Ingredients
- 1 cup Arborio rice
- 2 cups Butternut squash cut into cubes
- 1 Onion chopped
- 1 clove Garlic minced
- 4 cups Vegetable broth kept warm
- 1/2 cup White wine optional
- 1/2 cup Parmesan cheese grated
- 2 tablespoons Olive oil
- 1 teaspoon Salt to taste
- 1/2 teaspoon Black pepper freshly ground
- 1 tablespoon Butter optional

- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in Arborio rice and cook for 2 minutes, until rice is lightly toasted.
