Ingredients
- 2 chicken breasts boneless, skinless, thinly sliced
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion diced
- 4 cloves garlic minced
- 6 cups chicken broth
- 1 cup water
- 3/4 cup orzo pasta
- 3 cups spinach fresh
- 1 Lemon juice
- 1 Lemon zest
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 4-5 minutes. Remove chicken from pot and set aside.
- In the same pot, add onion and garlic. Cook until onion is translucent, about 2-3 minutes.
- Add chicken broth and water to the pot. Bring to a boil.
- Stir in orzo pasta and let cook for 8-10 minutes, until pasta is al dente.
