Grilled Shrimp and Bok Choy Salad

1 pound shrimp, peeled and deveined
4 baby bok choy, halved
1 red bell pepper, sliced
1 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 cup chopped cilantro
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
Salt and pepper to taste


1.Preheat grill to medium-high heat.
2.In a large bowl, combine shrimp, bok choy, red bell pepper, cucumber, cherry tomatoes, and cilantro.
3.In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
4.Pour the dressing over the salad and toss to coat.
5.Grill the shrimp and bok choy for 2-3 minutes per side until shrimp is cooked through and bok choy is charred.
6.Transfer the shrimp and bok choy to a serving platter and top with the salad mixture.
7.Serve immediately and enjoy!
