Ingredients

500g beef, sliced
2 tablespoons Sichuan peppercorns
2 tablespoons vegetable oil
2 tablespoons minced garlic
2 tablespoons minced ginger
2 tablespoons soy sauce
1 tablespoon dark soy sauce
2 tablespoons Shaoxing wine
2 tablespoons black vinegar
2 tablespoons sugar
4 dried red chilies
1 teaspoon cornstarch
2 green onions, chopped

Instructions

1.In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Remove from heat and grind into a powder.
2.In a large wok or skillet, heat the vegetable oil over high heat. Add the minced garlic and ginger and cook for 1 minute.
3.Add the sliced beef and cook until browned, about 3-4 minutes.
4.In a small bowl, whisk together the soy sauce, dark soy sauce, Shaoxing wine, black vinegar, sugar, and cornstarch. Pour the sauce over the beef and stir to combine.
