Carpaccio di Zucchine with Parmesan

September 1, 2023

When summer produce is at its peak, few dishes celebrate freshness like carpaccio di zucchine. This delicate Italian appetizer is simplicity at its best, showcasing thinly sliced raw zucchini dressed with good olive oil, lemon juice, and shaved Parmesan. It’s the kind of dish that feels fancy without requiring much effort,  perfect for warm-weather entertaining or a light, no-cook lunch.

The magic of this zucchini carpaccio lies in its texture and balance. Raw zucchini, when sliced very thinly, becomes silky and tender, almost melting on the tongue. A mandoline or sharp knife does the trick, turning the vegetable into paper-thin rounds that layer beautifully on the plate. What you’re left with is a canvas ready for flavor.

A generous drizzle of high-quality extra virgin olive oil and a splash of fresh lemon juice bring brightness and richness. The acidity of the lemon enhances the mild flavor of the zucchini, while olive oil adds depth. Shaved Parmesan, with its salty bite, rounds out the dish and adds a luxurious touch. A few cracks of black pepper, maybe some sea salt, and optionally a sprinkle of crushed toasted nuts or fresh herbs like mint or basil take it even further.

This dish is ideal when you want something refined yet effortless. It’s perfect as an appetizer before a pasta or seafood course, or as part of a light summer spread with bread, olives, and a crisp white wine. It also fits beautifully into a vegetarian or Mediterranean-style menu.

Best of all, it’s a great way to use up an abundance of zucchini without turning on the stove. The ingredients are few, but each one matters. When they come together, they create a dish that’s greater than the sum of its parts – fresh, bright, and utterly satisfying.

Why do people eat squash raw? Seems wrong 🤔. This is just a salad with weird ingredients.

This is way fresher than I expected—light, tangy, and the parm really makes it feel “fancy” without effort.

I made this for dinner and it disappeared fast. I added a little extra basil and it was perfect. Would do again!

  4. 1 star
It’s just sliced zucchini with cheese… How can this be a recipe? LOL.

    1. 5 stars
It may seem simple, but that’s what makes it a good summer appetizer! Just wait till you taste it!

Actually, it’s a really refreshing dish! Sometimes simple is best. Have you tried it?

Not sure about eating raw zucchini. It was okay but I prefer cooked veggies.

  6. User avatar lucilla.bogan says:

So fresh and light! The lemon really wakes up the zucchini, and the Parmesan makes it feel fancy. I used a regular knife and it still worked—nice dinner or side.

  7. 2 stars
Too much lemon! I think half of that would be better. My tummy didn’t like it.

  8. User avatar oPandariaNo says:

    2 stars
Too salty for me. Also, zucchini has a lot of water so it got kind of soggy after a few minutes—maybe serve immediately like the recipe says (which I didn’t 😬).

The basil garnish is a MUST. Without it the whole thing feels flat. I followed everything and it was perfect with a lunch salad.

  10. 4 stars
    Salty! Yum

    1. User avatar rey.labadie says:

      4 stars
Salty enough for you, huh 😅 I think I’d use less parmesan next time—unless you like it super intense.

    2. User avatar smartestRedditor says:

      5 stars
Totally—lemon + parmesan really bring the savory hit. I usually go a touch heavier on the pepper too. Yum!

Sliced it right. This is how real Italians eat zucchini! 💚

    Meh 😐

Tried this for a quick lunch and it actually tasted like restaurant food. Next time I’ll slice even thinner—mine were slightly thicker so the bite was tougher.

  14. 5 stars
This recipe is super simple, and I love how fresh it taste! Perfect for summer.

Awesome recipe! I added some nuts for crunch. Will make again!

    1. 5 stars
Nuts sound like a great idea! They would add a nice texture. Can’t wait to try it that way!

    2. User avatar art.marquardt20 says:

I dunno about adding nuts to zucchini salad, seems strange. But hey, if you liked it, who am I to judge?

  16. User avatar terminatorXYZ says:

    3 stars
Not sure if I like raw zucchini… the texture was weird for me. But the dressing was nice.

  17. User avatar latrina.hoppe says:

    5 stars
This turned out super fresh and light—exactly what I wanted. The lemon + olive oil dressing really makes the zucchini taste brighter, and the parmesan adds that salty punch. I served it as a starter and everyone went back for seconds.

  18. User avatar mel.waters60 says:

    3 stars
I think the ratio is off—1 tbsp lemon juice might be too tart for some people. I’ll probably start with half next time.

