4 black cod fillets
4 tablespoons white miso paste
2 tablespoons mirin
2 tablespoons soy sauce
2 tablespoons sake
1 tablespoon sugar
1 tablespoon vegetable oil
2 green onions, thinly sliced
2 packs of udon noodles


1.In a small bowl, whisk together the miso paste, mirin, soy sauce, sake, and sugar until well combined.
2.Brush the miso glaze on both sides of the black cod fillets.
3.Heat the vegetable oil in a large non-stick skillet over medium heat.
4.Add the black cod fillets to the skillet and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
5.Meanwhile, cook the udon noodles according to the package instructions.
6.Divide the cooked udon noodles among 4 plates and top each plate with a black cod fillet.
7.Garnish with green onions and serve.
