Chicken Soba

March 13, 2024

If you’re looking for a balanced and comforting meal that’s fast enough for a weeknight, chicken soba is the answer. Made with buckwheat soba noodles, lean chicken, and fresh vegetables, this dish comes together in under 30 minutes and packs in flavor without being heavy.

Soba noodles, a staple in Japanese cuisine, are naturally gluten-free (check the label to be sure) and made primarily from buckwheat flour. They have a slightly nutty flavor and a chewy texture that pairs beautifully with savory sauces and stir-fried ingredients. Plus, they cook in just a few minutes, making them perfect for quick meals.

For this recipe, start by boiling the soba noodles and rinsing them under cold water to stop the cooking process and prevent clumping. Meanwhile, sauté sliced chicken breast in a bit of oil until golden and cooked through. Add in thinly sliced vegetables like carrots, bell peppers, cabbage, or snap peas, whatever you have on hand works well.

The sauce is where the magic happens. A simple mix of soy sauce, sesame oil, rice vinegar, garlic, and ginger creates a rich umami base. You can also add a bit of honey or brown sugar for balance and a dash of chili flakes if you like a little heat.

Once everything’s cooked, toss the noodles back into the pan with the chicken and veggies, pour over the sauce, and stir until everything is coated and warmed through. Top with sliced green onions, sesame seeds, or a drizzle of sriracha for extra flavor.

This chicken soba recipe is endlessly adaptable and great for using up leftovers. It’s also light yet filling, making it ideal for lunch or dinner. Serve warm or enjoy it chilled the next day, either way, it’s a flavorful and satisfying way to eat well without spending hours in the kitchen.

I tried something similar and loved it. Soba noodles can get sticky if you don’t rinse/drain well, so paying attention to the package instructions is key. Otherwise, pretty straightforward.

I’ve never cooked soba noodles before. Are they the same as spaghetti? 🤔

  3. 3 stars
Soba noodles stuck a bit when I drained them—maybe I didn’t rinse enough. Flavor was good, but presentation wasn’t pretty. Not bad, just needs noodle handling tips.

I added some broccoli and carrots, turned out great! Healthy and tasty! 🌱

    1. 5 stars
Sounds delicious! I love adding more veggies to my meals. 🌟

This looks delicious—ginger + honey with soy/sesame is such a good combo. I’d probably add a little chili sauce too for heat, but the base recipe sounds solid.

Chicken took way longer than 5-6 minutes for me, but maybe my slices were too thick. Sauce tasted great once it finally came together.

  7. User avatar oscar.green22 says:

The chicken was dry and the taste was kinda bland. Not a fan.

  8. 3 stars
Soba noodles? Never heard of them before! They weird but kinda nice too. I would eat again.

  9. 5 stars
So good! The garlic and ginger combo is just perfect. Will definitely make again.

  10. 5 stars
Yum!! This is now my favorite recipe. I could eat this every day!

This feels like one of those “simple” recipes that’s actually complicated. Like, do I need to cook chicken first then noodles? I just dumped everything in and it was okay. Wouldn’t recommend that approach.

Soba noodles? Are those even real? 🤔

    1. 2 stars
I dunno, never heard of ’em. Sounds kinda fancy though. Can’t just use regular noodles? 🤷‍♂️

    2. 5 stars
Yes, they’re real! Soba noodles are actually made from buckwheat. They’re delicious and really good for you! 😋

Chicken and noodles? My kids loved it! Good for picky eaters.

I’m not usually a “honey” person in savory meals, but it works here. Sweet balance with soy and vinegar. Would definitely make again.

    1. User avatar deshawn.friesen8 says:

      5 stars
Honestly I’m the same—usually skip honey in savory. But the combo of soy + vinegar is doing the heavy lifting. This sounds super legit, I’d try it.

    2. User avatar ethel.herzog8 says:

      3 stars
I tried honey in stir-fry once and it got kinda sticky for me 😅 maybe less honey next time? Still, chicken soba sounds good. What brand of soy did you use?

  18. User avatar Wispmother says:

    1 star
Meh… soba noodles taste funny. I prefer rice noodles tbh. Whatever, not my thing.

  19. User avatar glenn.hayes says:

    4 stars
Pretty tasty, but my chicken took longer than 6 minutes to fully cook since the slices were thicker. Next time I’ll slice thinner or cook on a bit higher heat.

    5 stars
This was so good! The flavors really popped! My family loved it.

  21. User avatar NAFO.SUPREMACY says:

Not bad but my chicken was dry. I think I overcooked it. Will try again!

  22. User avatar keven.flatley65 says:

YUM. Sesame oil + ginger + garlic is my weakness. The sesame seeds on top are such a nice finishing touch—texture matters!

  23. User avatar Wilson Marquardt says:

    5 stars
Very tasty! I made it tonight and the sauce clung to everything. I used bottled ginger and it was still great. Also, my kids ate it without complaining (rare!).