    1. User avatar lucky777 says:

      5 stars
Good call—lemon can be pretty punchy with zucchini. Half next time sounds perfect, especially if your parmesan is already salty.

  19. User avatar terminatorXYZ says:

    3 stars
I don’t know, it was kinda bland. Maybe a little garlic would help? Just my 2 cents.

    1. 4 stars
I get what you mean! A bit of garlic could definitely amp up the flavor. It might not be traditional, but it could work!

  20. 5 stars
Absolutely loved this! So fresh and light, perfect for summer. Will make again!

  21. User avatar gavin.altenwerth says:

Zucchini salad??? Nah. Not my thing.

  22. 5 stars
Lol I forgot to sprinkle Parmesan at first, then added it after 😅 Still good though. 5/5 for forgiveness.

    1. User avatar smartestRedditor says:

      4 stars
Not gonna lie, I’d probably skip lemon juice and use balsamic instead… but glad it still worked for you. 5/5 for vibes.

    2. User avatar boyce.schultz1957 says:

      5 stars
Haha I love this 😂 Parmesan fix = perfection. I always do that, especially if I get impatient.

  23. User avatar anonymous_hacker says:

    3 stars
It’s alright. I don’t really get the hype, but my friends liked it.

  24. User avatar randal.skiles1981 says:

Not sure about “carpaccio” though—more like zucchini salad. Still tasty, but I wouldn’t call it fancy carpaccio without a bit more effort.

    1. 4 stars
Totally get what you mean—when I hear carpaccio I expect super fancy thin meat. But zucchini can still be “carpaccio-style” if it’s sliced paper-thin and dressed/finished nicely. This one looks like it nails that vibe, especially with the lemon + shaved Parm. I’d call it carpaccio *di zucchine* rather than true meat carpaccio, but “fancy” feels fair.

  25. 3 stars
I made this for my wife but she doesn’t like zucchini… so I ate it all lol. Not bad!

  26. User avatar Frost Troll says:

    2 stars
Eh, it was okay. I think my kids would rather have pizza than this.

  27. 5 stars
Yum! I used feta instead of parmesan. Super tasty!

  28. User avatar dusty.watsica53 says:

    3 stars
I followed it and it was fine… but not life-changing. The parmesan was nice, but the lemon dressing felt a bit sharp for my taste. Next time I’ll add a tiny bit more olive oil or maybe a touch of honey.

    1. 4 stars
Totally get that—this is more “fresh and light” than wow. Adding a little more olive oil makes it mellow, and a tiny pinch of honey should round out the lemon nicely. Did you also try adding the dressing and letting it sit 2 minutes before serving?

  29. 4 stars
Pretty good, but I wish the instructions mentioned salting the zucchini first. After slicing, I salted lightly for 10 minutes and it seemed more flavorful (less watery too). Still a solid recipe though.

  30. 3 stars
The instructions were a bit unclear. Do I really need basil?

  31. 4 stars
Good idea, but my mandoline made everything too thin and it got a little weird/limp after dressing. Next time I’ll slice slightly thicker and serve faster.

  32. User avatar tommy.kassulke21 says:

    5 stars
Nice and easy recipe! Looks fancy but simple! A hit at my dinner party!

  33. User avatar ALTplusF4 says:

    4 stars
Mandoline scares me, not gonna lie 😅 I tried with a peeler-style slicing and it was still good, but the slices weren’t as even. Flavor was great though!

  34. User avatar Lumberjack says:

    2 stars
This is basically zucchini with lemon dressing and cheese… not complaining, but calling it “carpaccio” feels a bit extra. 😅

  35. User avatar Torchbugs says:

    3 stars
I tried making this but my mandoline slicer broke. Had to use a knife and it was a mess. Tasted okay, tho.

  36. User avatar Hagraven says:

    5 stars
Zucchine with cheese? Yum. Also I put in some garlic, delish!

    1. User avatar aldo.cassin1 says:

      5 stars
Garlic is a delicious addition! I never thought of that. Gonna try it next time!

  37. User avatar jonell.aufderhar1959 says:

    3 stars
Isn’t this just like a salad? I feel like it’s missing something. Could probably use more cheese.

  38. User avatar Super Saiyan 3 Goku says:

    2 stars
Eh, I don’t see the point. Just eat the zucchinis cooked.

  39. 5 stars
The basil garnish is doing way more work than I expected. This tasted brighter than I thought it would, and the parmesan held up nicely (didn’t get watery fast).

