Ingredients
- 500 grams carrots peeled and chopped
- 1 onion medium, chopped
- 2 tablespoons butter unsalted
- 4 cups vegetable broth low-sodium
- 1 teaspoon salt to taste
- 1/2 teaspoon black pepper freshly ground
- 1/2 cup heavy cream optional, for creaminess
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the chopped carrots to the pot and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bring to a boil, then reduce the heat, cover, and let simmer for 20 minutes or until the carrots are tender.
- Once the carrots are tender, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Stir in the heavy cream, if using, and season with salt and black pepper to taste. Serve hot.
1/2 teaspoon pepper is too much for me. I think next time I’ll do less and add salt gradually. Otherwise, super comforting.
Honestly, I thought it would be bland, but it’s surprisingly flavorful! I think the butter makes a big difference.
Glad to hear it turned out flavorful! That butter really does make a difference. 😋
I don’t have an immersion blender so I blended in batches. Worked, but the kitchen was a mess lol. Tastes great, just needs patience.
Wait… you blended it without an immersion blender and it worked? I feel like it’d be too chunky. Also “heavy cream optional” got me—can I just use milk? (I’m outta cream.)
I’ve done the “blending in batches” thing too—yeah, it’s messy but it still comes out smooth. Patience is the real ingredient 😂 Tastes amazing though!
Quick and simple, thanks! I used chicken broth instead and it turned out fine.
I don’t understand why you’d put cream in soup. Isn’t that unhealthy? Spent all that time cooking for what? Just eat the carrots.
But cream makes it yummy! Why don’t you just try it? Not everything has to be healthy all the time.
Actually, adding cream can make the soup richer and tastier! Plus, a little indulgence is okay sometimes. Your body needs fats too, ya know?
Tasty!! I used coconut milk instead of heavy cream. It was awesome!
Not gonna lie, I thought carrot soup would taste like baby food. But the texture was smooth and it’s actually really nice. Would eat again.
Yum! First time making soup. Easy peasy! Will tell my frens! 🥕✨
This soup is amazing! So easy to make and super tasty! Definitely a keeper! 🌟
Amazing? Really? I found it kinda bland. Maybe I did something wrong idk 🤷♂️
I tried this soup last night! It’s definitely a new favorite! But I skipped the cream and it was still great. 🌈
Yum! My grandma always made carrot soup and this tastes just like hers! Brings back great memories.
So glad it brings back memories! Nothing like a good family recipe. 😊
This soup was alright, but I feel like it needs more spices or something. Was kinda bland for me.
I don’t get why people make carrot soup. Just not my thing.
Super easy recipe! I made it in under 30 minutes. My kids loved it! Will definitely make again.
Nah, didn’t work for me. Too bland! Even added garlic and still missed the mark.
Bland? Really? I loved it! It’s a soup, not a curry, folks! More garlic won’t save every dish.
I thought it was great! Maybe try more seasoning or some herbs? Personal taste varies, you know.
Soo gooood, I’m eating it right now! Perfect for cold days.
This is decent, but the cream is kind of necessary for me. Without it, the flavor feels kinda flat. Add salt gradually!
Yum! My kids even ate it, and they are picky! Thanks for the recipe!
This is just carrot and broth… I’m not convinced it’s gourmet or anything.
I’m not usually a soup person but this was surprisingly good. However I accidentally used too much salt at the end—my bad. Still salvaged it with extra broth.
This is exactly how I do it too—carrot soup got me surprised as well. Extra broth is such a smart fix for the salt!
Yummy 😋 But maybe too much onion for my taste. Next time, I’ll skip that. Just my opinion!
Onions are good for you tho, they have vitamins. But yeah, too much can mess it up for sure.
I actually like the onions! They add a nice flavor. But I guess everyone has their own taste buds! 😊
I didn’t have vegetable broth, so I used chicken broth instead. Still turned out good. 😉
Salt “to taste” is always tricky. I used 1 tsp like it says and it was okay, but next time I’ll go lighter because my broth already had some sodium.
Yeah, “to taste” is always a gamble 😅 I usually start with 1/2 tsp and then adjust at the very end—especially if the broth isn’t truly low-sodium.
The cream was a game changer! I added some garlic too and it was so good.
Quick easy recipe! But it turned out too sweet, like I added sugar or something. Maybe my carrots were extra sweet?
I had the same issue! Maybe try less carrot next time or add more broth to balance it out. But I’m glad it was easy!
This carrot soup is amazing! So creamy and flavorful. Made it for my family and they loved it! Highly recommend!
Good recipe but my blender broke halfway! Had to hand-mash the soup. Yikes! Next time I’ll just buy a new one lol.
Im not a pro chef, but this soup is bomb! My family loved it, even my brother who hates carrots! 😂
Glad to hear it! I was skeptical about the carrots too, but they really do add a nice flavor!
Makes me wanna try! But like, can you taste the carrot too much? Not a fan of strong flavors.
Just a bowl of mushy orange stuff. Not for me. My kids wouldn’t even eat it! 😒
Did I miss something? Where does the cream come from? I don’t want creamed soup!
I followed it, but I found it a tad bland until I added more salt. Next time I’ll probably taste earlier too.
My kids loved it! Does anyone have tips on making it thicker? 🤔
