties it together. I added a little extra salt and it was perfect.
My kids loved it! They don’t even notice the veggies! 👍
Why do people like avocado? It just tastes like green mush to me. Left it out.
The ingredient list is solid. I’d just add some sautéed garlic or onions longer to get more caramelization. Still, pretty tasty overall.
This tasted super fresh and the chipotle + cumin combo is legit. I added a little extra lime and it really made it pop!
Not gonna lie, I was skeptical about chipotle powder without actual chipotles in adobo, but it worked. The smoky flavor is there.
I totally get the skepticism—chipotle powder can taste kinda flat sometimes. But the combo with cumin/paprika/garlic probably brings it back. Glad it worked out for you!
Not bad, but my veggies took longer than 5-7 mins. Also the chipotle powder made it hotter than I expected (I may have used a strong brand). Still ate it all though.
Yummy!!! Will make again. Avocado + cilantro = my weakness 😅
Yesss avocado + cilantro is the perfect combo 😍 Makes this bowl feel like restaurant-level.
Sounds good, but I’m not sure about chipotle powder with cilantro… I feel like it’ll overpower. Maybe I’ll use less chipotle next time. Still gonna try though!
So flavorful! I added a splash of lime right while cooking and it made the veggies pop even more. Next time I’ll throw in some corn too.
I’m not sure about adding lime while cooking—won’t it mess with the spices or make it bitter? But corn in a fajita bowl does sound good. Maybe try it at the very end?
Yes!! The lime at the end sounds perfect—makes everything feel brighter. Corn would be a great sweet/smoky addition too!
This is so flavorful for something that’s actually pretty quick. The chipotle + cumin combo tastes like restaurant fajitas in a bowl. I added a little extra lime and it popped.
My rice got a little dry after cooking 5 extra minutes—maybe I should’ve kept it more saucy or used freshly cooked rice. Tasted fine, just not as juicy.
The spice blend is good, but chipotle powder can be hit-or-miss depending on brand. Mine was mild so I bumped it up and it was perfect.
This was amazing! The chipotle powder really packs a punch. Will definitely make again.
Why is there avocado in here? That’s for toast not bowls. Smh.
Love the veggie lineup—onion, pepper, zucchini… perfect texture. I used brown rice and it held up nicely. Would make again for meal prep.
World’s best meal prep. I make a big batch and it doesn’t get sad in the fridge. Cilantro on top makes it.
I followed this almost exactly—except I used brown rice and it was hearty. The spice mix is strong in a good way. Would make again.
Really enjoyed how simple this was but still tastes like takeout. The chipotle + cumin combo is spot on. I used quinoa once and it still worked great.
Confession: I didn’t have zucchini so I used mushrooms and it worked. Probably not ‘authentic fajita’ but the flavors were there.
I followed it exactly and it turned out a little bland. Next time I’ll toast the spices or add some onion/garlic powder too. The cilantro helped, but not enough.
Boring… sorry. The flavors are okay, but it needed something—maybe more salt or a dollop of sour cream/Greek yogurt. Avocado helps a lot.
This is basically fajitas, but in a bowl—love it. Also I used smoked paprika instead of regular and it tasted even more authentic.
Ok so… I totally forgot the garlic powder at first lol. Still came out decent, but it definitely needed that extra savory punch. Next time I’ll actually follow the steps.
My kids wouldn’t touch anything spicy, so I dialed back the chipotle and added a little shredded cheese. They loved it. Different vibe, but success!
Love that idea—dialing back the chipotle makes it way more kid-friendly. The cheese sounds like the perfect mellowing touch. 😊
Super easy for a weeknight. I love how the rice + beans soak up the seasoning. Next time I’ll add corn or sautéed mushrooms.
Yes! This hits that cozy “meal prep but not really” vibe. I added corn like you said and it was even better—sweet + smoky. Great for weeknights.
I dunno… 1 cup cooked rice + 1 cup beans feels like it might be a bit dry? Like I’d add a splash of water or some salsa. Still sounds tasty though.
I don’t think the chipotle is necessary. Too spicy for my kids.
You could totally leave out the chipotle! Just add more cumin or even some sweet paprika instead. My kids love it without the spice.
I didn’t really get the ‘fajita’ vibe. More like seasoned veggies and rice. It tasted okay, just not what I expected.
So flavorful for a veggie bowl! The chipotle + cumin combo really makes it taste like actual fajitas. I added a little extra lime and it popped.
I was skeptical about putting rice and beans right in with the veggies, but it came together nice. I used brown rice and added a splash of water so it didn’t dry out.
Not bad but kinda bland for me? I might’ve undercooked the onions and peppers, or my chipotle powder was old. Still ate it though.
Not gonna lie, I followed it exactly and it tasted kinda bland at first. I think my cumin was old? After more lime and pepper it got better though.
Made this tonight and it was honestly so flavorful. The chipotle + cumin combo really pops, and the lime on top is the perfect finish.
Love this! I tried a similar spice mix before but the chipotle + cumin combo is *chef’s kiss*. Lime really makes it pop—adding this to my weeknight rotation.
Pretty tasty and I like that it’s veggie-heavy. I did add a little extra salt and a splash of lime to the skillet since the spices felt a bit mild at first.
Pretty good but I’d add more lime (like… a lot). Also my veggies took closer to 9 minutes, but that’s probably my pan being slow.
Idk, chipotle powder feels too smoky for veggies—like overpowering. And 1 cup cooked rice seems small for a whole bowl. I’d rather do it with actual fajita meat, sorry.
Totally get it—chipotle powder can be super smoky. I usually start with like 1/2–3/4 tbsp and add more if needed, or swap part of it with regular chili powder/paprika for a milder vibe.
I don’t know about putting zucchini in fajitas, but it actually worked? Kinda mushy tho if you overcook it.
These flavors are legit. Chipotle + cumin on veggies is such a good combo, and the lime/avocado makes it feel like real fajitas in a bowl.
Pretty good, but I felt like it needed a bit more salt than the recipe says. Also I used smoked paprika instead of regular and it worked great.