  40. 5 stars
So yummy! I added some nuts for crunch. Definitely making this again!

  41. User avatar dusti.brown35 says:

    4 stars
I didn’t think raw zucchini could taste good, but I was wrong! This is super refreshing.

  42. User avatar zack.cartwright35 says:

    2 stars
Zucchini raw? Really? Not sure about that. Thought they had to be cooked.

  43. User avatar michal.oreilly47 says:

    5 stars
Super easy to make! Perfect for summer! 🍋

  44. 1 star
Eh, it’s OK. I thought it would be yummier but just tasted like green.

  45. User avatar elise.bruen92 says:

    4 stars
I didn’t have a mandoline so I used a knife. Some slices were thicker but it still tasted great. Next time I’ll try to get them thinner.

    1. 3 stars
Wait—are you sure this is “carpaccio” if you can’t slice paper-thin? I feel like knife-cut zucchini gets kinda watery. Still, if you served it right away maybe it’s saved by the lemon. 🙂

    2. 5 stars
Honestly I think thicker slices are totally fine—still gets that fresh, lemony bite. Mandoline just makes it prettier and more even. Glad it worked for you!

  46. User avatar harold.fadel60 says:

    5 stars
So fresh and light! I used a vegetable peeler instead of a mandoline and it still worked. The lemon + olive oil dressing makes it pop.

  47. User avatar luther.pfannerstill39 says:

    4 stars
So simple but sooo good! I’m not usually a fan of raw veggies, but this changed my mind!

  48. User avatar Colin the Security Robot says:

    5 stars
So simple but actually feels fancy. The lemon + olive oil makes it taste really fresh, and the shaved parmesan adds that salty bite. Great quick appetizer!

  49. 2 stars
Not a fan. The zucchini texture was weird to me. Maybe cooking them would be better.

  50. User avatar abe.quitzon1984 says:

    5 stars
This is such a fresh, light appetizer. The lemon + olive oil combo really wakes up the zucchini, and the shaved parmesan makes it feel fancy. I’ll definitely make it again for guests.

  51. User avatar michaele.beer68 says:

    2 stars
Easy to make, but felt like it needed something more. A sauce perhaps?

  52. 4 stars
I love carpaccio-style things but I was skeptical without meat 😅. Turns out it’s actually super good. Just make sure the slices are really thin or it’s a bit crunchy.

  53. User avatar oPandariaNo says:

    4 stars
This dish is really refreshing! Perfect for a summer day. I added some cherry tomatoes, yum!

  54. 2 stars
Parmesan isn’t enough flavor for me. I’d add garlic or chili flakes—right now it’s a little bland. Also, 1 tbsp lemon juice felt too much? maybe depends on the lemon.

  55. User avatar veronique.maggio91 says:

    4 stars
I’m skeptical about “carpaccio” from zucchini, lol. Like, it’s healthy, sure, but does it really count? Either way it tasted good and looked fancy, so I guess I’m converted.

  56. 4 stars
Clever idea—turns zucchini into something fancy without much effort. I added extra pepper and it tasted restaurant-level.

    1. 5 stars
Totally agree! The lemon + olive oil really brightens it up, and that extra pepper makes a big difference. Did you shave the parm super thin or use the thicker stuff?

  57. User avatar Vincent Altenwerth says:

    3 stars
Too much cheese! I thought it was too salty. Next time, less!

  58. 3 stars
I liked the idea, but my zucchini was watery after slicing. Maybe I should salt and rest it first? Still decent though.

  59. 5 stars
Mandoline slicer is the key! I tried with a knife the first time and the slices were too thick, so it wasn’t as delicate. With thinner slices it’s much better—restaurant vibes at home.

  60. User avatar damien.kemmer84 says:

    3 stars
Parmesan shaved? I just grated it and it clumped a little. Flavor was still good, but the texture wasn’t the same as I expected.

    1. User avatar Lumberjack says:

      3 stars
Maybe you used the wrong parm? I always grate and it never clumps… could be that the zucchini was too wet? Next time pat them dry and try adding the cheese in smaller pinches. Parmesan should stay kinda delicate.

    2. User avatar Marhta Anderson says:

      5 stars
Totally agree—“shaved” parmesan is a different vibe than grated. If it clumped, you’ll usually want to buy a block and shave with a peeler, then sprinkle right before serving so it doesn’t melt into little bits.
