A delicious and healthy Greek-style baked tilapia recipe topped with Mediterranean salsa.
Ingredients
- 4 tilapia fillets
- 1 Lemon juiced
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 1/4 cup red onion diced
- 1/4 cup Kalamata olives pitted and halved
- 2 tbsp parsley chopped, fresh
- 1 tbsp dill chopped, fresh
- 1 tbsp red wine vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Place the tilapia fillets in a baking dish and pour the marinade over them. Make sure the fillets are evenly coated. Let them marinate for at least 10 minutes.
- While the tilapia is marinating, prepare the Mediterranean salsa. In a medium bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, chopped parsley, chopped dill, and red wine vinegar. Mix well to combine.
- Once the tilapia has marinated, place the baking dish in the preheated oven and bake for about 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the baked tilapia topped with the Mediterranean salsa. Enjoy!
