Ingredients
  

  • 500 g apples preferably Granny Smith, peeled, cored, and sliced
  • 250 g all-purpose flour sifted
  • 1 tsp baking powder
  • 125 g sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 125 g unsalted butter cold and diced
  • 1 large egg beaten
  • 3-4 tbsp milk
  • 2 tbsp granulated sugar for sprinkling

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9-inch round cake tin.
  • In a large mixing bowl, combine flour and baking powder, then rub in the cold diced butter until the mixture resembles breadcrumbs.
  • Add sugar, cinnamon, and nutmeg to the flour mixture, and mix well.
  • Stir in the sliced apples, ensuring they are completely coated with the flour mix.
  • Mix the beaten egg with enough milk to make the wet ingredients up to 150ml. Add to the flour and apple mix and stir to a thick batter.
  • Pour the batter into the prepared cake tin, spreading it evenly, and sprinkle the top with granulated sugar.
  • Bake in the preheated oven for 50 minutes or until a skewer inserted in the center comes out clean.
  • Allow the cake to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
  • Serve warm or at room temperature, ideally with a drizzle of custard or cream.

      I love that it still turned out great for you! 🙌 For my oven, it usually needs closer to 55–60 minutes depending on how juicy the apples are. Next time, just keep an eye on it and go by the skewer test—sounds like you already nailed the flavor.

      Maybe your oven runs hot/cold? If the center was taking longer, I’d cover the top with foil after ~30 minutes so it doesn’t overbrown while the middle finishes. Also, did you cut the apples really thin? thicker pieces can slow it down. It’s still an “Irish” cake though, so more time is probably fine 😅

    I’m skeptical about the crumbly flour/butter step, but it actually works. Texture was somewhere between cake and pastry. Not too sweet, which I liked.

    Honestly didn’t taste much cinnamon to me, but my spices are probably old. The texture was good and the apples stayed nicely soft.

    Why 375°F? I always struggle with temps from recipes. Mine browned too fast on top—next time I’ll tent it with foil. Taste was fine though.

    I don’t have a wire rack so I just let it cool on the counter… and it got slightly soggy on the bottom. Flavor was still great.

      Happens to me too—cooling on the counter traps steam. If you don’t have a rack, try flipping it onto a plate halfway through cooling or cooling on a folded towel so air can get underneath.