    1. User avatar emory.weissnat49 says:

      5 stars
So glad it worked for you! The “clings to everything” effect is real once the honey/soy emulsifies with the noodles 😄 Bottled ginger can definitely still do the job—good call. And kids eating it without complaining? That’s the real review right there.

  24. User avatar palmer.conroy13 says:

    3 stars
The recipe is solid, though I think 2 tbsp sesame oil might be a lot. Mine got a little overpowering—still good, just next time I’ll reduce by half.

  25. 3 stars
Why do you use honey? Can’t you just use sugar? Seems silly to me. 🤔

  26. User avatar rickiestmorty says:

    5 stars
Best recipe ever! You should try it with some veggies like carrots or peas, trust me!

  27. User avatar rhinoceros says:

Way too much soy sauce! I felt like I was drinking salt.

    1. User avatar gerald.hermann18 says:

      4 stars
I didn’t find it salty at all! Maybe you added too much soy sauce? I loved the flavor!

    2. User avatar mayme.renner1988 says:

      5 stars
Nah, I think it’s just right! Soy sauce makes everything better. Gotta try it!

Can I replace chicken with beef? I don’t like chicken much.

    1. User avatar barb.lockman says:

      4 stars
You can totally use beef instead! Just cook it until it’s done. It’ll give a different flavor, but it should still be good.

I didn’t have sesame oil, used olive oil instead. It was ok, not the same though.

    1. User avatar dion.fisher87 says:

      5 stars
I always use whatever oil I have. It’s still chicken and noodles! Don’t stress too much about the oil, just enjoy the food! 😄

    2. User avatar prince.heaney says:

      4 stars
Olive oil? Really? That sounds kinda weird for Asian dishes. I’d stick with sesame oil next time. But hey, it’s good you tried! 👍

  38. 3 stars
Easy to make but the flavor was just okay. Might spice it up next time.

Tried this recipe but my chicken turned out dry. Any tips on keeping juicy chicken?

  40. User avatar arianne.stokes57 says:

Took forever to make. I don’t get why people like soba noodles, they just tasted weird.

  42. User avatar annamarie.wilkinson18 says:

  43. 3 stars

  47. 4 stars
So easy to make! I added some chili flakes for a kick and it turned out awesome!

  48. User avatar vikki.vandervort65 says:

    5 stars
Yummy! The sauce is spot on, really adds flavor!

  49. 3 stars
Ehh, I think it needs more flavor. I’m not convinced this is worth the trouble of cooking. Just goes to show chicken is plain.

  50. User avatar harland.gleason says:

    3 stars
Not bad, but I prefer my chicken fried instead of stir-fried, you know?

    1. 4 stars
Fried chicken is yum, but have you tried this recipe? It’s a nice change!

    2. User avatar Miss Alanius says:

      5 stars
But fried chicken is unhealthy! Stir-fried is much better for you!

  51. 1 star
This recipe seems too complex for me. I’m not a good cook.

  52. User avatar antione.veum1967 says:

I don’t know what went wrong but my chicken came out dry. Maybe I cooked it too long? Not sure, but it wasn’t great.

  53. User avatar rudolph.ankunding31 says:

    4 stars
I didn’t have soba noodles, so I used spaghetti instead and it turned out fine.

  54. 3 stars
I tried making this and added bell peppers. Not bad, but felt like something was missing!

    1. User avatar israel.brakus33 says:

      4 stars
Maybe try adding some lime juice? It might brighten the flavors up! 🍋

    2. User avatar NAFO.SUPREMACY says:

      3 stars
I dunno, I think it’s good as is. Bell peppers are great but maybe not needed here.

  55. 1 star
Chicken Soba? More like boring noodles. Didn’t impress me at all.

  56. 5 stars
This was amazing! The flavors are so good together.

    1. User avatar latoyia.mitchell88 says:

Glad you liked it! I thought it was too salty though.

  57. User avatar jani.stoltenberg says:

I wouldn’t say it’s the best. The chicken was dry and the sauce didn’t really stick. Disappointing!

  58. User avatar russell.pfannerstill says:

    4 stars
I didn’t have rice vinegar, used apple vinegar. Still tasty!

  59. 5 stars
Easy peasy! Quick meal for weeknights. Will make again!

Looks great but I don’t like green onions. Can I just leave them out?

  61. User avatar bret.johns1995 says:

    1 star
Too many ingredients for a simple meal, just stick to chicken and rice.

  62. User avatar jennell.braun90 says:

    4 stars
The measurements are kinda confusing because it says ‘6 ounces soba noodles’ but for chicken it’s ‘2 chicken breasts thinly sliced’ (how much is that exactly?). Still, I bet it’ll come out great.

Yummy! No more takeout for us. ☺️

Made it for dinner, but the chicken was dry. Idk what I did wrong.

  67. User avatar ryan.schumm1992 says:

Confused about the honey part. Isn’t that too sweet for a dish like this?

  68. User avatar antione.harvey1988 says:

My soba noodles stuck together a bit after draining. I should’ve rinsed them maybe? Sauce helped though—would make again, just with better noodle handling.
